I’m forever on the hamster wheel of trying to eat healthy… So much executive function is required to get through the process and there are so many places that I can fail! Locked into the cycle of trying to buy the right things, then trying to remember they exist, then actually having the brain space to prepare said healthy things and then remembering to consume them (if my brain is actually in the mood to let my stomach eat)… Too much batch cooking resulting in overwhelm and being unable to face what I’ve prepared! Too many fresh items being thrown in the bin… I hate waste!! Too much crap consumed!! I’m constantly learning healthy short-cuts… Yes I know eating a full and balanced meal is better but I’m throwing perfectionism out of the window… it holds me back!! I need ease… I need convenience… I need to be able to access things immediately… Here we have carrot and ginger ice cubes… each one is 25ml… I’ll do the same with the Cucumber, Spinach, Celery and Mint juice too… One or two in the kids apple juices, 3 in mine & Ben’s… Sod telling the kids the ingredients for a while… we have ‘Sunshine Juice’ and ‘Zing Juice’ … and they LOVE it… even my little food avoidant Nate bomb! 💣 Even Ben is drinking it. In a house that is 75% fussy over food… (Max is in fact, a human dustbin) finding a way that we can all consume the same thing makes our life so much easier! Crockpot Turkey Chili 🌶️ 🦃 INGREDIENTS 32 oz 95-97% fat free ground turkey 1 10oz can of diced tomatoes w/ peppers (Rotel-style) 1 28 oz can fire roasted diced tomatoes 14 oz can hatch green chiles 4½ t chili powder (make sure it is sugar free!) 1t chipotle powder 1/8 t allspice 1/8 t cumin 1/8 t onion powder 1/8 t garlic powder 1/4 t salt Optional Toppings per serving: 2 T sliced green onion tops 2 T roughly chopped fresh cilantro 2 T sour cream (1 Healthy Fat) OR ¼ avocado, sliced (1 Healthy Fat) **If you wish to use 2T reduced fat shredded cheddar cheese per serving, reduce the initial weight of the ground turkey to 28 oz DIRECTIONS: Brown the ground turkey, drain it, then add all ingredients to your crockpot. Loaded Cauliflower Soup Ingredients: 1 tsp olive oil 1/4 c diced onion 1/4 c diced celery 2 cloves garlic, minced 4 c chopped cauliflower florets 1 med zucchini, chopped 2 c chicken broth 1 bay leaf 1/4 tsp each salt & pepper 1, 5.3 oz container low-fat, plain Greek yogurt 1 1/2 c reduced-fat shredded cheddar cheese, divided 12 oz cooked boneless skinless chicken breast, diced 2 slices turkey bacon, cooked & chopped Chives to garnish Directions: Heat oil in a large saucepan over medium. Add onion & cook until translucent. Add celery & garlic, cook 2-3 min. Add next 5 ingredients. Cover & bring to a boil, then reduce heat & simmer 8 min or until veggies are tender. Spaghetti Squash with Shrimp and Turkey Bacon Ingredients: 1 tsp olive oil (1 Healthy Fat) 1 tbsp light butter (1 Healthy Fat) 1 tsp minced garlic (1 Condiment) 8 oz raw shrimp, tails removed ~ should yield 6 oz cooked (1 Leanest with 1 oz subtracted) 2 slices turkey bacon, cooked and crumbled (1 oz subtracted from shrimp) 1 1/2 cups spaghetti squash, cooked (3 Greens) 1/4 tsp garlic salt or salt (1 Condiment) 1/8 tsp black pepper (1/4 Condiment) 1 tbsp reduced fat parmesan cheese (1/2 Condiment) Directions: In a medium sized skillet over medium heat, add olive oil. Add minced garlic and saute for about 30 seconds or until light brown in color. Then add raw shrimp and cook a few minutes on each side until cooked through and no longer pink. Set aside. Add light butter to the same skillet. Once butter has melted, toss in spaghetti squash, garlic salt or salt, pepper, and crumbled bacon. Heat until warm about 2 to 3 min. How about this for a HEALTHY fall favorite! Ingredients: 5 poblano peppers (10.5 oz = 3 green) 2 tbsp light butter (2 healthy fats ) 3 Tbsp chopped onion (3 condiments) 2 cloves garlic, minced (2 condiments) 1 tsp ground cumin (1 condiment) 4 cups chicken broth (4 condiments) Salt and pepper to taste (1-2 condiments) 12 oz cooked chicken breast, shredded (2 leaner) 8 Tbsp (1/2 cup light cream cheese, cut into cubes (8 condiments) 4 cups (16 oz) shredded cheddar cheese (I like Sargent Colby Pepper Jack slices; almost 2 pkgs), divided (save 1 1/2 cups for topping) (4 leaner if 5-9g fat) Preparation: Roast poblano peppers until skin is charred and blistered. You can do this over the open flame on a gas stove, or by heating your broiler to high and placing poblanos within a few inches of the broiler (turning to get all sides charred). Place poblanos in a bowl and cover with plastic wrap. Let cool, then rub skin to remove as much as possible. Cut out seeds and then place in a food processor or blender to finely chop. Set aside. In a large saucepan over medium heat, melt butter. Add onion and cook, stirring frequently, until translucent, about 5 minutes. Add garlic, cumin, and poblanos and stir until fragrant, about 1 minute. Stir in chicken broth and season to taste with salt and pepper. Bring to a boil and then reduce heat to a simmer. Add chicken. Add cream cheese and 2 1/2 cups of the cheddar cheese and whisk until smooth. To serve, divide into 6 bowls and sprinkle each with 1/4 cup shredded cheddar cheese. Sit briefly under the broiler until cheese is melted and browned (this step is optional but OH SO GOOD!). Cauliflower Roasted Red Pepper Soup 🥣 Ingredients: 4 cups (21 oz) red bell peppers 5 cups (17.6 oz) cauliflower florets 2 tbsp olive oil 8 tbsp onion, diced 2 garlic cloves, minced 4 cups low sodium chicken broth 1 tbsp fresh thyme ½ tsp smoked paprika ¼ tsp salt ½ tsp pepper Directions: Cut the red bell peppers in half, scoop out the seeds and lay face-down on a baking sheet lined with parchment paper. Broil in the oven on high until the skin has become black. Remove from the oven and place into a sealed container and allow the peppers to cool down and steam. This step makes it easier to remove the skin from the pepper. Broil the cauliflower florets in the oven on high until they are tender and crisp, making sure to turn them over halfway. Takes about 20-25 minutes. While the cauliflower is roasting, place the oil in a large pot, add in the diced onion and garlic cloves. Saute over medium-low heat until the onions are tender and caramelized. Add the chicken broth, thyme, and smoked paprika into the pot an mix everything together. Allow the mixture to simmer on medium heat. Remove the skins from the peppers, dice the peppers and add them into the pot; mix together. Do the same with the cauliflower. Allow the soup to simmer on medium heat for 20 minutes. Add the soup into a blender 2 cups at a time to blend until the mixture is creamy and pureed. Do the same with the rest of the soup. Add the pureed soup into the same pot, add salt and pepper. Allow it to simmer on low heat until ready to serve. Kung Pao Chicken Ingredients: 1½ lbs cooked boneless, skinless chicken breast 2 Teaspoons canola oil (I use avocado oil) ½ cup green onions, chopped ½ Teaspoon crushed red pepper ½ Teaspoon ground ginger 4 Tablespoon rice wine vinegar 4 Tablespoon low sodium soy sauce 1 packet of Stevia in the raw 24 unsalted dry roasted peanuts Directions: Heat oil in large non-stick skillet or work on medium heat. Add chicken. Stir fry 5-7 minutes or until no longer pink in center. Remove from heat. Add onions, red pepper, and ginger to skillet. Stir fry 15 seconds. Remove from heat. Combine vinegar, soy sauce, and stevia in small bowl. Stir well. Add to skillet. Return chicken to skillet. Stir until chicken is well coated. Stir in nuts. Heat thoroughly, stirring occasionally. Cauliflower Potato Salad Makes 4 servings Per serving 2 vegetables 1/2 lean protein 2 condiments 1/2 healthy fat 1 optional snack Ingredients: 4 cups (14.08 oz) cauliflower in bite size pieces steamed or boiled until tender in bite size pieces 6 boiled eggs (when done peel eggs, rinse and separate yokes into a bowl. Grilled Cilantro-Lime Chicken with Avocado Salsa Chicken Ingredients: 4 (9 oz) raw chicken boneless skinless chicken breast halves 1 Tbsp lime zest 1/3 cup fresh lime juice 4 teaspoons oil 2 packets Splenda or Stevia 1/3 cup chopped cilantro, plus more for serving 3 cloves garlic, minced ½ tsp Salt ½ tsp freshly ground black pepper Salsa: 3 ounces avocados (ripe but semi-firm), diced 1½ cup Roma tomatoes, chopped 1/2 cup chopped green onion, rinsed under cool water to remove harsh bite 1 clove garlic, minced 1 Tbsp fresh lime juice Directions: Place chicken on a cutting board, cover with a sheet of plastic wrap and pound thicker parts of chicken to an even thickness. Transfer chicken to a gallon size resealable plastic bag. In a small mixing bowl whisk together lime zest, lime juice, olive oil, Splenda, cilantro, 3 cloves minced garlic and season with 1 tsp salt and 1/2 tsp pepper. Pour marinade mixture over chicken in bag. Seal bag while pressing air out, then rub marinade over chicken. Allow to rest in refrigerator 2 - 4 hours (rotating bag to opposite side and moving chicken around halfway through if possible to ensure it's evenly marinating). Preheat a grill over medium-high heat (to about 425 - 450 degrees). Brush grill grates lightly with oil then grill chicken until center registers 160 - 165 degrees on an instant read thermometer, about 4 minutes per side. Remove and let rest 5 minutes. Meanwhile, in a medium mixing bowl toss together avocado, tomato, onion, garlic and lime and season with salt and pepper to taste. Spoon over chicken and sprinkle with chopped cilantro. Serve warm. Green Chile Chicken Enchilada Dip Ingredients: 4 ounces low fat cream cheese 1 cup plain low fat Greek yogurt ¼ cup green enchilada sauce 7 ounce can diced green chilies ½ tsp cumin ½ tsp chili powder ¼ tsp kosher salt 1 lb cooked chicken breast, shredded* ½ cup part skim mozzarella ½ cup low fat Monterey jack cheese, divided Directions: 1. In a large bowl mix cream cheese, yogurt, enchilada sauce, green chiles, and spices. 2. Fold in the shredded chicken, mozzarella, and 1/4 cup of the monterey jack cheese. 3. Place all of the ingredients in the slow cooker and cook on low for 2 hours. 4. Remove the dip from the slow cooker and put it in an oven safe dish. 5. Top with the remaining cheese and stick it under the broiler until the cheese is lightly browned. 6. Serve with vegetables! Four-Cheese Italian White Cheese Blend 1 tsp dried thyme (1 condiment) ½ tsp fresh ground pepper (1 condiment) 1 tbsp Parsley, ground (1 condiment) Directions: 1. Preheat your oven to 400°F(200°C). Grab your spaghetti squash firmly and chop off the tip and tail. Cut in half length-wise and scoop out the innards and seeds. Wat heb je nodig? * 400 gram pompoenblokjes (gekookt en gepureerd) * 20 gram eiwitpoeder chocolade * 7 gram bakpoeder * 60 gram volkorenmeel * 35 gram cacaopoeder * theelepel oploskoffie of 50 ml espresso * zoetstof naar smaak * zout Topping: HiPRO @hipro.nederland chocolademousse en discodip Hoe maak je dit? 1. Meng de droge ingrediënten. 2. Meng in een aparte kom de natte ingrediënten. 3. Spatel de natte bij de droge ingrediënten. 4. Doe dit beslag in een brownievorm 5.
