In my opinion, the Szechuan pepper, which provides โtongue-tinglingโ heat, was unnecessary...at least in the quantity called for in the recipe (2:1 Szechuan pepper to white pepper). The โtongue-tinglingโ heat of the Szechuan pepper detracted from the taste of the shrimp. Since this was my only โissueโ with the dish, I made it again using a 1:1 mix of Szechuan pepper to white pepper. This minor change resulted in a much better taste.
