Tuscan chicken (the low calorie version) This is so tasty 😋 Ingredients: -chicken breasts -sundried tomatoes -spinach -mushrooms -onion -garlic -paprika -chicken stock -salt & pepper -low fat garlic & herb cream cheese In your pan start with a diced onion and 2 crushed garlic cloves, then add your chicken breasts. Once the chicken breasts are cooked add sundried tomatoes (I use the tub from the fridge in lidl and I pour the oil in too) Then add your paprika and chicken stock (stock cube made up with water) and add the veg of your choice, I used spinach and mushrooms. Leave to simmer and for the last 5 minutes add your cream cheese, i add a big heaped tablespoon. Before serving add salt & pepper.
