Plant-based Ceviche on Grilled Avocado Boats 🥑 Here is a recipe: 4 ripe avocados cut in half and seed removed. 1 tsp of grape seed oil 1 can of hearts of palm 3 roma tomatoes or 1 cup heirloom grape tomatoes 1 small red onion 1 jalapeño seeds removed. Juice from 2 limes Handful of cilantro chopped Few mint leaves optional 1 tsp salt. Method:Cut avocados in half, remove the seed and brush it with grape seed oil. Turn a stove top or outdoor grill on high. Grill each avocado face down for 4-5 min or until you see dark grill marks.Remove them from the grill and set aside. Meanwhile, chop the hearts of palm, onions, tomato and cilantro, jalapeños, mint and place everything in a deep bowl. Season with salt and lime juice. Carefully mix the ceviche and adjust the seasoning as needed. Scoop a table spoon of ceviche on each grilled avocado boat and serve the remaining ceviche. Here are the first 11 ways to add more greens to your meals: 1. Include greens in your morning smoothie. You can add a handful of spinach and you won’t even taste the difference. 2. Stock up on a variety of rainbow vegetables. Carrots, cucumbers, canned green beans, celery, and Romaine lettuce are a few examples. 3. Substitute vegetable noodles for pasta. They are totally worth the health benefits. 4. One of my favorite ways to eat more veggies is to make kale chips. They are so easy to make. 5. Learn how to make vegetables actually taste good by adding herbs or spices or simply using one of the cooking techniques we learned in a previous video. I recommend roasting them. 6. Instead of bread, use lettuce wraps in your favorite sandwiches. 7. Include chopped vegetables in your breakfast. I like mixing them in with eggs. 8. If you love muffins, sneak in some grated zucchini. You’ll hardly notice the difference in taste! 9. To your favorite soup, add some vegetables. I like adding some carrots, peas, bell peppers, or celery. 10. Load up your sandwich with some lettuce, tomatoes, cucumbers, or even some sprouts. 11. Here are the most basic cooking techniques to help you in the kitchen when you are cooking your meals. ✅ Baking- is regularly used for cooking pastries, bread, and desserts. ✅ Frying-This means cooking your food in fat – you can deep fry, stir fry, pan fry, or sauté your food. ✅ Roasting: This is essentially a high-heat version of baking in which your food becomes drier and browner on the outside. Grilling: This is a fast way of cooking where the food is placed under intense heat. You can use various sources of heat for grilling: wood-burning, coals, gas flame, or electric heating. Before grilling, food can be marinated or seasoned. ✅ Steaming-This means cooking your food in water vapor over boiling water. ✅ Poaching: This involves a small amount of hot liquid, usually water, but can also be broth, stock, milk, or juice. Common poached foods are fish, eggs, and fruit. ✅ Simmering: This involves cooking liquid on top of a stove on low heat in a pot or pan. ✅ Broiling-Similar to grilling, the heat source comes directly from the top. Favorite dishes for broiling include chicken, beef, and fish. ✅ Blanching: Here the food is part-cooked, and then immediately submerged in ice-cold water to stop the cooking process. All sorts of vegetables can be blanched, including green beans, asparagus, and potatoes. ✅ Braising: First, the food is sauteed or seared, and then simmered in liquid for a long period of time until tender. Pot roasts, stews, and casseroles can be cooked in this way. ✅ Stewing-Again, the food is sauteed or seared first, and then cooked in liquid, but normally using smaller ingredients such as chopped meats or vegetables. Let me share with you how the freezer can come in handy when meal prepping. Freezers hold and keep food for a long time. Do not forget to label and date your frozen products. To Freeze or Not to Freeze 🥶Freeze: Sauces, soups, chili, beans, herbs, smoothies, meatballs, and casseroles. ⛔Don't freeze Potatoes, cucumbers, lettuce, onions, and dairy (anything with milk or cheese in it). Here are some tips on the best way to freeze certain meals To freeze oatmeal: Add cooked oatmeal and toppings to a muffin tin, freeze until set, then wrap individually for easy access in the mornings. To freeze sauce or soup: Double the recipe, but freeze in individual portions. To freeze fresh herbs: Chop leftover fresh herbs such as dill or cilantro and store them in freezer-friendly Ziplock bags. To freeze smoothies: Prep and place solid ingredients in a Ziplock bag. Toss in a blender with liquid and Greek yogurt when you're ready to eat. A major part of learning how to meal prep is understanding what makes a really good meal-prep recipe and what you should probably leave for a night when you have more time to prep, cook, and immediately eat. 🌟 Choose ingredients that all work well together. 🌟 Think about items that can be cooked in bulk, such as oatmeal for breakfast, quinoa for grain bowls for lunch, and soup for dinner. 🌟 Use what you already have in the fridge and pantry. This forces you to get creative with your meal prep and what you have on hand. If you are a beginner in meal prep then your first goal is to know what to do now and what to save for later. Knowing these strategies will make your life easier. Do later: 👉 Zucchinis noodles hold a lot of water and if cooked in advance can become very soggy. 👉 Blend smoothies. You can gather smoothie ingredients for individual servings into Ziplock bags now, but toss with liquid and add-ins when ready to eat. 👉 Cut avocado. Avocado turns brown quickly, so slice your avocado for toast, salads, and tacos at the last minute. Do now: ⭐ Massage kale. Kale is really tough and fibrous. One of our favorite things is seeing you remake our recipes! 😊 @teachertastes ・・・ FIRECRACKER TOFU MEAL PREP via @teachertastes A meatless meal prep for you! This recipe is from @mealpreponfleek and is packed with flavor. -1 lb. extra-firm tofu cubed and patted dry -3 tbsp vegan butter -1/4 cup hot sauce -1 tbsp coconut aminos -2 tbsp brown sugar -1/4 tsp chili flakes -1/8 tsp garlic powder -2 tbsp gluten-free flour -2 tbsp olive oil -Broccoli -Rice -Riced Cauliflower -Add tofu to a medium mixing bowl and sprinkle with gluten-free flour. -Gently toss to coat the tofu. -Heat oil over medium-high heat, once hot. Add tofu leaving space between each piece. -Cook for 4-5 minutes. -Turn and cook 4-5 minutes longer, until golden brown and crispy. -Add cooked tofu to the mixing bowl. -Wipe skillet clean and add butter, hot sauce, coconut aminos, brown sugar, chili flakes, and garlic powder. -Heat over low heat until simmering. Simmer for 1-2 minutes, until butter is melted and brown sugar is dissolved. Plant-based Ceviche on Grilled Avocado Boats 🥑⁣⁣⁣ ⁣⁣⁣ Here is a recipe:⁣⁣⁣ 4 ripe avocados cut in half and seed removed.⁣⁣⁣ 1 tsp of grape seed oil⁣⁣⁣ 1 can of hearts of palm⁣⁣⁣ 3 roma tomatoes or 1 cup heirloom grape tomatoes⁣⁣⁣ 1 small red onion⁣⁣⁣ 1 jalapeño seeds removed.⁣⁣⁣ Juice from 2 limes⁣⁣⁣ Handful of cilantro chopped⁣⁣⁣ Few mint leaves optional⁣⁣⁣ 1 tsp salt.⁣⁣⁣ ⁣⁣⁣ Method:Cut avocados in half, remove the seed and brush it with grape seed oil. Turn a stove top or outdoor grill on high. Grill each avocado face down for 4-5 min or until you see dark grill marks.Remove them from the grill and set aside.⁣⁣⁣ ⁣⁣⁣ Meanwhile, chop the hearts of palm, onions, tomato and cilantro, jalapeños, mint and place everything in a deep bowl. SEARED HONEY PAPRIKA SCALLOPS, DAIRY FREE SPAGHETTI SQUASH ALFREDO AND GARLICKY SPINACH AND MUSHROOMS.⁣⁣⁣ ⁣⁣⁣ SCALLOPS:⁣⁣⁣ 1️⃣1 pound wild scallops (thawed and dried: place on paper towel and pat dry, then season with salt, pepper and paprika and brush with a little honey).⁣⁣ 2️⃣Heat 2 teaspoons ghee or coconut oil over medium high (I use cast iron) and sear the scallops for about 2 minutes per side (do this in batches to ensure you don’t overcrowd them: that’s how you get that sear!)⁣⁣ 3️⃣Remove scallops from pan and set aside on a plate.⁣⁣⁣ ALFREDO SAUCE: 1 cup raw cashews (soaked in boiling water for 10 minutes then drained), 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1 teaspoon miso (I used white miso), 1 teaspoon lemon juice, 1 tablespoon potato starch, 1 tablespoon tapioca starch, 1/4 cup coconut milk, 3/4 cup warm water, 1 tablespoon olive oil, 1/2 teaspoon mustard powder, 3/4 teaspoon salt, 1/2 teaspoon honey, 1 teaspoon coconut aminos. Crispy burritos are my love language. INGREDIENTS This makes 3 burritos Filling 1 bunch scallions – thinly slices with roots removed 3 cloves garlic – minced 3 cups butternut squash – cut into tiny cubes 1 bunch parsley – finely chopped 2 tbsp harissa (can sub tomato sauce) 1 tsp salt 1 tsp black pepper 1 tsp paprika 1 tsp italian seasoning blend (could sub poultry seasoning or all purpose) juice from 1/2 lemon 1 can white beans – drained 1/4 cup vegan yogurt (could sub greek) 1 cup dried cranberries Other Burrito tortillas (I used Mi Rancho whole wheat) Avocado INSTRUCTIONS Preheat oven to 400 degrees. Heat oil over medium heat. Add scallions and garlic and cook for 5 minutes. Add butternut squash, lemon, harissa and spices to the pan. Cook for 10 minutes. Add in beans and cook for 3-5 more minutes or until the squash is cooked through. Lastly, add in yogurt and cranberries and stir to combine. Remove from heat. Warm a tortilla for 30 seconds in the microwave to prevent breakage. Lay out tortilla on a lined sheet pan. Add filling to tortilla and top with 1/4 sliced avocado per burrito. Roll each burrito burrito-style (I recommend googling how to do this). Repeat for every burrito you want to make. Bake burritos for 15-18 minutes or until crispy. Let burritos cool for 15 minutes and enjoy! 🌱Tofu Veggie Curry🌱You’ll be happy you made this! .⁣ By @cookingforpeanuts 🌱Recipe: Press 1-14oz block extra firm tofu with paper towels and heavy object to remove excess liquid. Cut into approximately 3/4-inch cubes. Bake on lined sheet at 400F until golden and slightly crispy. Meanwhile, sauté 1 small white onion (small dice) in 1 tbsp neutral oil (or a little vegetable broth) until translucent, about 5 minutes. Add 3 minced garlic cloves and 1 tbsp finely grated ginger. Sauté until fragrant, about 30 seconds. Add 2 tbsp Thai red curry paste and keep mixing on medium heat, about another minute. Add 1-15oz can coconut milk and 1/2 cup water and stir. Add 2 chopped zucchini (bite-size pieces) and 2 chopped red bell peppers (bite-size pieces) and simmer until peppers are just fork tender. Add baked tofu and continue cooking another minute until tofu warmed through. Remove from heat and stir in 1-2 tbsp tamari/soy sauce, 1 tbsp fresh lime juice (or to taste), 1 tsp sriracha (optional) and salt to taste. (Add a little brown sugar or maple syrup if desired.) Shrimp and Asparagus Foil Packs with Garlic Lemon Butter Sauce🔥🔥⠀⁣ .⠀⁣ Shrimp and Asparagus are cooked together in individual foil packs in a rich buttery sauce. The bright lemon pairs perfectly here and the garlic adds so much flavor. Cook them on the grill or in the oven.⠀⁣ ~⠀⁣ 1 1/2 lbs large (21/25) shrimp peeled and deveined⠀⁣ 2 Tbsp dry white wine or chicken broth⠀⁣ 4 tsp minced garlic (4 cloves)⠀⁣ 2 tsp lemon zest⠀⁣ Salt and freshly ground black pepper⠀⁣ 6 Tbsp butter diced into small cubes⠀⁣ 1 1/2 Tbsp fresh lemon juice⠀⁣ 2 Tbsp chopped fresh parsley⠀⁣ 1 lb medium thickness asparagus woody ends trimmed⠀⁣ Preheat a grill to medium-high heat (about 400 - 425 degrees). Cut 4 sheets of 14 by 12-inch heavy duty aluminum foil then lay each piece separately on countertop.⠀⁣ Divide shrimp among packs near center then place asparagus to one side of the shrimp (going the long direction of the foil). Pour 1/2 Tbsp white wine over each. Sprinkle over garlic (1 tsp per packet) and lemon zest then season with salt and pepper.⠀⁣ Divide butter pieces evenly among packets layering them over the shrimp and asparagus.⠀⁣ Wrap packets in and crimp edges together then wrap ends up (don't wrap too tight - keep a little extra space inside for heat to circulate).
