Warm tuna steak, samphire tomato and bean salad It almost feels like spring out there today but if you’re not quite ready for cold salads this warm tuna salad hits the spot. Protein packed beans and tuna make this a really filling meal and the herby zingy dressing made with extra virgin olive oil adds bags of flavour and loads of healthful polyphenols. 🛒 2 x tuna steaks 600g jar/can butter beans 200g samphire 100g fine green beans 400g cherry tomatoes, halved Herby dressing 1 shallot, finely diced 1 clove of garlic, minced 1 lemon, juiced 1 tbsp chopped Dill 1 tbsp chopped Parsley 4 tbsps the Governor Extra virgin olive oil 🧑‍🍳 ✅Make the dressing. Place the dressing ingredients in a small bowl and mix together. ✅Steam the green beans and samphire for 5-7mins. ✅Add 1 tbsp EVOO to a frying pan and heat to medium, add the beans, samphire, green beans, tomatoes, and heat through to 2mins, stir in the dressing. ✅Meanwhile brush the tuna with oil, heat a griddle pan to medium add the tuna fry on each side for 1-2mins. VIRAL TORTILLA QUICHE ✨ by @jshealth We thought it was about time to jump on this trend and see what all the hype is about! Our verdict? This trend is a winner ⭐️ SO easy, and you can use whatever veggies you have in your fridge. Highly recommend adding in chopped rosemary and olives if you have some... delicious! We also went for a mix of egg and cottage cheese to amp up the protein content, plus help the eggs rise a little. Have you tried this trend yet? Ingredients: - 1 wholemeal wrap or tortilla - 4 eggs - 2 heaped tbsp cottage cheese - 5 cherry tomatoes, halved - 4 button mushrooms, sliced - Sprinkle of sliced olives - Chopped rosemary, or herbs of choice - Sea salt & pepper - Parmesan cheese Method: Preheat the oven to 200C or 395F. Place a wholemeal wrap in shallow cake tin or baking dish. Add in the eggs and cottage cheese, season with sea salt, black pepper and chopped rosemary. Whisk until combined. Add in the sliced mushrooms, cherry tomatoes and a sprinkle of olives. Finish with parmesan cheese and bake in the preheated oven for 20 minutes. Slice and serve!
