Honey Garlic Pork Chops courtesy of @cafedelites and my own recipe of Oven Roasted Potatoes with Haricots Verts 👩🏻🍳 INGREDIENTS 4 pork chops boneless Salt and pepper to season 1 teaspoon garlic powder 2 tablespoons olive oil 1 tablespoon unsalted butter 6 cloves garlic, minced 1/4 cup honey 1/4 cup water 2 tablespoons apple cider vinegar INSTRUCTIONS Preheat oven to 390. Season the chops with salt, pepper, and garlic powder before cooking. Heat oil in a pan or skillet over medium-high heat until hot. Sear chops until golden on each side and cooked through (about 4-5 minutes on each side). Transfer to a plate; set aside. Reduce heat to medium. Melt butter in the same pan, scraping up any browned bits from the bottom of the pan. Sauté garlic until fragrant (about 30 seconds). Add the honey, water, and vinegar. Increase heat to medium-high and continue to cook until the sauce reduces and thickens slightly (about 3-4 minutes) while stirring occasionally. Add chops back to pan. Baste with sauce and bake in the oven for 10-15 minutes or until you reach your desired doneness. Broil for 2 minutes to get those caramelized edges! Baby yellow potatoes Haricots Verts Garlic powder Paprika Olive oil Salt Pepper Slice potatoes, place on sheet pan. Add haricots verts to the sheet pan. Drizzle olive oil and season with salt pepper garlic powder and paprika. We had some dear friends over last night for dinner and they brought me a bunch of freshly harvested asparagus they had grown in their very own garden.🌶️🥦🍋🍉🥬 It took 5 years for their asparagus to be ready to be harvested and they were willing to share some with me. It was seriously the best gift and meant the world to me that they would share their bounty with me. It made my heart so happy and my face showed it. I think our friends were surprised at my JOY in their gift. 🌟Tidbits about growing asparagus: Although asparagus is fairly easy to grow and plant, if you’ve never grown it before you may be wondering how do you grow asparagus plants. First things first, you’ll need to bottle up some patience to grow asparagus as it takes approximately 3-5 years for the first plants to be ready for harvest. After that, you can harvest them in early spring for 15-30 years or more. When deciding where to plant asparagus in your yard, it’s important to keep in mind how long the plants will be living there. In Austria (and Germany) we call it ‘Brotzeit’, it’s a traditional time of the day, often between breakfast and main meals, when you eat ‘Brotzeit’. Usually it’s a slice of good bread with cheese and deli slices, in Austria we used to do a Brotzeit (bread time) with pretzel and potato cream cheese kinda style. I had my own Brotzeit, picking up the best pretzels in town. Of course made by German bakery @fressenportland Trust me, this is where you buy pretzels and nowhere else, if you want real authentic German pretzels! They had a special with pumpkin seed and sesame seed pretzels, little pretzel buns and pretzel stalk. I double checked and all their pretzels are vegan (I usually buy only the plain pretzel). Make sure you come early, they always have a line. They are also at the PSU Farmers Market (even there, they have a line!) Stuffed Bell Pepper Casserole from @bowl_me_over I had so many leftover chopped veggies I needed to use up and was searching of a good recipe to use them in when I happened upon this one with good reviews. A couple of changes I made was that I added all the chopped veggies as well as chopped spinach about halfway through cooking the ground beef. I also used Montreal chicken seasoning for a slightly different flavor. I cooked everything in a cast iron pan instead of transferring into another dish and I did not add any cheese. We served this with toasted baguette to encourage my kids to try this and everyone loved it except my pickiest eater.
