Dinner tonight was AMAZING!! I was craving a meatball sub, and this totally delivered. Added bonus that it came in at only 6 points on @weightwatchers for both! For the meatball I mixed 1/3 pound ground chicken breast with some panko bread crumbs, an egg, parsley, garlic and onion powder, and salt and pepper. From there I cooked in the air fryer at 400 for about 8 minutes, then added them to marinara that was simmering on the stovetop I used 4 points worth of @aldiusa sourdough bread, topped with meatballs and marinara, then two points worth of fat free mozzarella (don’t forget to spray your fat free cheese with olive oil spray!) Bake the whole thing at 425 for about 8-10 minutes until the cheese is melted to your liking I served it with my roasted broccoli recipe, and was genuinely full after devouring the whole plate I’ll definitely be making it again soon! #weightwatchers #ww #wwdinner #wwdinnerideas #meatballsub #dinnerideas #weightlossjourney #healthyeating

Dinner was interesting 🤣…but delicious so that’s all that matters right?! Normally I would have my teriyaki chicken with rice, but I wasn’t feelin it today. I ended up throwing some Mac in the microwave and having some cottage cheese with it. It was a lot of food for just 5 points!👏🏻 ☀️Chicken, bell peppers, & mushrooms cooked on the blackstone with G Hughes Teriyaki sauce (0) ☀️ @birdseyevegetables Veggie Mac & Cheese (5) ☀️Low fat cottage cheese (0) I personally do not count points for low fat cottage cheese! I really liked the combo of the Mac & cheese with cottage cheese! That would be a super easy lunch if I was in a hurry and needed something fast🤩

I’ve been trying weird stuff lately. 🥴. . Sick of the same stuff over and over again, I’ve been cruising Pinterest. Foil packet dinners came up. Sure, why not? This is the closest I’m gonna get to camping. ⛺️. . I threw some baby potatoes and chicken onto a piece of aluminum foil with a little @ghughessugarfree honey mustard and then I added some center cut bacon I’d made earlier. After everything was cooked through, I threw a slice of reduced fat Colby jack cheese on top and let it steam for a minute to get melty. . Served with some more sauce and grilled asparagus and that was all she wrote. . I probably won’t do it again but it wasn’t bad. Just reaffirmed my belief that I am not built to be truly outdoorsy. 🪴. . So I’m on a mini vacation with my mom & my little girl and my mom made this awesome simple dinner tonight. Rotisserie chicken breast, mixed veggies & jalapeño black eyed peas… absolutely delicious! 🎶 girl dinner ✨. . Sometimes, dinner isn’t pre-planned and composed and a whole family affair. Sometimes it’s chicken nuggets in the air fryer and tossing some frozen broccoli (or mac & cheese, whatever, depends on the day 🤪) in the microwave for the kids. Sometimes it’s telling your husband he’s on his own - Fend for Yourself. . I wasn’t particularly hungry - until I was. But by then I didn’t have anything planned and it was too late to make a whole dinner, so I leaned on what I had, and what I knew. . Oh, leftover taco meat? Yep. Frozen TJ fajita veggies? Toss that in the pan too. Let’s see, oh, behind the ketchup is this leftover container of refried beans. Yes. Eggs, cheese… ooh, and hashbrowns too because I have the points/calories, why not, I deserve it. Mmm, yes, a scramble. . Oh. You know what would slap? hot sauce. Tortillas. YAS! Tacos! We love breakfast tacos! . Man, dreaming in food is such a gift sometimes. (Although sometimes the food noise really is the worst.) It did work out pretty nicely for me this time though. 😇🤩. Love that for me. . And Jeff did come over and investigate my food. And finessed a couple bites from me too. I started with a recipe and then it turned into empty the fridge and cabinets and that honestly how most of my meals come together🤷🏼‍♀️ I cooked the meat, onion, garlic and seasonings together and then added the tomato paste for a bit before I added the rest of the veggies. After that cooked down I added the salsa, black beans and corn and then at the very end I squeezed the fresh lime into the pan and let it all simmer for awhile. All zero points #I added 2Tbls of Tostito Queso Blanco to the top of my serving for 1pt. It spread out so it looks like a lot more. So good and a huge pan for leftovers!
