Indian Red Carrots are similar to orange carrots with an extra nutitional boost of lycopene which is beneficial in helping reduce the risk of heart disease, macular degeneration, and prostate cancer amongst many others. Hey friends, I would share a little more about eating raw carrot salads and why I love it so much. It was Dr. Ray Peat who created this recipe and found out this salad was helping him when he suffered from migraines. Carrots are fibrous vegetables that grow underground. To protect themselves from the moist environment, carrots produce anti-bacterial and anti-fungal substances. It is exactly these anti-microbial compounds in carrot fibers that help prevent bacterial and fungal overgrowth of the our intestines. In addition, the fibers of raw carrots bind toxins and hormones we do not need anymore such as excess estrogen and endotoxins and carry them out from the body through the digestive system. I have recommended raw carrot salad to clients with estrogen dominance, PMS, gut imbalances, menstrual migraines, general mood swings before their period, hormonal acne, and even endometriosis pain -- and each of these clients reported improvement of their symptoms after consistently eating this salad daily. Two important questions to ask yourself: ⠀ 1) how many calories do I eat in a day? ⠀ 2) how many calories SHOULD I be eating in a day? ⠀ If these numbers aren’t close then you’re only hurting your hormones, metabolism, thyroid, fertility. ⠀ Under-eating is one of the biggest contributors to poor metabolic health. ⠀ When we consistently under eat or yo yo diet our body conserves energy and slows down to protect itself. What does this look like w/in the body? Sluggish thyroid, slower digestion including less stomach acid production, lowered immune function, & prioritizing processes in the body that contribute to survival. ⠀ Unfortunately, the reproductive system is not one that gets prioritized. Better yet, it can get completely shut off, meaning no ovulation, no real menstruation & 0 chance of getting pregnant. ⠀ Our society promotes the idea that we constantly need to eat low calories. The last few days we have been talking about how to rid the body of excess estrogen! Doing so can help to support healthy progesterone production. I’ll always love this snack ♥️🥕 Carrots have more Vitamin A than any other vitamin. They are the best source of alpha and beta carotene which convert into Vitamin A. They are high in fiber compared to how many calories they have. If you don’t know about Dr. Ray Peat and his take on raw carrots, he says that women who eat raw carrots regularly have lower levels of estrogen. Estrogen dominance is very common especially when most people are exposed to tons of hormone disrupters in their everyday life. So I think this snack should be a go-to for everyone! Ladies, since I had radioactive iodine it put my body into well, shock 😂 but with that, came low thyroid and when your thyroid is low, so is progesterone and because my progesterone and thyroid are low, I have oestrogen dominance. Raw Carrot Salad 1 carrot, shredded or ribboned Splash oil (Avocado, olive, or coconut) Splash raw apple cider vinegar Salt A little honey To create ribbons, I use a vegetable peeler. You could also shred the carrots with a grater or in a food processor. For the dressing, you can either mix the remaining ingredients in a bowl first then add the carrots and toss. OR... Just add the remaining ingredients onto of the carrots and toss.
