Hadn't made chili in YONKS. My friend, Maggie, said "I have 3lbs of ground beef I'll never use, how about we make chili?" And we did. Bit of a 'kitchen sink' effort. Took some ideas from a few recipes i found on line and added a few of my own ideas in there, too... namely a couple of table spoons of black cocoa powder 😃 , smoked maple syrup and some freshly ground ancho chilies and kashmiri chilies. We threw in some fresh carrots, onions, red pepper, roasted garlic (a lot, of course), cumin, oregano, smoked paprika, a dash of maple pepper seasoning, low sodium beef broth..... I think that was it. Simmered on low for a couple of hours. When I got home with my share I cooked up some pasta, lopped on some Tositios queso, and topped it with the chili. Lite kyligare väder idag - då passar en kryddig chili con carne med en twist! Vi har valt att använda färskkorv Chorizo Atado istället för köttfärs. Det ger en sån mustig och kryddig smak. Ta ut färsen ur skinnet och fräs på som ni gör med köttfärs. Ni måste bara testa! Tål att puttra länge på spisen och blir ännu godare dagen efter :-). Önskar er en smakrik måndag 😍🌶️

The ultimate CHILI This is the most simple, yet flavourful chili you will ever have. It is a cross between sweet from the hickory bbq sauce with a subtle spicy kick from the chili powder and the taste of warmth from my secret ingredient, NUTMEG - I know, you would have never guessed!!! It’s packed with protein and fiber and made in only one pot. Follow the recipe below: - 1 tbsp olive oil - 1 yellow onion, diced - 2 large garlic cloves, minced and salted - 1 1/2 lbs ground beef - 1 1/2 tbsp chili powder - generous pink salt and pepper - 1 can (540 ml) black beans - 1 can (540 ml) chickpeas - 1 can (540 ml) red kidney beans - 1 tomato, diced (Roma or vine tomatoes are best) - 3 cups canned tomatoes, blended (no salt added) - 1 3/4 cup water - 4 tbsp bbq sauce (I used Stubs Original but any hickory flavoured bbq sauce will do ☺️) - 1 tsp nutmeg In a large soup pot over medium heat, heat the olive oil and sauté the onions and garlic until the onions are translucent. Add the ground beef and break up any large pieces. Season with chili powder, pink salt and pepper, then mix. Cook for about 5 minutes or until the beef is cooked (no longer pink). Add the black beans, chickpeas, kidney beans and tomatoes. Mix and cook for about 1-2 minutes. Then add the blended tomatoes and water. Mix and season with more salt. Cook for 5 minutes, then add the bbq sauce. Turn the heat up to high and allow the chili to come to a boil. After boiled, turned to heat down to medium and sprinkle in the nutmeg. Give the chili a mix, then bring to a boil again by turning the heat back up to high. After boiled, simmer for about an hour. I like to top my chili with green onions, guac and cheddar cheese but sour cream and cilantro also completes this dish.
