Avoiding takeaway! Why buy a takeaway when you can do this?! Tonight I made chilli con carne with beef mince and all the veggies I could find. A 750g pack of 5% fat mince makes enough to feed a family of 4 twice if you put loads of onion, carrot, mushroom, beans, bell pepper and sweetcorn in. It’s a great way of getting veg into a very family friendly dish. Plus if you mince the mushrooms in a food processor nobody can pick them out 😂 This is what is left over from dinner tonight. I always cook plenty of rice too. It all goes in the freezer ready for the next time we can’t be bothered to cook, and gets heated up in the microwave in a few minutes. My chilli recipe is flavoured with garlic, salt & pepper, beef stock, 2 tbsp ground cumin, 1 tbsp smoked paprika, 1/2 tsp chilli powder, 2 tbsp cocoa powder and a splash of vinegar and simmered for about an hour. It’s really, really good. To reheat from frozen it’s 5 minutes on full power for each tub, with a splash of water in the rice. I sometimes defrost the chilli on the countertop beforehand and heat it up in a pan if I’m organised. Yes ok, we do sometimes get pizza, garlic bread and tiramisu delivered from our local, but it’s hardly ever because we don’t have quick food in the house - it’s because we want it as a treat. And we really, really enjoy it. If you’re trying to choose healthier options and reduce your takeaway, batch cooking meals like this can really help. You guys, this is seriously like a restaurant quality meal right here!!!! 🍽️ Dinner Tonight was: Chicken Parmesan topped with Epicure prepared marinara (which is left over from having spaghetti and meatballs the over night!! Yes 🙌🏻 #cookonceeattwice) and potatoes with Tuscan Chicken seasoning (made in the round steamer in the microwave) and a gorgeous salad with prepared Balsamic Vinaigrette Dressing!!!!!! Tossed a pork shoulder in the crock pot this morning with some fresh squeezed OJ, cumin, Mexican oregano, Vanilla Bean Kitchen Rosemary Salt & fresh ground Bourbon smoked Madagascar peppercorns, chopped onions and garlic, along with some jalapeños to let some carnitas cook while I am busy with life. I will get the meat shredded tonight and use it for a few meals this week. Tonight it is just good old carnitas 🌮 tacos! Yummy! What is your favorite way to use your extra carnitas meat? $10.96 for 5 of us (2A + 1C + 2toddlers) It's dinner #3 from the pulled pork I made in yesterday's cook-up. Tonight I used it to make another easy, low-fuss meal paired with some cheap in-season veg. ☆ Pulled Pork Pies w' Baked Pumpkin ☆ 》NEED • pulled pork $8.15 • 2 sheets puff pastry* $0.90 • ½ butternut pumpkin $0.41 • handful grated cheese ~$0.50 • mashed potato ~$0.50 • handful feta ~$0.50 • Pantry Staples: olive oil, balsamic vinegar *should use shortcut pastry on the base, and puff on the top, but I didn't have shortcut and wasn't going to make a trip to the shops just for that, so I used puff pastry all over. 2 sheets of pastry gave me 5 Pies. 》PREP - preheat oven to 180°C - cut Pumpkin into thick wedges or slices - remove pastry sheets from freezer approx 10mins before using them 》COOK - place pumpkin on a lined oven tray. Drizzle with olive oil and place in the oven for 40 mins, turning over halfway through cooking time. Test if it's cooked by piercing with a fork - when the pumpkin has 10mins cooking time remaining, start making Pies - use a pastry cutter to cut bases + tops for as many Pies as you need. - place the pastry bases in the pie maker, fill with pulled pork, 1 tsp of reduced sauce from the cooked, a pinch of cheese, and 1 tbsp mashed potato. Try not to overfill. Place pastry lid on top. Repeat. - close lid of pie maker, and cook until pastry is dark golden in colour. - once pumpkin is cooked, serve with a drizzle of balsamic vinegar (or fig glaze or something similar) and crumble over the feta 》BRING THE COST DOWN - save money on wasting pastry, by overlapping the sheets and cutting pastry as close together as possible. Some people even cut squares, and fold the corners up with a bit of pastry placed on top to seal it so there's no off-cuts at all

Azi vin în întâmpinarea ta cu o idee de prânz proteic și super nutritiv. Se prepară destul de repede și poți umple câteva caserole cu care să îți asiguri prânzul la birou. Pentru chifteluțe ai nevoie de: 1 kg carne tocată (vită/ porc/ amestec de vită+porc/ pui/ curcan) 1 ou 1-2 căței de usturoi 1 legătură de pătrunjel/ mărar 1 lgț sare 1/2 lgț piper Metoda de preparare: Se amestecă toate ingredientele, se formează chifteluțele și se coc în cuptorul preîncălzit la 180-190 grade, timp de 25-30 minute. Pentru sosul de roșii ai nevoie de: 1 ceapă mărunțită 1-2 căței de usturoi 1 lg ulei de măsline 1 borcan (350g) de sos alla Siciliana Lidl ( cu vinete și parmezan) 700 ml sos de roșii Tomato Passata 100-150 ml apă 1-2 lgț miere 1 lgț sare 1/2 lgț piper Metoda de preparare: 1.Ceapă și usturoiul se călesc pentru câteva minute, după care se adaugă restul ingredientelor. 2.Se lasă la fiert, la foc mic, timp de 20 de minute. 3.Când chifteluțele sunt gata, se pot adăuga peste acest sos. 4.Chifteluțele în sos se pot servi cu paste/ orez/ mămăligă/ quinoa / hrișcă și legume ușor sotate (dovlecel, fasole verde, mix de legume mexicane) sau salată de crudități. Partea faină la rețeta asta este gătești o dată și ai mâncare pentru minim 2 mese! 😉 După ce ai finalizat rețeta, te încurajez să îți pregătești deja caserolele cu mâncarea pentru birou! În felul acesta îți va fi mai ușor dimineața să deschizi frigiderul și să îți iei mâncarea pentru birou. Mâncarea de la cantină/ comandată din oraș, oricât de delicioasă ți s-ar părea, nu te va susține prea mult în procesul de pierdere în greutate, acolo nu stă nimeni să verifice eticheta produselor și nici cantitatea de ulei folosită în rețete! Așa ca dacă vrei să te simți bine în pielea ta, să ai mai multă energie și să nu îți mai fie somn după masa de prânz, pregătește-ți prânzul de acasă, punând focus pe combinații alimentare nutritive și echilibrate! Tonight I used it to make an easy fuss meal. ☆ Pulled Pork Bun w' Sweet Potato Fries ☆ 》NEED • pulled pork $8.15 • 4 x milk buns $5.50 • 100g coleslaw salad $1 • 1 sweet potato $0.87 • Pantry Staples: butter, mayonnaise, olive oil, smoked paprika, garlic powder, onion powder, salt 》PREP - peel the sweet potatoes and cut them into chip-sized batons. Place in a bowl + drizzle with olive oil. Sprinkle with (measure with your heart) smoked paprika, garlic powder, onion powder + salt. Toss until well coated. 》COOK - place chips into the rotisserie basket of the air fryer and cook at 200°C for 30 - 40 mins (depending on thickness & amount of chips). - reheat the pork in the microwave, adding some of the reduced pan juices from the cook-up. - cut the buns in half, and spread with butter. Top with pulled pork, coleslaw salad, and mayonnaise. - serve buns with sweet potato fries and your favourite sauce/mayonnaise on the side (regular mayonnaise, aioli, garlic sauce, ranch etc.). 》BRING THE COST DOWN - I've used milk buns, as I prefer them for this type of burger, but by buying regular buns or bread rolls, you'll save a couple of dollars.

My lunch for the day…. It’s always usually a similar line up! Smoothie, dinner leftovers and a snack of veggie sticks and a protein. > smoothie (I always make enough in the morning so everyone has a smoothie for breakfast and I get another one for later in the day…they are easy for me to sip on between patients) > leftover dinner (today it’s a salad with spinach, tomato, avocado, cucumbers and kiwi, roast potatoes & kūmara and steak slices) > snack (@tom_and_luke dark chocolate bliss ball, cucumber and celery and almonds) I always try to cook once eat twice ie dinner leftovers and smoothie leftovers and snacks are easy to throw together, chop a few veggies and grab a handful of nuts. We had some beef casserole in the freezer but not enough to feed 6 on its own, so I made cauliflower cheese to go with it. Three out of four kids enjoyed it, the other one likes the cheese sauce and tried a tiny bit of cauliflower but says he still doesn’t like it. Pleased he gave it a go ☺️ Here’s the recipe… 1. A medium cauliflower, remove the leaves and chop into florets. Steam until just tender (stick a fork through the thickest part to check). 2. While it’s steaming make the cheese sauce: Melt 35g butter in a pan, then stir in 35g plain flour to make a paste. Over a low heat gradually beat in 400ml milk with a wooden spoon or whisk. Keep stirring while it comes to the boil and thickens. Grate 80g cheddar and add half to the sauce, followed by half a teaspoon of mustard (I used wholegrain but Dijon would be good too), and salt and pepper to taste. 3. Tip the cauliflower into an oven proof dish, pour over the sauce, and sprinkle the rest of the cheese on top. Simple dinner loved by all in the fam 🫶🏻 Bruschetta chicken pasta and a side salad with balsamic glaze, cucumbers and honey roasted pecans. -Air fried Chicken tenders at 375 for 15-20 minutes seasoned with salt and pepper. -Barilla protein pasta noodles and zoodles hidden underneath. -2 cans petite diced tomatoes -Drizzle of balsamic glaze Life is busy- most weeknights are spent chauffeuring to/from track, appointments and faith class…so anytime I can make enough food for multiple meals it’s considered a win and this was a major WIN tonight!

PVS Monday 🥩🥦🥔 Theming your dinners each day of the week can make a world of difference in meal prep. But having this specific Monday theme has made the biggest difference in how healthy I eat throughout the week. It’s PVS Monday. PVS = Protein/Veggie/Starch Every Monday I do an easy seasoned protein, veggie and starch for dinner. I mix and match them all up. In the warmer months we use the grill and in the colder months usually the oven or air fryer. But the most helpful part comes in that I always make TWO proteins the way that I’m cooking Monday and have the second for leftovers. So if we’re grilling shrimp, I also grill chicken sausages . If I’m baking salmon, I also bake some pork chops. Plus I always make double the veggies. So for the rest of the week for lunches and leftovers and salads I have protein and tons of veggies to eat and I did it all on Monday will minimal additional effort. This is an example of #CookOnceEatTwice. Are you looking to up your protein and plant points? Here’s a super simple recipe that does just that and won’t break the bank. 👇 **CARROT & LENTIL BOLOGNESE** Serves 4-6 Sauté 1 medium chopped onion with a pinch of sea salt in EVOO until softened. Add 3-4 cloves crushed garlic with a pinch of chili flakes and sauté for another minute or two. Add 2 medium-large grated carrots and 1 cup red lentils and stir. Add 2 tins chopped tomatoes and stir. Swish some water around your tins to get the residual tomatoes and add to the pot the add 1 cup veggie stock (I use @marigoldhealthfoods). Add a bouquet garni to the pot for extra flavour if you have one. Stir at regular intervals until lentils are cooked (20-30 minutes) and add water if needed. Serve with wholemeal spaghetti and top with Parmesan or my favourite, pecorino cheese. ✨ This freezes well and you could easily double the quantity. I always loved cooking but it wasn’t until we went vegan 11+ years ago that I really found my joy of being in the kitchen. Then we went gf and it opened up a whole new world. Then we moved where there are zero options and limited shopping. While others might see this as a disadvantage, it’s made me more efficient! And braver… I always joke I’m a recipe whore lol (you should see my saved tab on ig 🫣and even in my small space I have quite the collection of cookbooks I drag everywhere we go) Lately I’ve been experimenting more & doing more food prep. When mom & dad were here I doubled a pizza dough recipe & stashed 1/2 in the freezer. Cook once, eat twice, right? Tonight I thawed it out for a quick pizza! Perfection! I also used up some lentil/tvp I had leftover @ stashed in the freezer as a “sausage” crumble, leftover tvp bacon bits from baked potatoes and some dollars of homemade carrot top pesto! Cleaning out the fridge & being creative is a whole level up in happiness for me. Anyone else the same?!

A quick dinner idea: We made Pork Banh Mi sandwiches last night after hiking in the Pedernales park, using pork tenderloin that was cooked earlier in the week. They usually come two in a pack and I always cook both, to use one later. We mixed mayo (1/4 c) and hoisin sauce (1 Tbs) and spread that on baguette pieces. Toasted in the oven at 400 for 6-7 min. Meanwhile let shredded carrots and cucumber sit in 1 Tbs of seasoned rice vinegar (you are supposed to use radish instead of the cucumber but we didn’t have it). The last step is to layer the pork slices, vegetables, cilantro and jalapeños on top of the baguette. Pizza night! And wow - do I need to clean my glasses or what?! I made a keto (GF/DF: almond flour, eggs, oil, seasoning) crust for me and topped it with fresh, homemade pesto, goat cheese and deli chicken. My lovely friend Stef said to me a few weeks ago that going to the hairdresser is investing in your own happiness. How true is that! I've been so busy, I haven't been for ages. So, tomorrow night is my time 🥰🥰🥰 Anyhoo, to make sure my boys are fed tomorrow night, when I got home from work tonight, I made them my Tuna pasta bake as it's something they love and definitely something I won't eat 🤮 I made a double batch and added some corn kernels, spring onion, and parsley. Just made this yummy soup Red Lentil and Kale (I actually used frozen organic spinach as I was out of kale) 1 tablespoons coconut oil 1 medium onion finely chopped 4 garlic cloves minced 2 large carrots chopped 2 stalks celery chopped 1 bag of frozen organic kale or spinach 6 cups of vegetable broth 11/2 cups of red lentils 1/8 teaspoons crushed red pepper Salt and pepper to taste Hear the coconut oil in a large pot over medium heat. Add the onion and sauté until translucent, about 3-5 minutes Add the garlic, carrot, celery and kale of spinach and saute for 5 minutes. I have the pintos going on the left and the chili on the right. Chili secret weapons are dark beer, fime coffee grounds, and dark cocoa powder, also don’t go light on the spices/herbs. I made Meatballs in Mariana Sauce in the Crockpot today. I make them often for our family, but today I was making them for a family from our Church. The Husband and Wife are recovering from a Car Accident and our Church is doing a Meal Train. I offered to make the Meatballs and the Wife said "Yummy, YES!" I ended up with 2 trays full and took them both over to them.(they have had the Meatballs before and like them) I told them they could freeze one full tray. I also told them the one tray would be enough for 2 days of different meals. Meatball Sandwiches with Chips today and Spaghetti and Meatballs tomorrow! (I forgot a Salad for tomorrow 👎👎). I was more then happy to provide a meal for them, just as others did for us when I had my Mini Stroke in September! We are all so glad they are healing and on the mend, until then we all pitch in and help them! 🌼❤️🌼❤️ Today was A LONG and BUSY day! I was up and moving at 7:30AM. I got my Morning Kitchen Routine done then got ready for the day. I left here at 8:30AM to head to Addison for an important errand. I was done by 9:30AM and headed to grab a quick breakfast. I then stopped at Aldi, Mariano's, and Trader Joe's. I was home by 11:30AM. I put a few things away and then headed to Costco. I needed to fill up my tank and grab a few things from there. I was home by 1PM. I had the boys unload the Van and I put things away. I cleaned the Kitchen and then packed up the Food. Danny, Nathan and I left at 2:35PM to drop Nathan off at work by 2:45PM. Danny and I then headed to Joliet to drop off the meals to our Church Family Friends. We visited with them for about 20 minutes. We made it back to our area around 4:45PM and Danny needed to stop at Pets Mart. I grabbed a Panera Drink and we made it home by 5:30PM. Danny did the driving to and from Joliet and he did an amazing job! I had some online projects to get done so I was on the Desktop until 6:30PM. I have been relaxing since 7PM! Meal number two since moving! I had a frozen turkey breast from a bonus deal with @flashfood and it was super easy to get ready and bake up with onions, garlic, potatoes and sweet potatoes.
