St Patrick’s Day is right around the corner.☘️ ☘️☘️ If corned beef isn’t your thing, give this a try! CHEESY RACHEL BAKE. Have you ever heard of a Rachel sandwich? If not, it is a close cousin to the Reuben sandwich, using turkey in place of corned beef. A Rachel sandwich usually consists of turkey, coleslaw or sauerkraut, swiss cheese, and thousand island dressing served on rye bread. They are DELICIOUS. I decided to make a twist on this sandwich – and crafted “The Rachel Bake”. All the goodness in a casserole dish. It is delicious on its own (lower carb meal) or served with some rye toast on the side. Homemade Beefaroni Ingredients: 1 lb ground beef 2 cups uncooked elbow macaroni 1 onion, finely chopped 2 cloves garlic, minced 1 can (15 oz) tomato sauce 1 can (14.5 oz) diced tomatoes, undrained 1 teaspoon sugar 1 teaspoon dried oregano 1 teaspoon dried basil Salt and pepper to taste 1 cup shredded cheddar cheese Directions: In a large skillet, cook the ground beef over medium heat until browned. Drain excess grease. Add the chopped onion and minced garlic to the beef and cook until the onion is translucent. Stir in tomato sauce, diced tomatoes, sugar, oregano, basil, salt, and pepper. Bring to a simmer. Meanwhile, cook the elbow macaroni according to package instructions until al dente; drain. Add the cooked macaroni to the beef mixture, stirring to combine. Transfer the mixture to a baking dish and sprinkle with shredded cheddar cheese. Bake in a preheated 350°F oven for 20-25 minutes, or until the cheese is melted and bubbly. Healthy Moussaka, so good and comforting. Ingredients: - 1 eggplant - 2 small zucchinis - 1 onion - 1/2 kilo of minced beef - 1/2 jar of Raos marinara sauce - 1 box of cottage cheese - 1 egg - A handful of mozzarella cheese - 1 tsp of italian seasoning - Salt and pepper to taste First step is to oven roast the eggplant and zucchini sliced into thin layers till golden brown. In a pan, add spraying oil and cook the onion chopped with the minced beef. Add salt pepper and italian seasoning to your liking. Then add 1/4 of a jar of marinara sauce. With your hand blender, blend the cottage cheese with the egg till smooth, add salt to this mixture. To assemble, add some marinara to a small casserole. 1st Layer: roasted eggplant 2nd layer: meat sauce 3rd layer: zucchini 4th layer: the cheese sauce 5th layer: Mozzarella cheese Bake for 20-30 minutes depending on your oven on 400 deg F till golden. Cheddar bay biscuit pot pie! This mashup of cheesy cheddar bay biscuit crust, chicken, veggies and cheese was delicious and so easy to make! Recipe: - 1 box Red Lobster cheddar bay biscuit mix - 2 cups milk - About three cups of shredded rotisserie chicken - 1 stick melted butter - Frozen veggie mix of your choice - 1 can cream of chicken soup - 2 cups chicken broth - 2 cup shredded cheddar cheese - salt, pepper and garlic powder Directions: - mix the melted butter, shredded chicken, salt, pepper and garlic powder in bottom of 9x13 baking dish - top chicken with frozen veggies -top frozen veggies with shredded cheddar - mix the cheddar bay biscuit mix with 2 cups of milk (don’t forget to include the little seasoning packet) and pour over top of the cheese - do not mix it into the casserole - just pour over the top - mix the cream of chicken soup with chicken broth and pour over the biscuit mix - bake at 350 for about an hour #cheddarbaybiscuits #cheddarbaybiscuitcasserole #chickenpotpie #easycasserole #chickenpotpiecasserole #cheddarbaybiscuitpotpies #dinnerideas #casserolerecipe #easydinner
