For andet år i træk har jeg haft æren af at servere mad til Danmarks smukkeste ultraløb, i.e. @julsoeultra I år blev der skåret, snittet, hakket og tryllet chili sin carne (m. øko-ris og tortillachips) til 380 sultne løbere, som enten havde været på gåtur eller 30/60/100 kms løbetur i Danmarks smukkeste omgivelser omkring Silkeborg/Ry. This add from the Danish Dairy Board. The top text says: "Together for a sustainable path in Europe". Lower white text says: "Milk is for the future and a part of a sustainable diet". Is it just me, or is it only the dairy farmers, dairy companies, dairy boards, dairy lobbyists, dairy etc., etc, who are touting that dairy products are sustainable and good for the environment? How can this even be legal? If objective research time and time again shows that the milk/dairy industry has a much greater environmental impact, uses extremely much more land, and uses way more water than ANY non-dairy milks, then where on earth does the dairy industry, dairy boards and dairy lobbyists get their data suggesting that they are a part of anything even close to being sustainable? Where is the sustainability in the dairy industry? This is the dairy industry trying hard to cash in on the green and sustainable wave. Is something sustainable just because you say it is? Nem eu acreditei quando vi essa primeira foto ontem😱😱 O início da pandemia foi um gatilho pra que eu saísse da minha zona de conforto!! Eu fui treinar da forma que podia (no caso correr, caminhar e fazer barra livre) e voltar pra dieta de emagrecimento... Nisso fui fazendo meu melhor com o que tinha disponível pra treinar e segui focada nesse plano. Na foto do meio foi quando competi no bodybuilding no meio da pandemia! Essa competição me ajudou a focar ainda mais e chegar então no melhor shape que podia no momento. Após isso eu queria muito ganhar mais massa muscular e também ficar com percentual de gordura baixo, pela última foto é possível ver que também bati essa meta! Esses últimos dois anos reforçaram ainda mais a minha confiança sobre o quanto eu sou capaz de me dedicar pra conseguir aquilo que quero em qq condição. Going to be making these bad boys often 😌 just sayin! (I doubled the recipe to fit in a loaf pan) made me 10!! Each one worth 11g protein, 165 calories, 5g fat, 22g carbs! VERY FEW INGREDIENTS!! 🥳🥳🥳 . RECIPE •2 ripe bananas •1/2 cup coco powder •1 full scoop chocolate protein powder •1/4 cup unsweetened apple sauce •1 tsp both vanilla extract and baking powder. *** optional, top with dark chocolate chips*** Preheat oven to 350.Put all ingredients in a food processor, blend up. Line a loaf pan with parchment paper. Place batter evenly into loaf pan and top with chocolate chips!!! Bake for 20 mins! 🙆‍♀️ this is sooooo easy to make when you want healthy whole foods but are feeling laaaaazy!!!! Toss chickpeas (protein) and veggies of choice in some avocado oil with dried, basil, parsley, cumin, smoked paprika, black pepper, garlic and Himalayan pink salt!!! Throw in the oven on 400 until tender, tossing half way through!! Serve over basmati rice and topped with tahini dressing 💚 I’m amazed at how quick the kids gobbled this down!!! Tahini dressing——> 1/2 cup tahini, 1 tbsp each maple syrup, Dijon mustard, lemon juice and minced garlic. Shake of salt. Easy tofu curry 🍛 with a side of vegan naan 🤸‍♀️🤸‍♀️🤸‍♀️🤸‍♀️🤸‍♀️🤸‍♀️🤸‍♀️ Ingredients • 1/2 red onion • 3 carrots • 2 full peppers (yellow, green) • head of broccoli • 3 cloves garlic • 1 tbsp fresh minced basil (dry works too) • 2 tbsp red Thai chili paste • coconut oil •1 tbsp brown sugar •1 tbsp light soy sauce • 1 can coconut milk • shake salt and pepper For the tofu • 1 block firm tofu • 3 tbsp coconut milk • 1 tbsp red Thai chilli paste • 1 tbsp cornstarch • shake salt and pepper **** Chop tofu into cubes. Toss in marinade, let sit for 5-10 mins. After it has sat, fry in coconut oil, tossing often , (roughly 10mins) set aside. In large pot add coconut oil chill paste garlic and basil fry for 2 mins then add all chopped veggies. Coat veggies and fry for another 2 mins. Then add brown sugar soy sauce salt and pepper. Mix everything together turn down heat to medium and cook veggies until tender. 10-20 mins depending on how much crunch you like 🌟 add in coconut milk, bring to a boil. Let simmer for 5 mins. Stir in tofu ❤️❤️ we served over rice and added some vegan naan! Kids ABSOLUTELY love this dinner 🙆‍♀️ takes me around 30 mins start to finish!!! Round 2 for my morning glory muffins 🥲…. First round was devoured by my naughty puppy …. Which led to a midnight run to the vet 🙄 needless to say, these are loved by everyone in our family. INCLUDING THE DOG 🐶🤭🤣 Here’s my disclaimer! If you have a naughty puppy who could possibly eat these muffins when you are out of sight. DONT ADD THE RAISINS! Or keep them out of reach!! (Hershey is ok and thriving) 🤦‍♀️❤️❤️❤️❤️ RECIPE BELOW 👇 •2cup whole wheat flower •3/4 cup brown sugar, packed •1 tablespoon baking powder •2 teaspoons baking soda •2 teaspoons ground cinnamon •1/2 teaspoon ground ginger •3/4 cup unsweetened applesauce •1/2 cup coconut oil, melted •1 apple, peeled and shredded •1 tablespoon vanilla extract •2 cups grated carrot •1/2 cup raisins •1/2 cup flaked coconut •1/2 cup walnuts, chopped **** Preheat oven to 400. Line muffin trey (makes 12) in a large bowl add all dry ingredients. Mix well. Add in melted oil, apple, apple sauce, vanilla. Combine until wet. (Use extra apple sauce if it’s still dry in spots) then fold in everything else. Pop in oven for 10 mins, drop the heat to 350 and leave for another 10-12 minutes!! Ingredients • carrots - shredded • broccoli-steamed • rice - cooked • chickpeas, drained, rinsed, dried then tossed in the oven at 400 (seasoned with a small amount of oil , garlic and smoked paprika) roughly 15 mins • tofu! Extra firm *** directions to Cook below 👏👏👏 • peanut sauce *** below! ***** Directions for peanut sauce and tofu! Preheat oven to 400, cube tofu, add to baking sheet in single layer. Bake 15-20 mins. Remove from oven and place in a bowl. In a blender add 1/3 cup peanut butter, 2 tbsp sesame oil, 2tbsp pure maple syrup, 2tbsp soy sauce (braggs), 2 tbsp lemon juice, 1/4 tsp both minced ginger and garlic. And water to thin. I always add sriracha to it for a little kick! Blend together and thin out sauce with your water. . Pour some sauce over tofu, allow to marinate while you prep the rice, broccoli and chickpeas. PROATS!!!!! Protein oats!!!! Me over here wishing I could consume a bowl this size 😅 🤣 @imrockhard2021 ! My bowl is half this size! His just looked prettier 🥰 super simple! Add your oats, protein powder half non dairy milk half water in a pot! Stir until thickened (like cake batter) then top it with what ever your heart desires!!!! 🙆‍♀️😍 my version of a Greek salad 🥗 . Super simple, tangy and tasty! Non dairy BUT added grains 🥳 You can make an easy tofu feta cheese too but I was in a rush! And with my busy household I love me something quick and easy 😍 maybe I’ll post a vegan feta recipe down the road if anyone is interested 🤔 . This recipe I don’t measure anything. Cook your red quinoa, let it cool. Add in tomato, cucumber, red and yellow pepper, red onion, olives if you want! (I don’t ) lol. Mix together. Add generous amount of red wine vinegar, Greek seasoning and black pepper. You can add some kind of oil too, but I choose to make mine oil free. It’s been nice hitting my home gym again after a long hiatus since shut downs began in early 2020. I had a frozen shoulder (pitcher/swimmer syndrome) but didn’t know the cause of my intense shoulder pain & weakness. I didn’t want to deal with it at the height of the pandemic so I waited for the vaccine’s. It was then I began steps towards diagnosis after X-rays & MRI’s. . Early Spring 2021 I began physical therapy. Early Summer I only had 3 more PT sessions left so I began 3 days in a row of very light workouts to get back in shape for the Summer. . Unfortunately somehow I messed up my back and went through a horrible process of diagnosis & recovery. Verdict was 3 bulging discs, 1 herniated & pressing on my L3 nerve. Pain so intense, persistent & debilitating that at times I wanted to actually die. . Then I was back in PT for my back all Summer into early Fall. My neurosurgeon wanted to do surgery on my spine. I held off and recovered by chiropractics Acupuncture stretching and physical therapy. . 17 home gym sessions out of 27 days of Nov so far. . Averaging 175# and 9.8% bodyfat Getting my 2022 Summer body ready 💪🏾. .

Top with a tahini dressing (mine is lemon, mustard, garlic, sriracha and water to thin) and that’s it!!! Super easy, minimal ingredient,white bean stew 🍲 In a rush ???? this is perfect, flavourful and goes GREAT with a warm crusty bun 🍽 the cold weather is here! Which means it’s soups,stews and chilies season 😌 #proteinpacked . Ingredients •2 cups veggie broth •2 cans white beans (drained) •1 can pinto beans (not drained) •1 red pepper •3 carrots •1/2 onion •1 tbsp minced garlic •shake of chili flakes •1 tbsp each thyme and rosemary •1 tsp smoked paprika •shake of salt and lots of black pepper ***** In a large pot fry, onion,peppers, carrots, garlic in a splash of veggie broth. Roughly 5 minutes. Then add all of your spices. Keep frying veggies for another 10-15. Until almost soft. Adding veggie broth when needed. Blend the can of pinto beans and liquid together while you wait. Then add veggie broth, white beans, pinto beans to pot. Cover and bring to a boil! Reduce heat and simmer until carrots are soft! Fajitas booooowls baby!!!!! Been addicted to these lately! Simple, easy and amazing plant fuel!!! 🙏 . Cook up some rice, or cous cous. Use that as your base. Pop some veggies in the oven at 425 until tender. Lightly tossed in oil and smoked paprika. (I used broccoli, peppers, sweet potato and white potato)! While the veggies cook, pour some black beans in a pot, with a small amount of water, garlic, cumin, chilli powder and onion. Slightly mash as they heat. Allow the flavours to blend. TOPPINGS!!! Who doesn’t like a peanut sauce 😎👏 the recipe for my mango salsa tofu bowl is below 👇 fresh fresh freshhhhhhh 🥭 . RECIPE • 1 block extra firm tofu • 1 tbsp oil • 1 tbsp braggs soy sauce • 1 tbsp corn starch • rice Peanut sauce • 1/2 cup peanut butter • 3 tbsp lime juice • 2 tbsp braggs • 1 tbsp sesame oil • 2 cloves garlic • shake of red pepper flakes Mango salsa • 2 large ripe mango diced • 1 red pepper diced • 1/4 green onions sliced thin • 1/2 jalapeño, deseeded diced • 1/4 fresh cilantro • 2 tbsp lime juice • shake of salt * red cabbage and peanuts for topping!! **** Cook your rice. Preheat oven 400. Press tofu, cut into cubes. Toss in oil and soy sauce followed by cornstarch. Place on baking sheet. Bake for 15-20 mins. Turning twice. ( try to space out tofu so it doesn’t touch) Meanwhile prepare mango salsa. Chop all ingredients and toss in a bowl. Set aside in fridge. Last make the dressing. Half the recipe OR make yourself your own BIG ASS BOWL 💥💥💥💥😌 recipe below 👇 👇👇👇👇👇👇 . RECIPE •full package macaroni pasta •1 yellow pepper •6-8 celery ribs •2 carrots shredded •1/2 small red onion •6 large dill pickles •1/4 fresh dill •1/2 cup vegan mayo •1/4 cup apple cider vinegar •1.5 tbsp Dijon mustard •2 tbsp pickle juice •1 tbsp pure maple syrup •shake of salt and pepper ****** Cook pasta, set aside till cool. Chop the veggies, whisk together the vegan mayo, apple cider vinegar, pickle juice, Dijon mustard, maple syrup and spices. Add everything to the bowl of pasta and mix to combine. 🙌 that simple! Allow a couple hours in the fridge for the flavours to meld!!! 💁‍♀️ boom! Enjoy! Could make it a main dish and add chickpeas or green peas for extra protein! Veganized hamburger helper 🤭 . This one is for all the children in the hooouuuuse!!! Win win winnn !! AND! It didn’t come in a box 🥳🥳 (well….the pasta did) BUT you know what I mean 😜😜😜😜😜 RECIPE 👇👇👇👇👇👇 •noodles of choice •vegan ground round •1/4 red onion •3 cloves garlic •3/4 can coconut milk •1/4 cup veggie broth •1/4 cup nutritional yeast •1 tsp onion powder, smoked paprika •1/2 tsp oregano, black pepper •3 tbsp ketchup •shake of salt **** Cook noodles accordingly until ALMOST tender. While the noodles cook, sauté up the veggie ground round until heated through, remove from heat, in same pan sauté onion and garlic in oil or veggie broth. Sauté until soft. Add in all the spices and nutritional yeast and another splash of veggie broth. Allow the flavours to blend. Add in ketchup, coconut milk, veggie broth and veggie ground round. Mix together, stir in noodles and cook covered until noodles are tender. Stirring often. I had to add a little extra coconut milk near the end so the noodles didn’t stick. #veganized #plantbasedmeals #anythingyoucaneaticaneatvegan 💋

Chickpea masala RECIPE! 👇👇 •1/2 onion •3 cloves garlic •1/2 jalapeño •3 fresh tomato 🍅 •1 can chickpeas (rinsed + drained) •1 small sweet potato •2 small carrots •5 medium red potatoes •1 can coconut milk •1 tbsp tomato paste •1 tbsp curry powder •1 tbsp garam masala •1 tsp turmeric • shake of salt and pepper •veggie broth to cook with- oil free recipe!!! 🎈🎈🎈🎈🎈 ****** In large pot sauté onion garlic and jalapeños in veggie broth until fragrant. Add tomato paste. Sauté one more minute. Add chopped tomatoes and all of the spices. Continue to sauté and add splash of veggie broth to form thick paste. Next add potatoes carrots and chickpeas, coat in spice sauce (adding more liquid if needed) sauté for another 5 minutes then add coconut milk. Let everything simmer covered until potatoes are soft , stirring often. Serve with rice! Garnish with cilantro 🙋‍♀️ . #wholefoodplantbased #wholefoodie #veganmasala
