Happy #muffinmonday! Recently, I finally got around to trying these ‘new’ vegan muffins from whole foods. I say ‘new’ because these are in fact the giant sized muffin from @abesmuffins. Of course, abe’s stuff is great but given it’s also sold at whole foods I’m not sure why the white label is necessary. 1️⃣ or 2️⃣? Which  #recipe would you try?👇 By @Micadeli_ 1️⃣ The BEST cauliflower nuggets I’ve ever made. And I’ve made a few 🙊🌶These cauliflower nuggets are coated in crispy cornflakes and homemade spicy buffalo sauce. 1 cauliflower, 400g. 1 dl. flour 1,5 dl. oat milk (or other plant milk) 2 teaspoons of paprika 100g. cornflakes (not sweetened) 
Chop the cauliflower into bouquets. In a bowl mix flour, milk and paprika. Mash the cornflakes into small pieces in a blender. Dip the cauliflower bouquets in the flour mix + cornflakes afterwards until we’ll coated. Place on a baking tray and bake for 20-25 min. at 200ºC. Buffalo sauce: 
3/4 dl. plant butter, melted 1/2 dl. hot sauce (hot chili sauce or tabasco) 1 teaspoon of apple cider vinegar 1 pinch of garlic/onion powder Mix all the sauce ingredients together and set a side until the cauliflowers are done. Pour on top of the cauliflower or use for dipping. Serve while crispy. 2️⃣ tomato & garlic toast 🍅🧄 toasted on the pan with olive oil until super crunchy, covered with garlic, and then I spread with cream cheese, add the tomatoes, cress, salt, pepper, chilli flakes and lemon juice. my latest go to breakfast or lunch (also very good with avocado on top) 🥰 ps, I use violife cream cheese for this one + basil leaves on top, but parsley or spinach works great too! . .

Palak tofu By @the_clumsy_vegan Ingredients: Tofu: 1 block of firm tofu pressed Arrowroot powder: 2 T Spinach: 5 C Shallots: 2 Tomato: 1/2 Garlic: 2 cloves Ginger: 1 cm Green chilli: 1 Oat cream: 2 T Water: 1/2 C Salt to taste Oil ☘️ Whole spices: Cumin seeds: 1 t Bay leaves: 2 Cloves: 2 Black Cardamom : 1 Powdered spices: Garam masala: 1 t Turmeric: 1 t Coriander powder: 2 t Asafoetida: 1/2 t ☘️ Method: -Cut tofu in cubes, season with salt and pepper, dust with arrowroot and pan fry till crispy -Blanch spinach in boiling water and immerse in ice cold water. -Drain spinach and blend with water, ginger, garlic and chilli into a smooth sauce -Heat oil in a pan and add the listed whole spices -Cook for a minute and add onions. Pumpkin & Feta Salad By @veganbyeden Makes 2 serves ▪️250g Kent pumpkin ▪️300g chickpeas, rinsed & drained ▪️60g leafy greens/salad mix ▪️50g vegan feta cheese ▪️Small drizzle of olive oil + seasoning (see below) Cook the pumpkin & chickpeas in air fryer but you can use your oven at the same temperature. 1️⃣ Peel pumpkin & cut into bite sized cubes. Season with a small drizzle of olive oil and a pinch of salt, pepper and cashew parmesan, 2️⃣ Cook in the air fryer at 200°C for 10 mins, tossing 2 to 3 times. 3️⃣ Rinse & drain chickpeas. Add a pinch of salt, pepper, curry powder, garam masala & I like to add about 1 tbsp of bbq sauce. Toss to coat. 4️⃣ Once pumpkin has cooked for 10 mins, add chickpeas to air fryer. Cook for a further 5 mins. 5️⃣ Assemble salads by adding leafy greens to bowls and top with the cooked pumpkin and chickpeas. Crumble feta on top and enjoy! Vegan monster burger by @veganrecipesvalley Recipe: Ingredients:⠀ Pattys:⠀ 100 g potato⠀ 1 1/2 onions⠀ 1/2 red bell pepper⠀ 2 tsp olive oil⠀ 50 g corn (canned)⠀ 1 tsp curry powder⠀ 1/2 tsp cumin⠀ 50 g oats⠀ salt⠀ pepper⠀ Toppings and Bun:⠀ 2 burger buns⠀ 2 tsp Sriracha mayo (it's vegan :))⠀ 1 tsp vegan cream cheese⠀ 1/2 avocado⠀ 1/2 onion⠀ 1/2 tomato⠀ 50 g red cabbage (pickled)⠀ 2 leafs of lettuce⠀ Step by step:⠀ 1. Chop the potato, onions and bell pepper finely.⠀ 2. Heat 1 teaspoon of olive oil in a pan and fry the chopped ingredients until the potatoes are done.⠀ 3. Add the the potatoes, onion, bell pepper and the remaining ingredients for the patty into a blender and process until smooth.⠀ 4. Form your patties and let them rest in your freezer for around 10-20 minutes.⠀ 5. Meanwhile slice the tomatoes, onion and avocado.⠀ 6. Heat the remaining olive oil in a pan on medium heat and fry the patties from both sides until golden brown.⠀ 7. Toast the burger buns to taste.⠀ 8. Stack your burger from bottom to top starting by schmearing the vegan cream cheese and Sriracha mayo on the burger bun. 𝘽𝘽𝙌 𝙂𝙡𝙖𝙯𝙚𝙙 𝙏𝙤𝙛𝙪 𝙎𝙩𝙚𝙖𝙠 𝘽𝙖𝙤 𝙎𝙡𝙞𝙙𝙚𝙧𝙨 By @alittlepositivityeveryday 𝐓𝐡𝐞 𝐒𝐥𝐢𝐝𝐞𝐫𝐬: ~ Home made bao or store bought (scroll down my feed for the recipe) ~ BBQ glazed tofu steak (see recipe👇) ~ Pickled purple cabbage & onions (see recipe👇) ~ Thinly sliced cucumber, spring onion & chili 𝐓𝐡𝐞 𝐁𝐁𝐐 𝐆𝐥𝐚𝐳𝐞𝐝 𝐓𝐨𝐟𝐮 𝐒𝐭𝐞𝐚𝐤: ~ 450g extra firm tofu ~ 2-3 tbsps corn starch ~ 1 tbsp vegetable oil ~ 1 spring onion, thinly sliced ~ Half thumb of ginger, thinly sliced ~ S & P to taste 𝐓𝐡𝐞 𝐒𝐚𝐮𝐜𝐞: ~ 3 tbsps light soy sauce ~ 2 tbsp mirin ~ 1 tbsp maple syrup ~ 1/2 tbsp tomato paste ~ 1 tsp smoke paprika ~ 1 tsp corn starch ~ 2 tbsp water 𝐓𝐡𝐞 𝐏𝐢𝐜𝐤𝐥𝐞𝐬: ~ Half palm size of purple cabbage, thinly sliced ~ Half of a red onion, thinly sliced ~ 1/2 cup apple cider vinegar ~ 1 cup water ~ 2 tsp salt ~ 1 tsp sugar ~ Few whole coriander seeds, star anise, peppercorns 𝐓𝐡𝐞 𝐌𝐞𝐭𝐡𝐨𝐝: ~ Pre-heat oven to 180 Celsius ~ Pat tofu dry, cut into big chunks and coat with corn starch evenly ~ In a baking tray, place tofu in and drizzle vegetable oil and bake for 20-30 mins until lightly golden ~ While tofu is baking, in a bowl, combine all the ingredients for the sauce ~ Heat up a pan on medium high heat and sauté spring onion and ginger until fragrant ~ Add baked tofu and sauce into the pan, let the sauce simmer and reduce and toss to combine ~ For the pickles, in a bowl, place thinly sliced cabbage and onoins with spices and ina pan, bring the rest of ingredients to boil and simply pour over the veggies (allow cool down) ~ Assemble bao sliders with tofu steak , pickles, thinly sliced cucumber and garnish with spring onion, chilli and sesame seeds. #vegandrinks #thecookingfeed #vegetarianburger #veganrecipe #plantbaseddinner #vegancookings #VeganInspirations #plantbasedmeals #VeganInspiration #plantbaseddesserts #vegetarianrecipe #vegancooking #VeganInspirations #letscookvegan #veganmealideas #vegancook #veganmuffins

Well this is my vegan version and they are one of my favourite creations. They are also one of the easiest things to make. Only 6 ingredients and 3 easy steps. ✔️ You’ll want to save this one Ingredients 1.25 cups of vegan chocolate (about 200g) 1/4 cup peanut butter 1.5 tbsp coconut oil 1.75 cups puffed quinoa 1/2 cup salted peanuts 1/2 cup raisins Optional extra drizzle of chocolate and nuts on the top 1, Put the quinoa on a baking tray and put in the oven at 170C fan for 5-6 mins to lightly toast (don’t skip this step as it makes the bars lovely and crunchy) 2, Melt the chocolate with the nut butter and oil and fully combine, then pour in the quinoa, peanuts and raisins and stir to mix in 3, Spoon the mix into an individual brownie tin and leave to set in the fridge for a couple of hours Keep in a sealed tub in the fridge 2️⃣ These 4 ingredient peanut butter oat cups are no-bake, gluten free and are very simple to make Makes 6 large cups ✅ Save to try Base ingredients 1.25 cup gf oats* 2/3rd cup runny peanut butter 3 tbsp maple or agave syrup Topping 2/3 cup vegan dark chocolate (about 100g) 2 tbsp peanut butter Sprinkle of salt or peanuts, optional *I know some of you prefer to toast your oats in the oven (so if you do they only need about 10 mins) 1, Put all the base ingredients into large bowl and mix thoroughly. Almond Butter Tofu Noodles By @vancouverwithlove Ingredients - Tofu •1 350g pack medium firm tofu •1 tbsp unflavoured oil •1 tbsp Braggs Soy Seasoning (or soy sauce) •1 tbsp apple cider vinegar Almond Butter Sauce •2 tbsp almond butter •1 tbsp apple cider vinegar •2 tsp maple syrup •2 tbsp Braggs Soy Seasoning (or soy sauce) Bowls •2 servings flat rice noodles •1 tsp avocado or other unflavoured oil •3 trumpet mushrooms, thinly sliced •1 small head bok choy, leaves separated •1 medium carrot, thinly sliced •1 green onion, thinly sliced To Serve •Cilantro leaves •Toasted almonds •Lime Instructions Cut tofu into 1-inch cubes, and place on an ovenproof tray. Toss in Braggs/soy sauce, oil and apple cider vinegar. Place under your oven's broiler (grill) for 10 minutes, until cubes are just turning golden. Flip and cook another 10 minutes until cubes are browned. Remove from oven and set aside. While tofu is cooking.... Cook noodles as per instructions. Then rinse, drain and set aside. Spicy Vegan Peanuts Satay Noodles By @foodpassionical Prep time 10 minutes Cook time: 10 minutes 2-3 servings Ingredients: Chilli paste- 10-15 dried chilli, soak in hot water 2 onions 3 cloves garlic Thumb size ginger To cook- 350g any your fav noodles, cook according to the package direction 1 cucumber, thinly sliced 1 tbsp coconut sugar(gula melaka or brown sugar) 1/4 cup unsweetened, no salt peanut butter 1 tbsp crushed peanuts Salt for seasoning 2 tbsp oil for cooking Tamarind water- 20g tamarind paste 200ml and more water as needed (Mix the tamarind paste with the water, discard the seeds and set aside) Method: 1.) Add in all the chilli paste ingredients into a blender, blend into smooth paste and set aside. 2.) Heat oil in a wok, sauté the blended chilli paste for 3 minutes with low heat. 3.) Add in the tamarind water (adjust the water to the thickness of the sauce), stir to mix and cook for 2 minutes. 4.) Add in peanut butter, sugar, salt and crushed peanuts. Mix well till all combine and toss in the cooked noodles until well coated with the peanuts sauce. 5.) Serve with cucumber, pan fried tofu and sprinkle with more crushed peanuts. Creamy sweet potato & lentil soup with roasted chickpeas By @helens_vegan_kitchen Makes 6 large portions Soup ingredients: 1 tbsp oil 2 tsp black mustard seeds 2 tsp cumin seeds 1 onion, roughly chopped 2 garlic cloves, sliced 250g carrots, chopped 350g sweet potatoes, peeled and chopped Pinch of dried chilli flakes 1 tsp salt & lots of black pepper 300g @The.Vegan.Inspiration dried red lentils 1.5 litres of veg stock 200ml oat milk Roasted chickpeas ingredients: 1 x 400g tin of chickpeas, drained and rinsed 1/2 tsp mild chilli powder 1/2 tsp turmeric 1 tsp cumin 1/2 tsp salt 2 tsp maple syrup 2 tsp olive oil 1️⃣ To make the soup, add both seeds to a large pan with the oil and fry for a couple of minutes. Anticipating summer? It’s starting to get warm here in Albuquerque, which has us thinking about the coming months. We’ll definitely give these Chocolate Zucchini Muffins from @nora_cooks_vegan another try. Katharine has a nice neighbor who sometimes leaves vegetables from his garden on their shared fence for her to discover (it’s fantastic— imagine looking out the window and seeing free tomatoes that are in no way suspicious), and she’s hoping he’ll have a plentiful squash crop this year and toss some zucchini her way. These muffins sank a little, and were a bit overdone. This isn’t likely the recipes fault. Altitude messes with rise here, and the color of the chocolate disguised how done these were in the oven. Also, Katharine received a free excerpt of Somewhere Beyond the Sea by TJ Klune from NetGalley in exchange for her fair and unbiased opinion. She enjoyed The House in the Cerulean Sea and is looking forward to the sequel out September 10th (technically still summer). If you enjoyed The House in the Cerulean Sea, you’ll love this one too. This story focuses more on Arthur Parnassus and we’ll get to know more about his past. Linus and the orphans in their care are present as well. If you don’t quite remember all the characters, the first couple chapters do a good job of reacquainting us with everyone. It was fun to get a sneak peak of a few chapters, and we’re eager to see the rest of it. Looking for healthy, EASY TO MAKE bites for breakfast, snacks or on-the-go? We got you covered! We have posted these muffins before but they are too good not to post again 👌 These are a staple in our meal prep and have been for YEARS. Between the two of us, we go through 4 batches EVERY WEEK! Feel free to switch out the fruit... we use whatever is in season or whatever needs to be eaten in the fridge. 160g Oats 32g (2 tablespoons) Nut Butter (we use peanut butter) 48g (or about 1 ½ scoops vanilla protein powder) 280g banana (approx. 2 ½ bananas) 10-15 dark chocolate chips 100g diced apple (approx. 1 apple) OR 100g of whatever fruit you have on hand ½ teaspoon baking powder 1 teaspoon cinnamon Instructions: 1. Preheat oven to 400 degrees. Spray muffin tin with non-stick cooking spray then set aside. 2. Add all ingredients to a bowl and begin mashing with a potato masher. Add small amounts of water as necessary. Once mixture reaches a dough-like consistency, place mixture in muffin tin. 3. Bake for 25ish minutes or until the muffins are lightly browned on the outside and cooked all the way through. Enjoy! Which  #recipe would you try?👇 by @Dr.vegan 1️⃣ Roasted Potato & Garlic Soup Ingredients 1.3 lbs Potatoes about 600g, peeled and diced 5 oz Carrots about 150g, peeled and diced 4 oz Onion chopped, about 110g 4-5 bulbls Garlic bulbs: 4-5 2-3 tbsp ⁠Olive oil: 2-3 tablespoons or about 30-45 ml Salt and pepper to taste 1-2 tbsp ⁠Lemon juice: 1-2 tablespoons 15-30 ml 4 cups Vegetable stock: 4 cups about 1 liter 1 cup Coconut milk 240 ml ⁠Chili oil for serving Instructions ⁠Preheat the Oven: Warm your oven to 400°F (200°C). Prepare the Vegetables: Toss the potatoes, carrots, and whole garlic bulbs (with the tops trimmed off) in olive oil, salt, and pepper. Roast with Foil: Spread the seasoned vegetables on a baking tray. Cover the tray with aluminum foil to ensure even roasting and to prevent the vegetables from getting too brown. Uncover and Continue Roasting: After about 20 minutes, remove the foil and continue roasting for another 10-20 minutes, until the vegetables are tender and have a nice, golden color. Blend the Soup: Allow the vegetables to cool a bit, then squeeze the garlic out of their skins. Blend the veggies with vegetable stock and coconut milk, and simmer. Season to taste. Lemon Juice: Add lemon juice for a zesty flair. Serve: Pour the soup into bowls, top with a swirl of chili oil.

Banana Nut Muffins ( V+GF) These muffins can be made and enjoyed any time of the year and are a snap to make. All you need is a little bit of planning, the riper your bananas the more flavourful your muffins. 1 cup walnuts 1 3/4 cups GF flour I used @bobsredmill 3/4 cup Brown Sugar 1 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1 tsp ground cinnamon 2 flax eggs I used @bobsredmill 1/3 cup vegan butter, melted and cooled 1 1/2 cups ripe mashed bananas 1 tsp vanilla extract Preheat your oven to 350F. Line a 12 cup muffin pan with paper liners. Place the nuts on a baking sheet and bake for about 8 to 10 minutes or until lightly toasted and fragrant. Let cool and then chop coarsely.   In a large bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and chopped nuts.  In a medium-sized bowl, combine the flax eggs, melted butter, mashed bananas, and vanilla extract. Fold the wet ingredients into the dry ingredients just until combined and the batter is thick and chunky. Evenly spoon the batter into the prepared muffin tins. Bake about 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Place on a wire rack to cool. Rainbow Asian Salad By @isha.dalalrana Ingredients 2 cups baby spinach 1 each- red, yellow and green capsicum 2 English cucumbers 1 cup cherry tomatoes 1/2 head purple cabbage 1 head broccoli 100 gm extra firm tofu 3 tbsp sesame seeds (white and black mixed) Handful of fresh herbs: coriander, mint, basil 1 tbsp tamari 1 tbsp maple syrup Sesame oil Coconut Lime Dressing 150 ml coconut milk 1 tbsp ginger paste 2 tbsp tahini 1/2 tbsp maple syrup Juice and zest of 1 lemon 1 tbsp tamari Salt to taste Whisk together all the ingredients with 1/3 cup hot water until nice and smooth. That's all! Method First, slice the tofu into long, thin strips. Mix together the tamari and maple syrup, and coat the tofu evenly. Set aside for 20 mins while you prepare everything else. Finely chop the herbs and set aside. Cut the broccoli into florets and steam it. Chiffonade the purple cabbage, halve the tomatoes and chop the cucumber as you like. Slice the bell pepper into long, thin strips. Dry roast the sesame seeds until they turn a shade darker. In the same pan, heat up some sesame oil and saute the tofu, turning it over to ensure even browning on all sides. On the bed of baby spinach, add all your other elements including the fresh herbs. Toss well, and add a generous helping of dressing. Almond cream & avocado pasta⁣ By @365cleaneats Recipe for 2⁣ ⁣ Ingredients for the sauce (2 cups)⁣ 115g (4 oz) raw almond ⁣ 1/2 cup minced onion (100g)⁣ 1.5 garlic (1 garlic for sauté, 1/2 for adding at step 1 cup (240ml) water⁣ 2 Tbsp. nutritional yeast⁣ Pink salt and olive oil⁣ ⁣ Other⁣ 200g (7 oz) of your choice of pasta⁣ 1/2-1 avocado (sliced)⁣ 1/2-1 cup basil leaves ⁣ lemon wedges for serving⁣ Harissa oil (optional)⁣ ⁣ Method:⁣ ⁣ 1. Blanch almonds. Place almonds into boiling water and boil for a minute. Drain in a strainer. Rinse with cold water. Squeeze the almonds with your fingers. The skin will come off easily. Discard the skin and soak the almonds overnight. ⁣ 2. In a saucepan, sauté onion and 1 sliced garlic with 1 Tbsp. olive oil for a few minutes. Add 1/2 tsp salt and continue to sauté until they become tender. ⁣ 3. In a high speed blender, put the sautéed onion & garlic, 1/2 garlic, 1 cup water, almonds, nutritious yeast, 1/2 tsp salt, and 2 Tbsp. olive oil. Blend well.⁣ 4. Pour the mixture into the same saucepan and warm it up. ⁣ 5. Mix 1 cup of the sauce with boiled pasta and add more according to your preference. Add black pepper and salt to taste. Assemble with avocado and fresh basil leaves. Happy #muffinmonday! I have just come back from South Africa, but sadly did not find any vegan muffins while I was there. Fortunately, I still have a few up my sleeve from previous excursions. Today’s were actually made for me by mom ❤️. She was recreating a variety from Rubicon Bakery that I haven’t yet found. They call it banana cocoa crumble muffins. Shredded Tofu Salad By @isha.dalalrana 1 each- small green and yellow zucchini 1 carrot 1 large cucumber 1 cup baby spinach 1 cup mixed greens 1 stalk celery, with leaves 80-100 gm tofu 1/3 cup moong sprouts (optional) Handful of fresh mint leaves Handful of fresh basil leaves Sesame oil For the dressing 2 tbsp shiro miso paste 2 tbsp tahini 2 tbsp sesame oil 1 tbsp apple cider vinegar 1 tbsp maple syrup Salt to taste Combine all the ingredients with 1/2 cup of hot water and stir quickly to make sure it is well combined. You can add more water depending on the consistency you prefer. Finely chop the zucchini and quickly saute in a pan with some sesame oil. Set aside. Finely chop the cucumber and celery to the same size, and grate the carrots using a larger size grater. Tear up the mint and basil leaves a bit with your hands. On your bed of greens, add all your other elements and generously pour the dressing. ✨RAINBOW TOFU FRIED RICE ✨ By @clairebear_bites INGREDIENTS- • 1 package Tofu Firm • 2 tbsp oil • garlic • 3 cups cooked rice • 1 can corn (drained) • 1/2 red bell pepper (diced) • 1 1/2 carrots (peeled, diced) • 1 cup purple cabbage (shredded) • 1 cup edamame (steamed, shelled) • 2 green onions, sliced for garnish • 3 tbs nutritional yeast SAUCE- • 1 tsp sesame oil • 2 tbs coconut aminos • 1 tsp sriracha TO MAKE - • First open and cube your package of tofu. • Add to an airfryer, drizzle with avocado oil and cook at 400F until brown and crispy. • To a warm skillet, add oil, garlic, bell pepper, carrot, and cabbage. Stir fry until garlic is fragrant. Just a few minutes. • Add your rice, corn, and edamame. • Combine all your sauce ingredients into a bowl and mix to combine. • Add sauce into your pan along with the nutritional yeast. • Stir for another few minutes until warmed through. • Add cooked tofu. Toss. Colombian-style Coconut Rice! 🥥 By @livinlaveganlife Meat of 1 coconut⁣ 2 cups of water⁣ 2 tbs of brown sugar ⁣ 1/4 tsp of garlic powder ⁣ 1/4 tsp of onion powder ⁣ 1 cup of rice⁣ 1/4 tsp of salt ⁣ 1 handful of raisins ⁣ ⁣ ⁣ 1. In a blender, blend coconut meat with water. ⁣ 2. Strain the blended coconut milk and save 1/2 cup of the coconut left behind ⁣ 3. In a pot, add and combine your homemade coconut milk, the coconut left behind, rice, brown sugar, garlic, and onion powder, and salt. Cook rice until ready. ⁣ 4. When rice is ready, add raisins and mix them in gently. ⁣ 5. Vegan blueberry protein muffins to share today! They are delicious with the crumble Inadded to the top this time. This recipe is normally made in a Bundt pan but I wanted them to be muffins to share and they cook much faster as muffins than it goes as a bigger cake. A dear sister in our parish shared this recipe with me four years ago after we converted and we have loved it ever since she brought it that day to coffee hour! Laksa Noodle Soup 🍜 By @happyskinkitchen Serve 4-5 people Ingredients: For the paste: 4 shallots - peeled and chopped into quarters 4 garlic cloves 2 lemon grass stalks - remove the hard outer layer 3 fresh red chilli A thumb size piece of ginger - chopped 1 tbsp of melted coconut oil For the rest of the curry: 1 tsp of turmeric 1 tsp of ground coriander 1 tsp of ground cumin 800ml of veggie stock 1 can of coconut milk The juice of 1/2 lime 1 tsp of coconut sugar Serve with: Rice noodles Steamed greens Some preseason tofu or tempeh Some chopped coriander and spring onion Method Add all the ingredients for the paste to a food processor and blitz until smooth. Transfer to a large pan. Fry for 8-10 minutes on a medium heat. Add in the turmeric, ground coriander and ground cumin and stir to combine. Add in the veggie stock and bring it to a boil. Turn down to a simmer and cook for 20-25 minutes. In the meantime cook your noodles and steam your veggies. Add the coconut milk to the broth and your choice of tofu, stir and cook for few more minutes.
