A little week catch upā¦ I did fail my 60-day of strictly tracking but honestly Iāve been so okay with it. My boyfriend and I decided yesterday that we needed a day to just go out on a date & indulge on whatever we wanted because we both hadnāt in so long. It was a mental refresher and was so fun for the both of us. We had pizza & wings which we absolutely love ā¤ļø We both had no problem jumping right back into it today. I used to have this underlying guilt when it came to having a day off of tracking and eating intuitively or whatever I wanted but now itās like okay we did it and itās totally fine just hop right back into it because you and I both know that if you have goals, well we gotta stick to our nutrition and thatās just something that you cannot change. What we can change is the way that we look at it which I feel like has been a work in progress for me āØ Hereās to another week, remember that fitness is a lifestyle and there also comes a time when balance is needed to keep you SANE š¦ Ps. Iām going to brag on myself even though I usually donāt! 99% of the other times, Iāll brag about others and their wins! When I lost my weight back in 2020, I got down to 173 lbs. Yes, I was thin but I was worried about my muscle mass. Lean muscle was pretty good but I wanted more šŖ. I started hitting the gym in 2021, a year after maintaining my weight and my long term goals was to weigh in at 200 lbs of muscle and NOT added fat in the waist areaā¼ļø Well today, I stepped on the scale and guess what? Iām at 200 lbs and feel incredible š. Hereās the thing, it took me 3ļøā£ years to hit this goal š³. I never stopped, I made mistakes but kept going. Consistency always wins in the long run. I never once took any sort of performing enhancers. I just ate food and worked out! Majority of my meals (90%) were on point and 10% were whatever I wanted. This gave me the mental sustainability to continue. Point of this post is to not give up so fast. Anything big you want takes time to build but wonāt build if you stop š. Enjoy the process and donāt worry about what others say. Itās your goals, not theirs. You are worth every bit of what you want to accomplish. Packed with vitamins and nutrients and a range of veggies, this recipe is both healthy and delicious!ā ā Bowl Ingredientsā * 3 Carrots, ribbonedā * 1 Cucumber cubedā * 2 cups shredded Red Cabbageā * 2 cups Edamameā * 1 cup of Broccoli heads, steamedā * 1 cup of Rice cooked according to directionsā * 3 medium beets, peeled and cubedā ā Marinade Ingredientsā * 1 tbsp Soy Sauceā * 1 tbsp Sesame Oilā * 1 tbsp Rice Wine Vinegarā * 1 tbsp grated Ginger ā * 2 tsp Maple Syrup ā * Zest and juice of 1 Limeā ā Dressing Ingredientsā * ā cup Extra Virgin Olive Oilā * ā cup Rice Vinegarā * 2 large Carrots, peeled and roughly chopped (about ā cup)ā * 2 tablespoons peeled and roughly chopped fresh Gingerā * 2 tablespoons Lime juiceā * 1 tablespoon plus 1 teaspoon Honeyā * 1 Ā½ teaspoons toasted Sesame Oilā * Ā¼ teaspoon Salt, more to tasteā * Optional Garnish: sesame seeds, cilantro and chopped green onions.ā ā Directionsā STEP 1 - Place your cubed beets in a medium sized pot, cover with water and bring them to a boil.ā STEP 2 - Once they have begun to boil, lower the temperature to a simmer. You will know when your beets are cooked if you can insert a fork easily into them, which should take about 20-30 minutes depending on size.ā STEP 3 - In a small bowl mix together all marinade ingredients and add in your cooked beets.
