She always attracted my eye with her appetizing appearance, and I loved okroshka much more than ordinary soups. Now I cook this summer soup for my children, and they eat it with pleasure. I offer a recipe for cooking with water - it turns out delicious! Ingredients: 🥔 400g Potato 🥚 4 Eggs 🌭 200g Sausage (cervelat) 🥒 200g Cucumbers 🧅 20g Green onions 🌿 10g Dill 🥛 350g Sour cream (20% fat) 🧂 Salt, to taste 🍋 Lemon acid, to taste 💧 1.5l Water Instructions: Boil the potatoes in their skins, peel them, and cut them into small cubes. Monday morning back on track summer soup 🥣 Ground beef 12 oz or visually 2 big cups, ground Italian sausage 1.5 cup fulls, for a little kick of great flavor chopped onions, chicken broth 4 cups, 1 cup of your favorite marinara and cabbage. I usually use 3/4 a head but my Mr got me to bags of pre chopped cabbage more meant for salads so I just used two bags. Green cabbage, red cabbage, kale and carrots. Crushed red pepper flakes, pink himalayan salt and crushed fresh pepper ….. simmer and serve It’s a wonderful healthy flavorful soup year around I make it thicker in the winter and more of a soup in the summer. Great low cal full of flavor meal. The weather is getting nicer but it’s still a bit chilly! This savoury rich sun-dried tomato soup topped with the best crunchy homemade pita chips is perfect for these days. INGREDIENTS Sun-Dried Tomatoes Soup 300 g tomatoes chopped 100 g sun-dried tomatoes chopped 1 large white onion diced 2 garlic cloves minced 3 carrots diced 500 ml vegetable stock 2 tbsp olive oil salt & pepper Pita Chips 4 pita breads 60 ml olive oil 1 tsp oregano 1 tsp garlic powder 1/2 tsp sweet paprika 1/2 tsp salt 1/4 tsp black pepper INSTRUCTIONS Pita Chips Cut the pita bread into small pieces, triangles or squares. Drizzle with olive oil, and add your favourite herbs and spices, while seasoning to taste. Bake in the oven (200°C/390°F) or airfryer (180°C/360°F) until slightly browned and crispy. The cooking time might vary depending on how thick the pita bread is, however they should take around 5 to 10 minutes, turning half way through. Sun-Dried Tomato Soup In a large pot on medium heat, add the olive oil and fry the onion until softened. Add the garlic and cook for about 5 minutes. Add the carrots, tomatoes and sun-dried tomatoes. Let cook for a few minutes. To the pot, add the vegetable stock, and bring the soup to a boil. Once it’s boiling, lower the temperature and let it simmer while covering the pot with a lid for about 30 minutes. Blend everything, either with an immersion blender or a normal one, until everything is nice, smooth and velvety. Season the soup to your liking. MAPES MAKES: green sewp or spring minestrone🥦 The sun is out my friends, which means it’s basically spring. The greenz have been sprung, so it’s time to muck into some fresh flavours to make you feel all puck-like and spritely. 🥦courgette 🥦asparagus 🥦tenderstem 🥦tatties 🥦pesto 🥦Parmesan MAPES METHOD: Slice those courgettes thinly and then add into a hot pan with oil to give a lil colour. Peel your pots and dice. Add into pot. Chop your broc up (I do into three parts per stem so it cooks quicker), and throw in. Same method for asparagus - but do not throw in!! (Asparagus cooks rlly quick and it’s expensive so u wanna be able to taste and savour the flavourrr). Add in a pouch of chicken stock. Bring to bowl and let it cook, lid on, for about 10 mins or till veggies are cooked. Pour all liquid and about half the veg into a blender along with a good glug oat milk/cream if ur feeling particularly sumptuous. Leave the other half of veg in the pan for those chunkers. If u wanna smooth soup (then it’s not minestrone), but there are no rules in the world of the kitchen. Simply blend all the veggies, along with the stock and milk/cream. Whatever floats ur soupy boat. Add back into the pan, cook on med to reduce a little. Salt, grate in Parmesan and stir in some butter. Dollop pesto on top if u got some. Watermelon gazpacho with crayfish. I love chilled soups in the balmy months and I used to make this when we lived in Perth and the summers could be unbearably hot. I think I’ve been dreaming of eating this again for the last two NZ summers but last year was a bit of a non event and watermelons were stupidly expensive to buy. This year my garden has finally produced some big ripe tomatoes and cucumbers. Instead of the plump Aussie prawns I’d add in WA, I’ve used beautiful sweet local crayfish. Finished with crunchy sourdough croutons, crispy prosciutto and fried Karengo seaweed this is a refreshingly light but satisfying dish. Enjoy it now before autumn kicks into gear! Start this recipe the day before so the flavours can really develop. 100g (about 3 slices) of day old sourdough crust removed + extra for croutons 900g sun ripened tomatoes 700g ripe watermelon 250g (1 medium) Lebanese cucumber 1 small red onion 1/2 clove garlic crushed 2 tbsp red wine vinegar 1/3 cup olive oil Salt and freshly ground black pepper Roughly chop above ingredients and place in a large bowl with the sourdough at the bottom. Allow to sit for about 1/2 an hour so the bread soaks up a bit of juice. Place all in a blender and process until smooth. Pass through a coarse sieve, season to taste and chill overnight. Cook whole crayfish in a large pot of rapidly boiling salted water. (8 mins for a bang on legal sized cray) Plunge into chilled water and then refrigerate overnight. Bake slices of prosciutto at 180°C until crisp, around 10 minutes. Set aside. Fry chunks of sourdough in canola oil until golden, drain on paper towels. In the same hot oil quickly fry dried Karengo until crispy. Happiness Soup from Nigella Summer by @nigellalawson is my sneaky last-minute addition to my February #onebookthreerecipes and #forgotttenrecipescookbookclub postings! Although we are, as of today, officially into Autumn here, I needed to share this bowl of unadulterated golden summer joy with you all! I harvested my one lonely homegrown yellow zucchini (too humid this year, I guess?🤷‍♀️) and halved the recipe to make a sunshiney supper for two. Turmeric-flavoured chicken broth thickened with fragrant basmati rice and dotted with little cubes (and a few coins) of my yellow zucchini, all made fresh with zingy lemon zest, is as easy as it is delicious, guaranteed to put a smile on your dial! Pappa al Pomodoro (Tomato and Bread Soup) from Cucina Povera by @julskitchen This weekend we celebrated the “Leftovers” chapter of Cucina Povera with a party hosted by @rainydaybites and #rainydaybitescookbookclub . I chose this recipe because it is summer here and tomatoes are in peak condition! This Tuscan classic varies according to the town and the season, but I followed Giulia’s recipe without further additions. I confess I used regular store bought stale pane di casa bread instead of her homemade salt-free Tuscan bread recipe (one day, I promise!). Roma tomatoes are peeled after blanching in boiling water, squeezed by hand, then added to a frypan with garlic and chilli flakes which were quickly fried in olive oil. The crushed tomatoes are added and left to collapse into the oil for around 15 minutes. Meanwhile, the stale bread is soaked in water, then squeezed dry and crumbled into the tomatoes. Water and tomato paste is then added. The mixture is whisked “vigorously” to create a thick and super creamy soup. Torn fresh basil from my garden and lovely local green olive oil are stirred through and the soup is left to infuse for an hour before serving at room temperature. Spiced Pink Soup from the “Soups” chapter of Nigella Summer by @nigellalawson would make the perfect Valentine’s Day summer meal starter!💖🌹💘 This gorgeously Barbie-pink-hued chilled soup is made so easily with only a handful of ingredients: cooked beetroot, warm chicken or veggie stock, lime juice, cumin, coriander, salt, and pepper (all blitzed seamlessly in my Thermomix). Sour cream is mixed in just before serving. The surprise trick was the addition of spring onion, sliced in half lengthwise, and popped into the warm soup and left to slowly infuse as the soup cooled, then removed before serving. It added a little oniony zing without being overpowering- something I will try in other dishes! I made a couple of variations. Rather than turning on the oven to roast beetroots in our 30+°C heat, I bought a vacuum packet of ready-to-eat cooked and peeled baby beetroots and jumped straight to the blitzing step!🤩 Also I thought I had some plain chicken stock in the freezer, but discovered it was flavoured heavily with Asian aromatics and brown in colour from the soy sauce - not so pretty!😆 Fortunately Nigella gives you permission to use bought stock and hums… “Summertime, and the cooking is easy..”!🎶 Thank you!☺️ A beautiful, earthy soup which really works well as a light summer entrée.
