Hello Winter. Launching today, my new Utah Ski collection shot from a helicopter this winter. Preparing for a shoot like this takes planning and a lot of layers! We nearly had to cancel due to the weather but thankfully it cleared enough for us to get out. Almost exactly a year ago I completed my first half marathon at this same course. To come back to where this passion of running started and complete a 30 mile race feeling strong and pain free was a pretty surreal feeling. Happy Sunday Everyone!😎 . This amazing view is just 2.5 miles (5 miles roundtrip) to Snow Canyon Overlook (not to be confused with the beautiful Snow Canyon Scenic Overlook). Winter came back a little, so colder than usual but warmed up to comfortable temps. Despite the colder weather, the flowers were blooming and this trail smelled lovely, despite making me sneeze.🤧😂 . Most hikers just go to the overlook but this trail continues on with amazing views and a lot of sand.😂 It eventually comes to a wilderness area that I wouldn’t venture into without good navigating skills and a physical or offline map and backup battery. I’ve done this trail all the way through before but today just explored a little of the wilderness area with a friend and turned back. This rainy Spring week had me thinking soup! So I decided to make Zuppa Toscana with a Chase spin on it!! I put on the 👨🍳 hat and got to work! I give you the Creamy Jalapeno Zuppa Toscana!!🍲 1 pound Italian ground sausage 1 Salsa Queen Creamy Jalapeno 4 tablespoons butter ½ yellow onion 1 tablespoon minced garlic 6 cups chicken broth 2 cups water 5 yellow potatoes - cut into 1-inch pieces 2 cups heavy cream 4 cups chopped kale Salt to taste 🥓 on top You'll forget about Olive Garden's version after this!! ⬇️⬇️⬇️ Where? Online @salsa.queen In a large pot sauté sausage 5-6 minutes until browned. Use a slotted spoon to transfer sausage to a plate and set aside. In the same pot, add butter and saute onions over medium heat until translucent. Add garlic and saute for another minute until fragrant. Add chicken broth, water, potatoes, salt, and pepper and bring to a boil. Boil until potatoes are tender. Stir in kale, creamy jalapeno, and heavy cream. Add sausage. Notes from the road: Departing Bryce Canyon, our journey led us towards Capitol Reef National Park. En route, we took a leisurely pace, pausing frequently to absorb the breathtaking vistas reminiscent of a landscape that sometimes resembles mars. Of course I had to bring Kenzie to Kiva Coffeehouse. This stretch of road epitomizes the unparalleled beauty of our country. Arriving at CRNP just in time for sunset, we secured a serene campsite beyond its borders. The following day, we eagerly stood in line as the second patrons at Gifford Homestead, eager to indulge in their renowned homemade pies. Amidst the tranquil morning, we ate freshly baked cinnamon rolls, while I read under ancient cottonwood trees Kenzie had a serene yoga session amidst grazing mule deer. With hearts and bellies full, our journey resumed towards the Moab. Another big week of training in the books, running 72 miles total. We are just 20 days away from the @ogdenmarathon and I am really excited! . This last week I finally broke out my Saucony Endorphin Pro Elite's as I had a workout where I mimic race day as much as possible. My goal was to run 12 miles and average somewhere between 6:20 and 6:30 pace. I knew there was going to be some variables due to the uneven terrain I was running. While I gave it my best effort, it wasn't quite what I was looking for, as I averaged a 6:36 pace for my 12 miles. I'm hoping with some rested legs and the race day atmosphere, the stars will align and we'll get a new PR in the half marathon. . Saturday we had our Ogden Marathon Running Club group run. Since I had already done my long run for the week, I was able to relax and enjoy some easy miles with friends. I always enjoy my time running with friends and making new friends as well. The scenery on the Ogden River Parkway was on point too! It was so green and lovely! . Next week my mileage drops back into the high 50 mile range. This is probably a good thing for me as I'm dealing with a little bit of a sore right knee. “Sunrise Symphony” – Bryce Canyon National Park, Utah, USA (Swipe left to see larger panorama) There’s a certain sense of awe you feel when gazing over an amphitheater filled with hundreds of pinnacles. These geological curiosities, interestingly called hoodoos, are formed when relatively hard rock protects a column of softer rock below it from weathering and erosion. When the first light of sunrise reflects within the amphitheater, the red, orange, and white colors appear to glow from within, creating an unforgettable spectacle. Many people consider Bryce Canyon more beautiful than the Grand Canyon. I made this 150 megapixel panorama by seamlessly stitching together multiple photos captured in succession.
