Metabolic syndrome is often called the silent epidemic because it can go unnoticed until serious health issues arise. It’s diagnosed when you have at least three of the following risk factors: a large waistline indicating abdominal obesity, high triglyceride levels, low HDL cholesterol, high blood pressure, and high fasting blood sugar. At the core of metabolic syndrome is insulin resistance. This condition occurs when your body’s cells don’t respond effectively to insulin, a hormone that regulates blood sugar. Over time, insulin resistance can lead to type 2 diabetes and is closely associated with an increased risk of cardiovascular diseases. Moreover, insulin resistance and metabolic syndrome are closely linked to mitochondrial dysfunction, which is a significant factor in the development and progression of many cancers. Mitochondrial dysfunction affects the energy production pathways of cells, leading to the Warburg effect, where cancer cells preferentially use glycolysis over oxidative phosphorylation, even in the presence of oxygen. This metabolic reprogramming supports the rapid proliferation of cancer cells and is associated with the progression of the disease. In full summer mode here… It was definitely grill weather, and a nice slab of Swordfish just seemed the perfect candidate for a leading role in that production. Swordfish is easily my favorite grilling fish. It cooks just like its “turf” counterpart with no worries about it being overly precious when facing the flames. Pre-grill it received a simple EVOO and S&P seasoning. The grill did its bit, and on the plate some Shallot, Thyme, and Sea Salt Compound Butter melted in. On the side are grilled Veggies which I did not represent very well here. No stovetop, easy clean up, and knock-out, healthy eats. Makes 4 servings Per serving: 1 Lean 3 Greens 2 Condiments Ingredients: 1 lb 90% lean ground beef 2 cups sliced mushrooms ½ tsp salt, divided ½ tsp ground black pepper, divided 4 oz reduced-fat shredded cheddar cheese ¼ cup white vinegar ¼ cup water 1 cup thinly sliced cucumber 1 beefsteak tomato, sliced into 4, ¼" thick rounds) 8 large lettuce leaves 4 tsp Dijon mustard (optional) Directions : 1. Pre-heat oven to 400⁰F. 2. Line sheet pan w/parchment paper or foil. Spray w/non-stick spray. 3. Divide beef into 4, 4 oz portions & shape each portion into ¼" thick patties. Season with a ¼ tsp salt & pepper. Place patties on the sheet pan & set aside. 4. Spread mushrooms in a separate section from patties. Spray top of mushrooms w/non-stick spray & season with ¼ tsp salt & pepper. 5. Place on oven for 5 min. 6. Remove mushrooms & set aside. Continue to cook patties ~3min, remove, then switch the oven to broil. 7. Add 1 oz cheese on each patty & return to the oven to melt. 8. To make pickles, bring vinegar, water, & ¼ tsp salt to a boil. Pour mixture over cucumbers & set aside. 9. For one serving, spread 1 tsp mustard on 1 leaf of lettuce & top with 1 burger patty, ¼ of the mushrooms, 1 slice of tomato, 4 slices of pickles, & another leaf of lettuce. I picked some fresh haddock today and was looking for a change from our usual pan-fried fish. Found a recipe for Sorrento Fish in @mariaemmerich Protein Sparing Modified Fast cookbook and tried it out. I had mine over konjac noodles with a salad in the side. If I’m being completely honest, I think I prefer pan-fried haddock, but this was very good. I think it might be better with a fish with more flavour, perhaps salmon or cod. Garlic Mashed Cauliflower 😍 Recipe 👇 Ingredients: 🥦 1 head cauliflower, cut into florets 🧄 4 cloves garlic, minced 🧂 1/2 teaspoon salt 🌿 1/4 teaspoon black pepper 🧈 2 tablespoons butter 🥛 1/4 cup heavy cream 🌱 Optional: Chives or parsley for garnish Directions: 1️⃣ Steam the cauliflower in a steaming basket over boiling water until very tender, about 10-15 minutes. 2️⃣ Combine steamed cauliflower, minced garlic, salt, and pepper in a food processor.
