🥣 Homemade sugar free granola In an effort to make healthier choices I don’t buy breakfast cereals anymore (except the occasional Weetabix), but I do make my own granola. 🥄 I make a no sugar version using leftover aquafaba (the water from tinned chickpeas) and flaxseed to stick the oats together but you could add a bit of honey or use apple juice instead if you wanted some sweetness. We tend to eat it with fresh fruit and Greek yoghurt to add sweetness. 🥚 Or if you have a leftover egg white from another recipe you can whisk that up until frothy and add it too for bigger chunks. Easy peasy instructions: * Add 1 tbsp golden flaxseeds to 3tbsp water in a bowl and leave to sit for 10mins. * Add in the water from 1 tin of chickpeas. * Stir in about 300g of oats and any other additions* until they become damp * Spread out on baking trays and bake in 160c fan oven for 30-35mins, turning the oats over halfway through. Had this sunny bowl of granola today to chase away the monday blues! My homemade granola is the best, plus it's great for pantry clearances. Just use 2 cups of rolled oats, 2 cups of any nuts you have, 1/2 cup of sunflower seeds and 1/4 cup each of flax seeds and chia seeds. Add 2 tbs of neutral oil and honey/maple syrup to taste.
