Day 12 of my 14 day photo food diary, with my sights set on becoming a @slimmingworld target member once again. I am 6lbs away, and so realistically, I may well have to extend my diary to 21 days of entries 😂 #sorrynotsorry My pre-leafleting brecky consisted of two Weetabix with a chopped up Pink Lady apple, honey, and cinnamon. For lunch, I enjoyed a chicken salad, with San Marzano tomatoes, baby cucumber, the last portion of my low syn coleslaw, and Butterhead lettuce. *Need to make more coleslaw asap! 😋 Dinner was a slam dunk, what’s-in-the-whoopsie-cabinet surprise, of sea bass, with green beans and wholewheat noodles. I seasoned the fish with Schwartz Moroccan seasoning, and added salt and pepper. It was very tasty, and bagging the bargain bass itself, might possibly have made my day. #itsthelittlethings The countdown is on! Day 9 - trying to maintain my #foodoptimising cool, as we head into the weekend 🤞 Good ol’ porridge for brecky, made with a measured amount of plain oats and semi skimmed milk, topped with strawberries, blueberries, honey (also measured), and cinnamon. A lovely big salad for lunch, with smoked salmon, boiled eggs, Butterhead lettuce, baby cucumber, San Marzano tomatoes, radish, spring onion, fresh parsley, and a drizzle of balsamic. I feel that salad season has dawned on me, only over the past couple of days? I may have forgotten how yummylicious salads can actually be? I need to stock up on my salad drawer essentials asap! 👏 For dinner, I made chicken with Korean BBQ rice and veggies. I pan fried red onion, green beans, cabbage, and fresh garlic, with a pouch of Uncle Ben’s Korean BBQ rice. I seasoned with soy sauce and pepper, and then stirred in shredded chicken breast. This is my first time trying this particular rice pouch, and I will be re-buying! Day 8 (weigh day) 🎉 Super pleased to lose 3lbs, and I am feeling focused and ready for another planned out week of #foodoptimising. Looking forward to making some more swaps and changes, so that I can guarantee myself another good weight loss next week 🙏 On returning home from my group meeting this morning, I enjoyed my go-to weekday brecky of Weetabix with berries, honey, and cinnamon. For leafleting energy, I made a yummy chicken salad, with one of the Iceland plain chicken skewers. This was my first time trying the plain ones, and I think they’re fab! I cooked two, but only ended up needing one, so I had the second one, sprinkled with salt and garlic pepper, for a post-leafleting snack when I got home. My salad also contained: lamb’s lettuce, baby cucumber, radish, San Marzano tomatoes (wow, tasty!), and a warm boiled egg. If only I could have then anointed this colourful creation with a full tablespoon of low fat Caesar dressing, but alas, there was not quite a tablespoon remaining in the jar 😂 For tea, I baked salmon with ras el hanout, and roasted courgette discs, seasoned with salt and garlic pepper. Day 7 - one more sleep! 🙌 I am soooo hoping and praying that my hard work ie. all the food optimised swaps and changes I’ve made this week, pays off for me at my weigh-in, on the morrow! 🤞 Brecky was my usual yummy go-to of two Weetabix with berries, honey, and cinnamon. For lunch, I enjoyed a pack of low fat chicken and herb super noodles, with a tomato salad. I stirred a Laughing Cow triangle through the noodles - what an absolute game changer that was! That lunch is actually being added to my list of quick lunches, it was that good! 😜 Cheesy pasta for tea, with roasted mushrooms and shredded chicken breast. Day 6 - the tension is starting to build now! 😜 I’m actually really enjoying being back on plan. I’m enjoying the control that food optimising gives me, and I’m enjoying all the positive mental and physical effects of eating healthily. A banana and a hifi bar was a quick grab and go this morning, nicely fuelling my leafleting escapades with Tracy. Said leafleting escapades culminated in a very agreeable jacket potato with beans at the local caf. On returning from group this evening, I made a shawarma scramble with the remaining half pack of Vivera shawarma kebab, from lunch yesterday. I threw in chopped green beans, garlic pepper and salt, as well as a Laughing Cow triangle, and lots of fresh parsley. Day 5 - feels like I’m on the home straight, now that Monday has a been ticked off 🥰 Monday is a group day, and my aim was to allow myself enough time to prepare and eat lunch, as I’ve previously found myself leaving it too late, and then picking up items from a shop on my way to group, which aren’t always syn free. I chopped a courgette into half moons, mushrooms and garlic too, and pan fried all this with half a pack of plant based Vivera shawarma kebab (so delish!), adding a small handful of fresh parsley and spring onion to finish. It was a very tasty meal, and I’m looking forward to enjoying the remaining shawarma for lunch tomorrow - a scrambled egg concoction should be very satisfying indeed. I fancied a hot brecky this morning, so I made myself porridge with berries, using a Moma peanut butter and maple syrup porridge sachet. I added honey too - always! Love being able to enjoy a healthy and filling breakfast, with lots of sweetness. My tea time is obviously later on group days, and previously I’ve come home without a plan, or without a quick go-to, which has led me to spending more syns than I would’ve liked. I had a portion of couscous leftover from lunch yesterday, so I heated that up, with chopped yellow pepper, two trimmed rashers of smoked bacon, and a pre-cooked chicken breast. Day 4 😁 I went food shopping today (so did everyone else? 😂), and stocked up on essential Free foods which will guarantee me a good weight loss come Thursday morning 🤞 Weetabix with Pink Lady apple, honey and cinnamon, fuelled my trip to the shops, and on my return, I whipped up a zesty couscous salad with roast beef for a late lunch. I added some Boullion (stock powder) into the dried couscous, before adding boiling water. When it had all soaked in, I stirred through garlic pepper and lemon juice. I have a portion of couscous leftover for tomorrow’s lunch, and also a portion of the cheesy onion baby potatoes that I made for my Caesar-ish salad this evening. I halved grapes and scattered them on top of salad leaves, sitting warm potatoes on top, and then adding warm shredded chicken breast, and a measured drizzle of low fat Caesar dressing. Yummy! I haven’t done any exercise which raises my heart rate, for ages, and I am almost possibly feeling like re-introducing myself to a body magic routine (home workouts). I really do enjoy the effects on my mental health, and it helps me stick to plan also. Day 3 / 14, en route #backtotarget 😄 I finished the pineapple 🍍…on my yummy porridge for breakfast, and then later this afternoon, I wrapped it with ham, for a tasty, syn free snack. For lunch, I sautéed vine tomatoes and the leftover baby potatoes from yesterday, then scrambled a couple of eggs with a Laughing cow triangle, garlic pepper, salt, and sliced spring onion. I layered some smoked salmon on my plate too. The flavours were delish, and I will most definitely be making cheesy onion scrambled eggs again. I made a syn free fakeaway for tea - baking salmon, red onion, and water chestnuts, seasoned with oyster sauce, garlic pepper and salt, served on top of wholewheat noodles, which I cooked in vegetable stock. Today, the line on my own personal Slimming World journey, has been drawn. I am hereby committing to a week of doing my very best to stick to plan, after a not-so-surprising 3lb gain on the scales at my weigh-in this morning. This gain places me 9lbs out of my target range. I’m aiming to get back to my goal weight, over the next two weeks. Day 1 consisted of a low syn sushi pack for breakfast, one of Sheila’s delicious #slimmingworldfriendly cheese and onion “pasties”, with salad, for lunch, strawbs for an afternoon snack, and chicken with baby courgettes, noodles, and Mayflower curry sauce, for my tea. “Cheesy minestrone soup” has been mentioned with much zeal, many times at the group I covered today, so I’m planning to buy the ingredients for that tomorrow. I also quite fancy making a Slimming World crustless quiche, to enjoy over the weekend. Another tough week for me this week. I just can’t seem to control my sweet tooth. This week I’m simply not buying anything sweet. If it’s not in the house I can’t be tempted by it! Happy enough with my 1/2 lb off but know it should be more. Anyway a new week means new opportunities. Onwards we go!!! Great day on plan✔️ Even managed to turn an old family fave into a Slimming World delight 😋 ❣️Breakfast-lemon cheesecake protein kvarg ❣️Lunch-Sardines and Tomatoes on Toast ❣️Dinner-Chicken no syn (previously called chicken á la sin) substituted jar of mayo and tin of condensed cream of mushroom soup not to mention a carton of single cream with a tin of chicken in white wine sauce (Aldi) for only 1 syn!!! Mix in 1 tbs curry powder dash of lemon juice - layer with cooked broccoli and spaghetti and top with grated cheese (HeA) and golden breadcrumbs (12g - 2 syns)..... resulting in a plateful of deliciousness 😋 for only 3 syns. #HealthyEating #SlimmingWorldMeals #LowFatMeals #BackToTarget #KeyworthSlimmingWorld #WestBridgfordSlimmingWorld #SlimmingWorldWithMichelle

So happy to have seen any loss on the scales this week if I’m honest. I was out for dinner and a show on Saturday and as if that wasn’t enough tagged on to a Hen night after the show. It was my hubby’s birthday on Sunday and we were out for lunch at the local Chinese buffet and then I put my back out again. Turns out I have a slipped disc and sciatica so back on the pain killers and new muscle relaxants. Tried hard to food optimise 100% but if I’m truly honest I could have done better. Still a loss is a loss. On to a brand new week. Yes it has challenges but I will get round them. #slimmimgworlduk #slimmingworld #backtotarget

Breakfast was bran flakes with banana using healthy extra a and b Lunch on the go was the Cajun rice pot from Greggs that is 5 syns. Not perfect but certainly better than the other things on offer Dinner was good old mince and tatties with broccoli for speed totally what a day like today called for. 2 syns for gravy And then a piece of total nostalgia and icecream wafer sandwich. Finally tracked down the blocks of icecream that suit this best . And after about a year of searching I stumbled on it in @morrisons . It’s 4 syns for a tenth of the bar and the wafers are 1/2 syn each. Breakfast was a fruit bowl and yogurt (1 syn) Lunch was an extra cheesy cheese ham and onion toastie using my healthy extra b and both health extra a choices Dinner was stewed sausage mash and mashed turnip. In total this was 5 syns but I only ate half of it as I’m feeling slightly under the weather. Struggled slightly yesterday but that’s gone and in the past. Focussing on the days still to come. Todays food. Got up too late for breakfast . my pain killers really make me very sleepy. Thankfully my back is feeling a bit better so I’m not needing to use as many of the strong ones anymore. Brunch it was a @warburtonsuk seeded protein bagel topped with bacon ( all fat removed and fried eggs ( fried in fry light). It was meant to be poached eggs but when I had destroyed two attempts I gave up 😂 Dinner was beef stew. Cooked all day on low in the slow cooker so it just melted in the mouth. Potatoes carrots and my favourite veg just now broccoli. Here are today’s meals. Breakfast was toast and banana ( healthy extra b and free) Lunch was Slimming World Chicken in black bean sauce followed by a ski strawberry mousse. These are 3.5 syns each and taste so creamy. Dinner tonight is a ham and egg salad and I had 1 tbsp of light salad cream with it too for 1.5 syns. Still both healthy extra a choices available and 10 syns should I need them. # day 7 and it’s weigh day. Forgot to take a picture of breakfast this morning but we all know what a bowl of Bran flakes looks like don’t we? I added sliced banana to it too. #lunch was pasta and sauce. I thought I had picked up cheese and broccoli which would have been 2.5 syns however it was chicken and bacon and 5 syns which is more than I would normally be happy using for this but hey Ho it’s done. I added protien rich sliced chicken to fill@me up more and keep me going until after group. It will be after 7 before I get home. #dinner. I’m all prepared so I don’t stray and get a high syn take away on my way home. Chicken and rice soup just needing heating up when I get home. I know I’ve been good all week ( maybe a few extra syns on Sunday for Mothers Day but honestly only a few). Is it only me that gets nervous on weigh day??? Back pain is slightly more manageable today so felt more able to cook. #day6 Breakfast 40g ( healthy extra b)porridge oats cooked with semi skimmed milk (healthy extra a) with raspberries. Lunch was a salad with Tesco bbq chicken slices (3 syns a pack) Dinner was a favourite in this house. Diet Coke chicken. I always add a bit of Chinese 5 spice into mine. Served with boiled rice and broccoli. It’s my first weigh in tomorrow and I’ll admit to being slightly nervous but it’ll be what it will be. #day5 Not the greatest day food wise. But still within syns. Hurt my back yesterday, no wait , I didn’t hurt my back , my back hurt me lol. I didn’t do anything but my back went taking my legs from under me. I’m in a lot of pain so today has been lots of rest and pain killers. Breakfast was fruit and yogurt. Lunch was a nuggets Happy Meal (fries 7 syns nuggets 6syns) Dinner was #Slimmingworld Carbonara free + 1 healthy extra a choice. The meals at @icelandfoods are so handy to have as a backup. Breakfast today was 2 slices of Neville’s wholemeal bread toasted and topped with a level tbsp of marmalade (2 syns) Lunch was going to be so much better but as my pasta was boiling my back went. So it became a wee simple Mac and cheese using 55g of seriously stronger spreadable lighter (healthy extra a ) Dinner was more colourful a delicious ham salad with baby boiled potatoes. Breakfast- bran flakes with banana and I forgot to take a picture healthy extras a &b Lunch was bbq chicken skewers from @icelandfoods and 1 syn each and shared a pack of beef savoury rice also 1 syn (3 total) Dinner was Turkey breast roast with mash and roast potatoes, broccoli,carrot and peas along with a couple Sw stuffing balls left over from Christmas. A small dash of bisto gravy granules for chicken I’m counting 3 syns. A total feast and I couldn’t finish it. Todays meals…. Breakfast was simple but filling and kept me going until lunch at 1.30pm. 2 Boiled eggs. Lunch was, depending what you call it. Roasted cheese/cheese on toast and used my healthy extra B choice and both my heathly extra A choices as I wanted it super cheesy. Weighed and measured carefully. Saturday night takeaway here tonight was something new. I almost forgot to take a picture so please forgive the almost empty bowl. Rogan Josh and plain boiled rice from our local takeaway. Muesli, yogurt and raspberries for breakfast. Lunch was on the go today. I could have had a high syn takeaway but opted for a couple of Grabbits chicken skewers. They’re tasty and kept me going until dinner. Dinner was really filling as it was packed with protein. I love the @malcolmallanfamilybutchers little bit lighter sausages as they are super tasty without being mega high in syns. Bacon medallions (making sure all the tiny white bits are trimmed before cooking as I cant resist it when it goes crispy) Egg cooked in frylight, baked beans and hash brown waffles. It’s a little bit more syns than I usually use on dinner but in this case I was happy to use them. I am suitably full and still have syns left if I need them but I’ve already planned in free picky bits for if I need them later. Day 5 of SP Sticking to my plan of a whole week has been tested today... I'm absolutely exhausted! Work has been full on busy and it's already starting to warm up in the kitchen. . Breakfast was cheesy scrambled egg on toast (no fruit as I was running late) Lunch was a small ham salad and fruit Lots of coffee and water to try and keep me awake.. Dinner I adapted the chicken and broccoli recipe using pork loin and diced peppers. The family had rice and spring rolls ... I couldn't be bothered making Cauliflower rice so had roasted broccoli. A couple of lessons learnt from today's running machine event 🤣🤣 1. Don't wear a dress and tights on there with your trainers (tights manoeuvre) 2. Running Machine needs to be moved out of Kitchen or don't attempt to go on there when your boiling Potatoes (Sweating like a crazy fool) 3. So this Year, I have decided not to make any resolutions as I can never stick to them!! However, I have set myself personal goals with June 2024 being the focus to achieve them. The first goal I set, is to use the bloody treadmill I bought nearly 3 months ago and never stood on 🤣 and the goal being able to run 10k without blowing out my backside 🤣Well today I did it, I wanted to do 1.5 Miles as my starting point, Yes it was slow, but the next goal is to speed it up each day and then hopefully, increase the distance. TikTok made me buy this one and I don’t regret it. “The Inheritance Games” is the first book in a series of four and it definitely lives up to the hype in my mind. Avery Grambs is your average high school student and overnight becomes heir to the Hawthorne fortune when billionaire Tobias Hawthorne leaves her the majority of his money and possessions. The only stipulation to keeping the inheritance is to live in Hawthorne House, with the Hawthorne family, for one year. Easy, right? Not at all… Avery has no clue who Tobias is or what her connection to him or his family is. And as you can imagine, the surviving Hawthorne family is angry and trying to legally fight the will. Wonderfully written with enough plot twists to keep you pleasantly engaged while enjoying the unique use of riddles, puzzles, games, and tricks weaving together a story of why Avery, intrigue, and romance. Looking forward to reading the rest of the series! Quote from the book I loved: “Sometimes,” Jameson Hawthorne said, sounding strangely contemplative, “things that appear very different on the surface are actually exactly the same at their core.”

The smash burger tacos were so good I made another one for lunch today. For breakfast I made something else I'd seen on Tik Tok, protein cheesecake using a Weetabix for the base and fromage frais mixed with some vanilla for topping.
