Making soup for my sick boy. Beef broth that was previously made is the base. It was so thick and had a beautiful fat cap on the top sealing it in the jar. Dehydrated garlic, onions and corn silk from last falls crops for immune boosting properties as well as their powerful virus fighting skills. The corn silk helps stimulate the kidneys and bladder so it also helps push the bad stuff out. A dash of cyanne to heat things up , some miso soup powder from epicure with nutritional yeast for some added vitamins and minerals, some sea salt and its flavors and minerals and a sprinkle of nutmeg for a little pain relief. And you can't have soup without a bay leaf. They help boost the immune system and aids in digestion. And for texture I'll add a bit of rice. Food is so many thing. 🍀 On the menu tonight was a millet risotto with mushrooms and wild garlic. I am afraid I can’t reproduce the recipe completely, but I can share the basics. I used the following ingredients: 1 onion 2 cloves of garlic Healing broth or any other broth Thinly sliced mushrooms 3 hands of wildgarlic 1 hand of parsley Zest of half a lemon Juice of 1 lemon A hand of soaked cashew nuts Sage Salt, pepper, cayenne pepper and cardamom. I grated the onion and garlic and sautéed them on a low fire. Afterwards I added the millet and stirred for a few minutes. Than I added some spoons of broth to just cover the millet with a lid on top for 5 minutes. Than I added the mushrooms with the lemon zest and let it simmer for another 5 minutes … next I added the cut wild garlic and fresh herbs for another 5-10 minutes. In the meantime adding the broth every time the mass started to become dry. Here’s some of the foods I’ve been eating. This is a high vegetarian diet with lots of eggs. Most of the time, I fast for about eighteen to twenty four hours everyday. This has helped with the cleaning of my gut. I definitely feel a difference. On top of the fasting I drink lots of tea now. The intestines are full of shit, and should be releasing all waste, but in some cases the waste never gets digested or gets stuck somewhere in our intestines. This is when food rots internally and affects our bodies tremendously. Cleaning them out is very important for a disease and virus free body. Healthy Pantry Food Recommendations Every family’s tastes is different, but here are some recommendations that work for my family : Healthy Baking Supplies Sugar/Sweeteners: I do keep sugar on hand, but sugars can be easily substituted by honey or date paste Flour: try whole wheat flour, almond flour in stead of the white flour, or make a mixture of the two.. Healthy Breakfast Options Cereal: we dont tend to eat cereals but we do love overnight oats and granola. Coffee: This varies and we have a machine coffee with the standard cups but we do love our machinato fair trade coffee that we get from a local cafe in our area Healthy Dinner Ingredients Pasta: whole wheat pasta, that i can just buy in our local supermarket. We keep spaghetti and rotini stocked up. But there are also alternatives like pasta from chickpeas and lentils Rice: I once made the mistake of buying wild brown rice, this was absolutely no family favorited so now we stick to normal brown rice. Canned Goods: Black beans, coconut milk, diced tomatoes, tomato paste, and green beans canned Tuna you can always find in our pantry Soup & Broth: I do sometimes use stock powder, just for convenience, but do always check the nutrition facts. Healthy Snacks Seeds/Nuts: I get those in our local shop. But i d pay attention to the sales. They can stay fresh for very long in vacuum containers Little Kid Snacks: our 3 year old loves her bagele, and vegetable chips but we also often get Organic fruit strips. We don’t follow any strict eating plans at all, but we try to make healthy food choices most of the time. I like to keep our fridge and pantry stocked with fresh foods and healthier choices, having a well organised pantry is a big part of this. How to Organise a Healthy Pantry It’s easiest to start your pantry organisation project when you’re low on food – BEFORE you go to the grocery store. Step 1: Take Everything Out of Your Pantry Loosely organise things on your counters/table so that similar foods are grouped together. This will help later on. Step 2: Toss/Recycle/Donate/Eat The goal here is to stock a healthy pantry but that doesn’t mean you have to waste foods considered unhealthy. Step 3: Clean the Pantry Wipe down all the shelves. Pantry organisation works best when everything is all clean – just like you’re cleaning up your health. Step 4: Group similar items together. When I walked with my then 2 year old passed a chicken coop close to our home. Full enthusiasm she was explaining to me that this was where the eggs came from and that this was tasty. I felt proud because we never really educated her deliberately. My husband and I both grew up in farmland and also now we live surrounded by farming. That same week I was in the grocery store and a 5 year old grabbed a carton of eggs and asked his mom why there were chickens on the carton. The mother shrugged her shoulders and said she didn't know. By the rest of the conversation between the boy and his mom I noticed that he didn't know eggs came from chickens. Maybe he did not grow up like we did and was exposed as much. So how do you teach your kids where their food comes from? We don’t have to live on a farm to teach our kids where their food comes from. Each of us can take steps to avoid the “I don't know or somebody somewhere” mentality. Here are a few ideas: Grow food / Support school gardens Visit Pick-your-own orchards or gardens Become a regular at your local farmers market. A lot of farms also have farm shops. Do you read to your kids? Try weaving in books about farming, gardening, and food-growing. Look for authentic books and not the commercialized varieties. Offer coloring stencils which show what animal or plant is related to what product. I was shocked recently, reading an article, stating that with the rising food prices a staggering 23% of families and 56% of seniors feel like they need to cut meals to be able to make ends meet. Hereby some tips how meal planning and substitute. Most people probably already implement it. But nevertheless they are important to be included. Deciding what to eat throughout the week can help cut down on food waste and give you a more clear idea of what you need from the grocery store. Having a list with you while shopping helps cut down on impulse buys. When canned goods and pantry staples are on sale, stock up! Try to save up some change for these larger purchases. If you feel like meat really is too expensive right now. Legumes, dried peas and lentils are a great money-saving protein choice, and they are also high in fiber, B vitamins, and iron. Don't go for the A-level brands but what about the discounts or home brands. Use reward cards and coupons. Shop your sales, compare prices in different shops. Your overall shopping time might increase but it can be so beneficial. Don't be afraid to buy frozen or canned goods. They are just as good as fresh. If you do your shopping now every week, try to make a plan and a shopping trip every 2 weeks. ( for us personally when we made this change it saved us 30% just in grocery cost) Once you're back from your grocery trip. Look for recipes that you can double or triple – that way you can freeze leftovers for another easy meal. Have any leftovers? Use them for the next days lunch. Do you have any vegetables that are about to turn bad? Make them into a delicious soup. You don't need to eat it straight away. You also can freeze some.
