Made this one a few months back and definitely want to try it again soon. This is a coq au vin (basically translates to chicken in wine) which sounded like two great things combined. Overall, this came out pretty well and was easy to prep and cook. I think the next time around, I’ll want to use skin-on chicken breast and thighs. The recipe called for skinless, but this let to a strange texture, especially since the recipe called for it to be seared. This started off by first cooking bacon in a hot skillet and letting the fat render. Next, garlic, onion, potato and carrots were added to the skillet to cook in the fat and some added olive oil. Tomato paste was added and mixed with the vegetables before pushing them all to the side of the skillet and searing the chicken breasts in the open area. Once seared, sliced mushrooms were added to the skillet. Next, chicken broth, red wine and a bay leaf were added to the skillet and the whole mixture was cooked until the liquid reduced by a bit. When Scott challenged me to this, I was nervous right off the bat. I don’t fry food often. But I was up for it! The challenge? Both of us make the same 2 Day Fried Chicken recipe, from @chefarmermatthew, but put our own spin on the rest of the meal. I had an idea but needed to put more of a spin on it. So I decided on… Two Day Fried Chicken with Honey Butter Jalapeño Cheddar Cornbread Waffles (rather than biscuits) and Slaw with a Sriracha Honey Sauce This was all around a fantastic meal, but honestly I think I screwed up the chicken some because I had a lot of trouble keeping the fried coating on. When your kid requests homemade chicken nuggets, you do your damndest to find the best recipe possible. In this case (based on other recipes I’ve tried) I knew that @halfbakedharvest would have it perfected. I wasn’t wrong… Holy Moly this was some of the best chicken I have had. I appreciate that there was no milk or flour needed, and the drizzle of olive oil really did crisp everything perfectly. I took two extra minutes (really!) just before serving to make the included honey mustard sauce. You know it’s good when your kid who doesn’t do mustard dips takes a few spoonfuls. It's been a minute since I posted a recipe. Life got a little crazy for a few weeks. But I'm back (and have like 5 million pictures to post because I definitely didn't stop cooking👩🍳). We normally do something sweet on Saturdays for brunch, but I thought I'd switch it up with @halfbakedharvest Jerusalem Style Egg and Cheese Bagels. I used @traderjoes everything bagels because I love their bread products when I can't make my own. Okay, so the picture isn't fantastic and it definitely shows that my choice of noodles was not on point, buuut let me tell you, this meal was banging! Those crispy sweet potato rounds were like little candy nuggets of amazingness. Go buy the cookbook for this meal alone. @halfbakedharvest Saucy Garlic Peanut Noodles will absolutely be a staple in our home. The roasting time for the potatoes isn't too long, and everything else is pretty quick and easy. So for us it's a great weeknight meal. Two thumbs up friends!!👍👍

Next @halfbakedharvest recipe; Mongolian Beef! This one came together quickly and was all the sweet, sticky goodness you want in the takeout fav without all the not so healthy ingredients. When I made this, I was out of honey😳- like that literally never happens because I put that sh!t in EVERYTHING and always make sure we have it in the house. But there's a first time for everything, and we opted for molasses instead. Not a bad swap at all- so tasty. Definitely recommend this for a quick and easy weeknight meal. We paired it with Naan and Jasmine rice. (If you've been following along and I haven't convinced you to buy her cookbook yet, stick with me, I promise I will. I get nothing out of it, I just love her recipes and want to let everyone know that eating healthy doesn't have to be bland.😉)
Sharing my fourth try at a recipe from @halfbakedharvest Every Day cookbook- Sheet Pan French Toast. If you know our family, you know brunch is a cherished event pretty much every Saturday morning. Thought this might be a perfect addition to the rotation. We really wanted to love it, but it felt like a little bit of a miss for us. Maybe I soaked the bread too long, but it stuck to the pan (even though it was generously greased) and stayed soggy. We personally didn't love the whipped ricotta. If I made this again, I'd stick to pan frying the toast and making homemade Whipped Cream instead. The brioche bread and the egg mixture were great -just didn't cook up how I hoped. But we'll give it another go at some point for sure.
