My lovely client who has type 2 diabetes and is currently on step 5 still managed to lose 8 1/4lbs on her first week. I am super proud of her! Day 12 ✅💯!! Woohoooo it is Friday. I have three days off now and I am going to enjoy every second!! So the birthday cake bar & apple and strawberry were new bars to me. I absolutely loved them both. Step 2 Courgette Lasagne ✅ Serves 2 ✅ 200kcals 👨‍🍳 You’ll need: Spray oil 1 small onion, diced 2 garlic cloves, crushed 2 celery sticks, diced 1 large carrot, diced 150g small mushrooms, quartered 200g canned chopped tomatoes a pinch of dried basil or some shredded leaves 3 medium courgettes 200g fat-free cottage cheese 100g 0% fat Greek yoghurt 1 small free-range egg, beaten Salt and freshly ground black pepper 🥣 Method: 1️⃣ Lightly spray a saucepan with oil and set over a low to medium heat. Cook the onion, garlic, celery and carrot, stirring occasionally, for 8–10 minutes until tender but not coloured. Stir in the mushrooms and cook for 2–3 minutes. 2️⃣ Add the tomatoes with their juice and continue cooking for about 10 minutes until the mixture reduces and thickens. Season to taste with salt and pepper. 3️⃣Meanwhile, cut each courgette lengthways into 4 long slices. Lightly spray a griddle or frying pan with oil and set over a medium to high heat. Add the sliced courgette, a few at a time to the hot pan and cook for 1–2 minutes each side until golden brown. Remove and drain on kitchen paper. 4️⃣ Preheat the oven to 200°C, gas mark 6. In a bowl, beat together the cottage cheese, yoghurt and egg. Season with a little salt and pepper. 5️⃣ Assemble the lasagne: cover the base of a small ovenproof dish with four courgette slices. Top with half of the vegetable mixture and cover with four more courgette slices. Spoon half of the cottage cheese mixture over the top and then the remaining vegetable mixture. Cover with the rest of the courgettes and spoon the remaining cottage cheese mixture over the top. 6️⃣ Bake in the preheated oven for 25–30 minutes until bubbling and golden. The other day I was out longer than I planned to be 😅. Normally I have meal bars, and protein bars in my bags for situations like this. I was only popping out to drop some bits off, and walk one of my regular dogs (I’m a dog walker and pet sitter to) 🥰. I hadn’t taken my bag with me, so wasn’t prepared to be out for more than a few hours. I had my snack before I went out, so thought I’d be ok till I got home 🫣. I ended up going to the supermarket to grab a meal deal for lunch. This cost me £4.50 😳, and was the healthiest I could get!! 🥞 Pancake Day is here! 🥞 These are Step 3 and above 80 calories each You need...🥞 1 Medium Banana 🍌 1 Small Egg 🥚 1 pinch Baking Powder Instructions 🍌 Mash the banana with a fork. Try to get a mixture which is just slightly lumpy - you don't want a 'puree' and nor do you want large pieces of banana. It's best to use a slightly over-ripe banana for these pancakes. Sprinkle over the baking powder and mix well. Beat the egg in a separate bowl until the yolk and white are well mixed and then add the egg to the banana and baking powder. Don't add all the egg at once, the mixture should be about the thickness of creme fraiche - if it's too runny you've added too much egg and you may find the result is closer to an omelette than a pancake! Heat a non-stick frying pan over a medium heat. 🥞 Drop about a tablespoon of the mixture into the pan and let it spread. Continue making small pancakes (this quantity should make 5 or 6). It's important to make small drop pancakes. If necessary you can cook these in batches and keep them warm in the oven for 10 minutes or so. Cook for about 2 minutes till the bottom of the pancakes are set and have started to go golden brown and there are little bubbles rising from the baking powder. Flip the pancakes over and cook for a further minute. Serve with fresh berries and/ or greek yoghurt. A tray bake is so healthy and makes a quick and easy meal as everything is cooked in one pan. Roasted thick slices of #cauliflower (‘steaks’) are surprisingly filling and a great meat substitute. Serves: 2 Prep time: 20 Minutes Cook time: 35 Minutes Calories: 400 kcal per serving Step: 3 Ingredients 1 small cauliflower, stalk trimmed and leaves discarded spray olive oil ½ tsp ground coriander ½ tsp ground cumin a good pinch of ground cinnamon 150g sweet potato, peeled and cubed 1 red onion, cut into wedges 150g baby plum tomatoes 100g halloumi, diced or thinly sliced salt and freshly ground black pepper 1 tbsp green pesto Preheat the oven to 200°C, gas mark 6. Slice the cauliflower through the stem into 4 thick ‘steaks’. Spray them lightly with oil and dust with the spices. Place in a large roasting pan with the sweet potato, red onion and tomatoes. Spray lightly with oil and season with salt and pepper. Bake in the preheated oven for 30 minutes or until the vegetables are tender and the cauliflower is golden brown and starting to crisp around the edges. Add the halloumi and place under a hot grill for 5 minutes or until the cheese is softened and golden brown. Divide between 2 serving plates, drizzle the pesto over the cauliflower and serve immediately. Step it up… To enjoy this on Step 5, serve it with 160g cooked quinoa.
