A delicious double-header of pesto pasta and escarole with cannellini beans (scarola e fagioli). Escarole was one of Tom's grandma's favorite greens, a fact we definitely leveraged to get Ethan to try it. He did us proud, but thought it was a little "spicy" - and it was, you can omit pepperoncini if you like, but us adults enjoyed it. No recipes used, though the internet was consulted before making the escarole, and this led to blanching it before cooking it with the beans. Pesto is probably best made coarsely by a withered Italian nonna using a mortar and pestle, but we don't have all that, so the food processor worked in a pinch. Originality: this salad is a pretty classic chopped, but I felt like the chickpeas were a nice protein-rich addition. You could leave out the salami for a vegetarian version. 7.5/10 2. Taste: Delicious! I made half a batch for lunch, and hubby and I cleaned our plates. I did take the suggestions to add extra lemon juice and S&P. 8.5/10 3. Texture: an important component in all dishes, but maybe more so in salads, I liked the crispy radicchio here, but would’ve enjoyed more pepperoncini and garbanzo beans. 7.5/10 4. Ease: I feel like I’m a pretty messy cook, so even after eying my dirty counter, this was straightforward to assemble and not TOO bad for cleanup.
