TUNA PASTA SALAD 😍 Oh my goodness this was amazing and so filling 🙌 the perfect summer night dinner, filling lunch or packed lunch to take to work/on a picnic/family bbqs etc Two big portions: - diced pepper - half diced red onion - 1/3 diced cucumber - small bag of shredded iceberg lettuce - 200g pasta shapes, cooked - 6 tbsp lighter than light mayo (3 syns altogether) - tin of tuna, drained Pop all of the above in to a bowl and give it a good mix and then split between however many portions you like! Sunday reset 👌🏻♥️ What a lovely day we've had 🥰 after getting lots of jobs out of the way yesterday, we had the whole day free to go out and explore! As usual, we picked out a nice route on All Trails, made a pack up and headed off! Even though it rained most of the walk, it really didn't matter. It was a beautiful route through the trees and along the river. We stopped on the rocks overlooking the water for our picnic which was stunning 😍 afterwards, we found a pub for some lunch and it didn't disappoint 😍 it's lovely making the time for each other and to free up a day to get outside, have some nice food and catch up on the weeks you've had! 🥰 When we got back, we tackled a few jobs and I made the plan for the week for the fridge, got some leftovers out for tomorrow's lunches and sorted out my outfits for the week. Not gonna lie it's tedious and I'd much rather be sat relaxing but I know I'll thank myself next week that it's all in place ready to go! 😅 If you can, try and make a bit of time for you on a Sunday. Get those jobs done that you've been putting off, cook something nice or go out for a meal, spend time with your loved ones, get some fresh air and exercise. Winter walking 🥶👌🏻 Kristian and I have had a lovely day out in the Yorkshire Dales today 🥰 During the winter months, it can be harder to motivate yourself to exercise and want to be outside as let's face it, it's grim sometimes and it's easier to stay in! 🤷🏼♀️ But we had a whole free Sunday ahead with no plans so we used the Alltrails app to look up some nice walks nearby, we made a plan, we made a pack up and off we went! It was definitely colder than we thought, so cold in fact we had to pop into a shop to buy a hat and gloves 🤣 but eventually we warmed up a bit and enjoyed ourselves. It was muddy and boggy in places but nothing our walking boots couldn't handle. We found a gorgeous spot by the stream for a snack which was so peaceful. And at the end of course, we finished with a pub roast dinner 😍😋 You just can't beat time outside in the fresh air, it does wonders for your mood. First day on our coach trip to London. No exercise. On the coach a bit so my Fitbit thinks I’m dead, it’s not use to no activity!! Breakfast: packed up overnight oats. Lunch: packed up pasta salad, homemade hummus and crudités, lentil cheese bake. Fruit. Tea: evening meal was included. Help yourself to either battered fish and chips or chicken. I had vegetable soup to start. Random chicken, salad, carrots , pasta and mushy peas. No bread No pudding. Did have a jug of cocktail (4shots)so probably over syns but I never normally drink and I am away. Day could of been so much worse. Busy busy busy! Preparing syn free picnic food for tomorrow 😋 I can't wait 🙌 . . I used 5 eggs a tub of fat free cottage cheese. 2 slices of ham Carrot finely cut Spinach chopped Tomato finely cut Salt pepper and some chilli flakes. Mix together and pop in what tray/ moulds you have. I wanted smaller quiches so used a muffin tin. Oven was pre heated 180 and took around 20 mins or until cooked and set. Don’t tell anyone but we found probably the prettiest and definitely the quietest spot in Leeds to have a summer picnic. 🤫🤫 🤫 We hopped on over to The Hollies to enjoy a teddy bears picnic complete with teddies, teddy bear sandwiches and teddy bear crisps🧸🧸🧸 I mean, teddy bear shaped sandwiches are just so much more attractive to a 3-year-old, right? My absolute top tip for a great picnic to enjoy with kids is to make it a fun experience! Make sure to include your kids with the making and the packing of the picnic, so that they can be as involved as possible. We also used Bloomin’ Both bread from @jacksonsbread which is a white and wholemeal blended bread with hidden linseeds, which is an easier way for families to get healthier food into their kid’s diets. Another ‘shhhhhh it’s a secret’ moment here 😉 The bread is palm oil free, no artificial preservatives and is also a source of Calcium, Omega 3 and Vitamin D.
