Dinner tonight was @pinchofnom Cheesy Fajita Orzotto. We increase the ingredients by 1/4 as the Turkey mince comes in 500g pack and make 4 portions so this will be for lunch tomorrow too! 1 portion is one of my #hexa and we serve ours with lettuce cups that we spoon the Orzotto into and also make homemade tortilla chips (WW wrap sprayed with garlic @frylighthq and salted). Not the best photo 🙈 but this was yesterdays dinner and todays lunch - Lasagne! This was genuinely delicious and the closest thing I have made to a genuine lasagne since starting SW. New level unlocked!!! I made my own #swfriendly Bechamel Sauce: - 400ml of Skimmed Milk (approx 7 syns) - 4 tbsp of Cornflower (4 syns) - mustard powder (a pinch) - ground nutmeg (a pinch) - 1 tub of fat free cottage cheese (free) - Salt & Pepper to taste I mixed the cornflour and milk to make a paste and then added the rest of the milk, bringing it to the boil and then letting it simmer until it has thickened. I then blitzed the cottage cheese and added it to the mix, heating it slowly making sure it doesn’t boil. Voila! This recipe served 4 I think but we stretched it to 6 incl. 2 kids portions. I made my ragu using 5% beef, bacon, red wine stock cube, mushrooms, onions, celery, chicken stock, tinned tomatoes and garlic and mixed herbs (plus S&P). I then topped the whole thing with 40g Parmesan. I counted my portion as one of my #hexa for the day. ——————————————————————-——————— 🥘 CHICKEN IN A CREAMY MUSHROOM SAUCE 🥘 ——————————————————————-——————— Hey ho, beck on plan with a bang and I am going to limit my syns to 10 a day max this week and I’ll make sure at least 1/3 of my plate it speed. I’ll also combine intermittent fasting from 9pm to 12 noon as I find this shifts the pounds quick - I want to loose half a stone at next weeks weigh in!!! If you’re a huge lover of mushrooms this tasty Chicken in a Creamy Mushroom Sauce recipe is for you SWIPE ⬅️⬅️⬅️ TO SEE VIDEO You can serve it with just about anything – steaks, meatballs, chicken, pork, vegetables, pasta and potatoes. It’s easy to prepare and completely delicious. The best thing about it is it’s only 2 syns per serving and very low in fat. Ingredients (serves 2) 2 Large Chicken Boobs 6 Large Mushrooms (Sliced) 100g lightest Philadelphia 150ml Boiling Chicken Stock 1 tsp Onion Granules 1 Garlic Clove 1 tsp Worcestershire Sauce 1 tsp Parsley 1/2 tsp Thyme Method  Sear the chicken in a griddle pan for 2 mins each side then pop in the air fryer for 20 mins on 180. Meanwhile slice mushrooms and add to a pan with the thyme, parsley and a little Frylight. Sauté for a few minutes over a high heat. Add stock, crushed garlic clove, onion granules and Worcestershire sauce to the pan, cover with a lid and allow to simmer until the stock has reduced for about 15 mins. Reduce the heat and add lightest Philadelphia with salt & pepper. Mix well and then add your cooked chicken. Served with chips, par boiled for 5 mins, sprayed with frylight and seasoned with my fave @jdseasonings Chips & Wedges (if you’ve not tried this you are SO missing out!!!). Then in the air fryer or oven on 200 for 20 mins. Have been working on drinking 2 litres of water a day and getting more steps in this week. Took advantage of being in the countryside at the weekend and went for a lovely sunny walk. Did Zumba and Clubbercise last night - I never know whether to trust my Fitbit but apparently last night I smashed through 1180 calories in 90 minutes.
