Bell peppers 🫑, onion 🧅, garlic 🧄, tomatoes 🍅, and carrots 🥕 all come together to make this healthy and flavorful meal! It’s got all of the amazing flavors of stuffed peppers, but is SO much easier to make! Your family will love this dish! Ingredients: 1 lb ground beef 1 large onion, diced 2-3 cloves garlic, crushed or finely chopped 1 red pepper, diced 1 green pepper, diced 1 cup of carrot, finely diced 1 (15 ounce) can diced tomatoes 1 cup long-grain rice 1½ tsp dried parsley 1 tsp dried basil 1 tsp brown sugar ¼ tsp salt ⅛ tsp ground pepper 2 tsp beef bullion 2 cups water 1-2 cups shredded cheddar or Colby jack cheese Instructions: In a large skillet that has a lid, brown the ground beef with the onion and garlic. I often buy things for that proverbial rainy day and then it sits around. One of these was this bag of mixed Mediterranean vegetables. ⁠ Today along with other odds and ends, I created a vegetable skillet for dinner. ⁠ So here is what I did, I of course always have the usual aromatics, think garlic, ginger, etc. I minced four cloves of garlic, chopped up a poblano pepper hanging around and some tomatoes and a yellow squash.⁠ I heated olive oil added the garlic, and when it was nice and fragrant added in the pepper and tomatoes. I allowed this to soften for a few minutes and then added the squash. And finally, the package of the frozen vegetables.⁠ After a few good stirs I added in turmeric, dried basil, black pepper and let the vegetables cook until just done. Let’s get real…sometimes we start eating before we remember to post. That’s what happened today, because it was so good, so I took a pic of half the plate. I’ve been brainstorming how to eat more plant based meals. I decided to let myself use potatoes or beans more often with vegetables since those things are more filling, so I won’t feel like I’m missing something (even though it might be a bit carby) Today, I sliced a large Yukon gold potato thinly. Put 2 Tbsp EVO oil in a nonstick skillet, placed the slices carefully on the skillet, and let it cook on med heat. Once the pan began to sizzle, I added about 1/2 cup of water and covered the skillet. Let boil till water is gone. If the potato still looks raw add another 2 Tbsp of water and cover. Once the potato is soft and the pan side is browning, take tongs and flip the potatoes to brown on the other side and turn to med high heat.At the same time, add thin slices of zucchini on top of the potatoes. As soon as the potato is brown on the other side, begin carefully mixing to allow the zucchini to touch the bottom of the pan, and lightly brown it. Add your favorite herbs and seasonings. I added #mrsdash, both the chicken seasoning and the regular seasoning. I also added salt, pepper, and two small plum tomatoes diced. I gave it a gentle mix and served on a platter with a dollop of sour cream on top. This delicious baked pasta dish by @damn_delicious is a perfect meal to enjoy throughout the week. You can swap out the sausage for a protein of your choice. Be sure to toss in your fresh summer veggies on hand! Ingredients: 8 ounces penne rigate 2 tablespoons olive oil, divided 1 zucchini, sliced 1 large yellow squash, sliced 6 ounces Andouille sausage, sliced 1 red bell pepper, chopped 1/2 sweet onion, chopped 3 cloves garlic, minced 1 1/4 teaspoons Italian seasoning 1 (28-ounce) can diced tomatoes Kosher salt and freshly ground black pepper, to taste 1/3 cup chopped fresh basil 8 ounces mozzarella cheese, shredded Directions: Preheat oven to 350 degrees F. In a large pot of boiling salted water, cook pasta according to package instructions until al dente; drain well. Heat 1 tablespoon olive oil in a large oven-proof skillet over medium high heat. Working in batches, add zucchini and squash, and cook, stirring occasionally, until golden, about 3-4 minutes; set aside. Add remaining 1 tablespoon olive oil to the skillet. This recipe would be a great dinner idea to have in your food storage since freeze-dried foods can be used in most of the below ingredients. It's quick, easy, and nutritious. Cajun Shrimp, Sausage, and Vegetable Skillet Makes 6 servings INGREDIENTS 28 ounces cooked shrimp 12 ounces jennie-o turkey sausage 3 Cups zucchini 3 Cups yellow squash 1 Cup asparagus 2 Cups red bell pepper ¼ Teaspoon salt ½ Teaspoon pepper 2 Tablespoons olive oil 2 Tablespoon Cajun seasoning INSTRUCTIONS In a large bowl add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper. Add olive oil and cajun seasoning and toss until coated. Add to a large skillet and turn to medium high. Cook for about 5-7 minutes until the shrimp is pink and the vegetables are tender. Garnish with fresh parsley if desired and serve immediately.

Sweet Potato, Kale and Shrimp Skillet! 🍤Never knew sweet potatoes could cook so fast on the stove top. In a pan over medium heat warm olive oil, red pepper, and diced onion. Cook until onions turn golden. Add in fresh minced garlic. Let cook another minute. Add in the diced sweet potatoes and cook till they turn soft (May want to add a little water to the pan and cover to steam potatoes). Cauliflower Tot Skillet (where’s the cauliflower emoji @apple??) I tried to lighten this dish up but with all the cheesey goodness, definitely consider this one an indulgence. 👩🏻‍🍳 Ingredients: -1 lb ground chicken -1 tbsp Worcestershire -2 tbsp salted butter (@vitalfarms ftw) -2 tbsp gluten free flour blend (@bobsredmill 1:1) -2 tbsp olive oil -2 yellow onions, sliced into strips -1 red bell pepper, chopped -8 oz mixed frozen vegetables (I used a yellow squash, zucchini, bell pepper, green bean mix from @wholefoods) -1 cup shredded Swiss / Gruyere (@sargentocheese) -1 cup shredded cheddar (I ❤️ @tillamook thick farm style cut) -kosher salt & black pepper to taste -1/4 cup low sodium soy sauce -1 cup white wine (I used @urbanbarn Chardonnay) -1 tsp minced garlic -2 tbsp fresh thyme leaves, plus additional for garnish -2 tbsp chopped fresh flat leaf parsley -1/4 tsp cayenne pepper -2 lbs frozen cauliflower tots (I used a mix of @birdseyevegetables and @greengiant) -Fresh chives sliced into thin rounds for topping -1 cup water Directions: 1. Preheat oven to 425 F. Heat butter and oil in large, oven safe skillet over medium heat. Add onions once butter is melted and cook about 5 minutes until softened, near translucent. 2. Add 1/4 cup of wine and cook until absorbed, about 8 minutes. Repeat with another 1/4 cup wine, cooking until onions are deeply caramelized. 3. Push onions to side of skillet and stir in red pepper, frozen veggies, chicken, garlic, cayenne, thyme, parsley, and season with salt and pepper. 4. Break up ground chicken with spoon and cook for another 3 minutes. 5. Stir in the flour and cook for another minute 6. Add the remaining 1/2 cup wine, soy sauce, Worcestershire sauce, and 1 cup water. Bring to a boil, then reduce to simmer until sauce thickens, 5 min 7. Remove from heat and top with shredded Swiss / Gruyere. 8. Add tater tots in even layer and bake in oven for 20 min. 9. Remove from oven and top with cheddar cheese 10. Cook for an additional 10 min. Cheese should be melty and gooey, and tots should be golden brown. 11. Remove from oven and garnish with chives & thyme. 👩🏻‍🍳

In Frame * Veg Jhalfrezi* Recipe Type :- Curry Cuisine :- North Indian Serves :- 3-4 *Ingredients* • Ghee 1 tbsp • Jeera 1 tsp • Ginger 1 inch (julienne) • Kashmiri red chilly 3 nos. • Onions 3 medium size (sliced) • Green chillies 2-3 nos. (slit) • Garlic 1 tbsp (chopped) • Red chili powder 1 tbsp • Coriander powder 1 tbsp • Turmeric powder ½ tsp • Carrot ½ cup • Baby corn ½ cup (boiled) • Cauliflower ½ cup (boiled) • French beans ½ cup • Green peas ½ cup • Mixed bell peppers ½ cup • Tomatoes ½ cup • Mushroom / Beans ½ cup • Boiled Corn 2tbsp • Tomato Puree 1 cup • Vinegar 1 tbsp • Tomato ketchup 1 tbsp • Garam masala 1 tsp • Kasuri methi 1 tsp • Fresh coriander 1 tbsp *Method* • Heat ghee in a pan, add jeera and allow it to splutter, and ginger and whole Kashmiri red chili, sauté for a minute. • Add onions and green chillies, cook until onions are translucent, • Add garlic and cook for a minute. • Add the powdered spices and cook for 1-2 minutes. • Add the veggies and cook for 2-3 minutes. • Add the fresh tomato puree and salt and vinegar, mix well. • Add tomato ketchup, this is totally optional and cook for 5-6 minutes. • Add kasuri methi, garam masala and some fresh coriander leaves. • Serve hot by topping some fresh cream and ring onion . . . Looking for breakfast inspiration? If you have leafy greens, such as kale and spinach, at home - try out our nourishing Vegetable Skillet recipe packed with vitamins & antioxidants. You can, of course, enjoy this for lunch or dinner too! • Recipe (serves 1-2): 1 handful of spinach 1 handful of kale leafs & stems 50g leek (sliced) 1 or 2 eggs 1tsp cumin 1tsp sumac, or paprika/chilli powder 50ml vegetable stock 1tbsp plain yoghurt Butter for frying Toast • Heat the oven to 200 degrees. Add butter to a pan and, when it begins to foam, fry the leeks & kale stems until soft. Add cumin, lemon juice and vegetable stock and simmer until the stock has evaporated. Fold in the spinach & kale leafs until wilted. Transfer the mix into a skillet and crack in the egg(s). Cook in the oven for 10 minutes. Mix sumac or paprika/chilli powder into the yoghurt & toast the bread.
