GNOCCHI AU POTIRON (3 personnes) Préparation : 20 min Cuisson : 5 min Ingrédients : - 220 gr de purée de potiron maison ou surgelée (pour moi 1 courge Betty blue de @cueillettededuvy qui tient tout l'hiver... et même plus !) - 30 gr de pecorino romano râpé (ou parmesan) - 1 oeuf - 230 gr de farine tout usage T45 - 1/2 cc de sel - 1/2 cc de poivre - Fleur de maïs pour la confection des gnocchi - 1 noisette de beurre demi-sel - Thym frais - Quelques copeaux de pecorino pour servir Préparation : 1) Dans un saladier, mélangez votre purée de potiron, le pecorino râpé, l'oeuf légèrement battu, le sel et le poivre. 2) Ajoutez ensuite la farine progressivement (la pâte sera très collante au début) pour obtenir une boule lisse et homogène. Ajoutez plus de farine si besoin tant que la pâte colle aux doigts. 3) Coupez votre boule en 6 et sur une planche en bois, avec un peu de fleur de maïs, roulez votre morceau de pâte pour former un boudin d'environ 1.5 cm d'épaisseur. Coupez ensuite vos gnocchi en portion d'environ 1.5  à 2 cm de longueur. Recommencez l'étape précédente avec les autres morceaux de pâte et au fur et à mesure servez vous d'une fourchette que vous appuyerez sur une des faces des gnocchi pour créer les rayures des gnocchi. 4) Portez à ébullition une grande casserole d'eau salée. Ajoutez vos gnocchi et faites le cuire jusqu'à ce que ceux ci remontent à la surface (environ 5 minutes). 5) Egouttez vos gnocchi, remettez les dans l'une poêle et ajoutez une noisette de beurre et mélangez bien. È stata una giornata impegnativa e avevo proprio bisogno di rilassarmi… Per me non c’è nulla di meglio che iniziare a cucinare qualcosa. È come una cura per l’anima e il corpo🌱💚🙏🏻 Metto a fuoco mentre preparo, come quando fotografo.. Questo è un fungo portobello, più saporito del classico champignon ed è biologico. L’ho appena sciacquato velocemente. Poi ho aggiunto pepe e sale, macinati al mortaio, il pepe di diverse maturazioni, e ho aggiunto infine del timo selvatico raccolto in Grecia che ho ripiantato e mi è nato💚💚 La scorza di limone biologico e il mio olio d’oliva completano il tutto. The Distinguished Guest Birthday Cake. Recipe from @joythebaker who sourced (and tweaked) it from a 1934 cookbook by Martha Meade. A light and tender white cake filled with an easy almond-studded butterscotch caramel, topped with smooth mocha buttercream. I followed Joy's recipe almost exactly, only strayed when it came to decorating. This was for @b_i_ngio's birthday - and it came together pretty seamlessly, despite some slight architectural issues towards the end 😂 But no one needs to hear any more about that.

This week’s meatless Monday features a spinach and ancient grain and quinoa salad that is based on a recipe I found on the back of a package of Freekeh. Salad: 1 package of ancient grain and quinoa mix (cooked as directed - Casbah brand - let cool before adding) 1 red pepper (quartered, roasted for 8-10mins with broiler on low, then diced once cooled) 2 cups baby spinach (washed and chopped) 1/2 cup feta 1/2 cup black kalamata olives (I use pitted pre-sliced ones) A light dusting of ground thyme (a little goes a long way! I usually sprinkle a little into my palm then dust into the salad) Dressing: Juice of one lemon ~1/4 cup 3 tbsp of olive oil 1 tbsp of honey 1/4 tsp of cinnamon 1/4 tsp of smoked paprika (it’s so worth the splurge!) 1 clove of garlic minced Some modifications I made: More feta and more black olives- I probably doubled them. Add 16oz of chickpeas for more fibre and protein. I use a full 10oz bag of spinach to give more volume. The original recipe calls for a full package of Freekeh (Casbah brand) cooked, but I haven’t been able to find it lately, so the Casbah quinoa and ancient grain mixture is a good substitute. 🍆 Eggplant Potato Tomato Stew 🍆 🛒 Ingredients: 🍆 1 large eggplant, cubed 🥔 2 large potatoes, cubed 🍅 3 large tomatoes, chopped 🧅 1 onion, chopped 🧄 3 cloves garlic, minced 🌿 2 tsp dried basil 🫒 ¼ cup olive oil 🧂 Salt (to taste) 🌿 Black pepper (to taste) 🌿 Fresh parsley, chopped (for garnish) 🔪 Instructions: Heat olive oil in a large pot over medium heat. Herbed Zucchini and Squash Casserole Savory Herbed Zucchini Bake Recipe Ingredients: 2 large zucchinis, sliced 2 yellow squash, sliced 2 tablespoons olive oil 2 cloves garlic, minced 1/4 cup chopped fresh basil 1/4 cup chopped fresh parsley Salt and pepper to taste 1 cup shredded mozzarella cheese 1/4 cup grated Parmesan cheese Directions: Preheat oven to 375°F (190°C). Grease a baking dish with olive oil. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant. Add sliced zucchini and yellow squash to the skillet, cooking until slightly tender, about 5-7 minutes. Stir in chopped fresh basil and parsley, and season with salt and pepper to taste. Transfer the cooked zucchini and squash to the prepared baking dish, spreading them out evenly. Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the top of the vegetables. Van zichzelf is tofu een beetje saai, maar met wat kruiden of een lekkere homemade marinade kan je er oneindig veel lekkere creaties van maken. Lemon, Asparagus & Israeli Couscous Traybake from One Pot, Pan, Planet by @we_are_food Today's #rainydaybitescookbookclub challenge had us pick any recipe from the One Tray chapter of the book. I'm always looking for an excuse to make pearl couscous. Here it gets jazzed up with lemons, garlic, asparagus, spring greens, dill, sumac & chunks of halloumi cheese, and then thrown under the broiler until it all gets a glorious suntan. ☀️ Did my people like this? Nope, not even close. 😆 Even my cheese-lover wasn't buying the fact that firm, salty halloumi is actually cheese. That's okay. This week's cookbook is Every Night of the Week Veg by Lucy Tweed (@EveryNightOfTheWeek). This book focuses on simple veggie-based meals that are easy to prepare during a busy week. Recipes are arranged by themes and days of the week, such as Monday Cowboy Pasta Dreams and The Bold and the Beautiful Saturday Salads. The emphasis on meals that are not complex to prepare makes this a nice option for nights when you're busy or just don't feel like cooking. For my first foray into this book, I tried Sticky Maple Mustard Brussels, mostly because I really enjoy mustard. This brussels sprouts recipe calls for mixing brussels sprouts with a few ingredients, including mustard and maple syrup for a spicy and sweet coating. Then they are roasted until tender (which took longer than the recipe called for in my case since I wasn't able to find the baby brussels sprouts and had to go with larger ones). Finally, while they are roasting, the recipe calls for making a tahini and Greek yogurt based dip to go with the finished sprouts. This was a different and tasty way to eat brussels sprouts that gave them a nice amount of flavor without covering up their taste or overpowering them. Food brings us together 🫶 I remember reading in @earthlinged 's book "Vegan Propaganda" that at times being vegan can set you apart from others. It brings up divisive topics of conversation about morals which can be uncomfortable in certain situations. While I'm a strong believer in standing up for what I believe in, and will continue to fully explain my reasoning for being vegetarian to people, I also think we can create our own more comfortable situations. People still like to have a go at me for being vegetarian : "Ava, do you only eat spinach"..."but the animal is already dead"..."would you get offended if I ate a steak near you Ava?" But I'm so over this and now I choose to surround myself with people who not only accept my choices but also embrace them. We can all enjoy completely vegan meals together like the Asian feast we shared last weekend ☺️ What I've learnt over my 5 years of being vegetarian is that my choices of what I do and don't eat should not be divisive, provided I am in an accepting and embracing circle of friends!
