I'm recently obsessed with rolling up chicken breasts filled with all sorts of home grown goodies - these using baby spinach, spring onions and shop bought french comte cheese. I'm using the spicy carrot dip, thinned with cream and wine, as the baking sauce. You can actually add anything to the rolls - perfect for clearing out the fridge. Just halve chicken breasts horizontally and pound out. The baking sauce can be a tin of soup, canned tomatoes or bottled pasta bake sauces. Are you a cast iron fan? We sure are at our house! Yesterday I shared the orzo dish we had as a side earlier this week and I said we paired it with some chicken. But let me tell you, this is the way to go to cook some amazing chicken breasts! I adore the cast iron, even if it is heavy and somewhat hard to store. It heats so evenly and cooks up proteins so well. Here, I had a family size package of chicken breasts (maybe 8 or 9?) that I seasoned up with smoked paprika, Chicken Salt (yes, that spice I keep talking about from Australia...it's SO good. Get yourself some!), and some black pepper. I heated two cast iron pans (one regular, one grill) with olive oil and once hot, got the chicken in the pans. They cook for about 5-6 minutes, and then turned, just to get a good sear on them. Once flipped and cooked on the second side, into the oven the pans go for another 10-15 minutes to finish bringing them up to 165 F. I dig the broiler at about 475 F personally, but any high temp will work. This allows me to be free to cook the rest of dinner on the stove top which is a HUGE plus. And time and time again, it makes THE BEST chicken. I either already have some chicken thawed, or I let it soak in a bowl of warm water for an hour or so and it’s read to go. Then, it’s time to get busy. Take those chicken breasts and beat them thin…like 1/2—3/4 inch. Season them each with about 1/2—1 tsp of the following: Garlic powder, onion powder, paprika, salt, Italian seasoning…and a few pinches of black pepper Drop a little olive oil on there and massage it into the chicken. Heat a large pan to medium heat. Drop a little more olive oil in. Lay tour chicken breasts in and let them cook for 6 to 7 minutes…until a nice golden brown crust forms. Flip and repeat. Remove once golden brown on the other side. Let rest then slice and serve. Tonight we ate these plain with some Parmesan garlic crusted potatoes and some delicious frozen veggies. Other times we make chicken salads with this exact chicken. And sometimes we make chicken wraps with this exact chicken. It’s super versatile and super delicious and super easy and super fast.
