Sprinkle both sides of the eggplant slices with salt and let them sit for about 15 minutes to release excess moisture. Mama Mia! I like to experiment in the kitchen; and, last night I made miniature eggplant lasagnas with layers of thinly-sliced eggplant, shredded mozzarella cheese, pre-cooked chicken breast and a simple, homemade marina. (Honestly, all I did to make the sauce was open a 28 oz. can of whole tomatoes, diced the tomatoes, and cooked them in a pan for 20 minutes with salt, pepper, onion powder, garlic powder, and Italian seasoning). I used no oil in this recipe at all, as I think it takes away from the flavor of the eggplant. Layer it up, bake it in the oven for 20 minutes at 400°, and “Ecco!” you have a delicious, healthy dinner. Vegan Eggplant Lasagna This is such a delicious alternative to regular lasagna, courtesy of Elysse’s homegrown eggplants. Using a lentil sauce and bean-cashew ‘ricotta’, made cheesy by nutritional yeast. Eggplant: 2 medium eggplants (sliced into 1/4-inch slices lengthwise) Sea salt (for sweating) Extra virgin olive oil Sauce and lentils 700g marinara sauce 120ml water 150g red lentils (uncooked, rinsed and drained) Ricotta 250g butter beans (or any soft white bean) 120g raw cashews (soaked for 30 mins in water)
2.5 tbsps nutritional yeast 1/2 tsp garlic powder 30g dried basil 1 tbsp extra virgin olive oil 60ml water Salt and pepper Method: Preheat oven to 218 C. Set out two baking sheets and one large (9×13-inch) baking dish.
 Generously salt eggplant slices on both sides and lay between two clean absorbent towels. Lay a baking sheet on top and place something heavy on top to absorb excess moisture.
 Arrange slices on 1-2 baking sheets in an even layer and drizzle with a little olive oil. Bake for 13-15 minutes. Remove from oven and reduce oven heat to 190 C.

While eggplant is baking, add sauce and water to a saucepan and bring to a low boil over medium heat. Then add rinsed lentils and lower heat to a simmer, stirring occasionally, for about 15-20 minutes or until lentils are tender.
 Add all ricotta ingredients to a food processor or bloender and pulse to combine, scraping down sides as needed. Add water as needed, but you want the consistency relatively thick. 

Spread a thin layer of lentil sauce into your baking dish. Then layer on a few pieces of eggplant. Spoon half of the ricotta filling over the eggplant slices and spread into an even layer. Then top with another layer of marinara sauce. Repeat until you have used up all the ricotta. Finish with a layer of sauce.

Add extra ricotta on top or optional vegan parmesan cheese. Bake for 35 minutes, until the eggplant is tender. Let rest for 10 minutes before slicing. Posolite ih i poklopite sa još jednim papirnatim ubrusom. Tako će otpustiti onu gorčinu. Kada se ubrus smočio, spremne su za pohanje. Pripremite brašno,jaja i prezlu i pohajte ih. ( tako su ukusne i hrskave da ih je gušt jesti i samo tako ) Kad ste ih sve ispohovali, slažite ih. 지금까지 먹어본 라쟈냐는 잊어라, 역대급 고퀄러티의 가지 라쟈냐가 입안에 들어오는 순간 멈출 수가 없다. 예쁘게 자란 가지 하나를 두고 무엇으로 가치를 높여줄까 고민하다 싱싱하고 커다란 가지를 더 구입해 돌돌이 라쟈냐를 만들었다. 퇴근 후 부랴부랴 만드느라 가장 중요한 키포인트인 슬라이스한 가지에 올리브오일을 두르고 소금 살짝 뿌려 오븐에 15분간 구워내는 과정을 기록하지 못했다. 가지를 굽는 동안 양파, 버섯, 피망, 쥬키니를 잘게 다져 후라이팬에 넣고 소고기 민스와 간마늘을 넣고 올리브오일을 살짝 둘러 볶는다. 약간의 소금과 통후추를 넣어 간을 하고 마지막으로 토마토 파스타 소스를 넣어 끓인다. 건파슬리가루와 바질가루도 듬뿍 넣는다. 소스가 완성되어질 때쯤 파마산치즈를 더한다. 소스를 만드는 동안에 라쟈냐 시트를 뜨거운 물에 넣어 부드럽게 만든다. 잘 구워진 가지를 꺼내고 오븐용 용기에 올리브오일을 얇게 펴 바른 후 시트를 깐다. 접시에 구운 가지를 올려 그 위에 모짜렐라 치즈를 더하고 소스를 넣어 가지를 돌돌 말아준다. 예쁘게 말아진 가지를 시트 위에 가지런히 넣는다. 다 채워진 가지 위에 홀토마토를 올려준 후 마지막으로 모짜렐라 치즈를 듬뿍 뿌려준다. 예열된 오븐에서 220도에 맞춰 15분정도 구워준다. 가지의 부드럽고 달달한 맛이 더해진 담백한 라쟈냐는 지금까지 먹어보지못한 최고의 맛이다. 가지를 얇게 썰어 먼저 구워내야하는 번거로움이 모두 용서될 만큼. 이렇게 그동안 함께 해준 가지와의 기나긴 시간은 끝을 맺었다. 마무리까지 잊지못할 보라빛 여정이여. #심플라이프#미니멀라이프#단순한삶#주부일상#음식이야기#가지라쟈냐🍆#라쟈냐#홈메이드쿠킹 #todaymykitchen #eggplantcooking #eggplantlasagna #homemadecooking
