Beef and Potato Curry Rich Hearty Beef Curry with Potatoes Ingredients: 1 lb beef stew meat, cut into chunks 3 large potatoes, peeled and cubed 2 tablespoons vegetable oil 1 large onion, finely chopped 2 cloves garlic, minced 1 tablespoon ginger, grated 2 tablespoons curry powder 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon turmeric 1/2 teaspoon cayenne pepper (adjust to heat preference) 1 can (14 oz) diced tomatoes 2 cups beef stock Salt and freshly ground black pepper to taste Fresh cilantro for garnish Directions: Heat the oil in a large pot over medium-high heat. Brown the beef chunks in batches until all sides are seared. Set aside. In the same pot, add the onions and cook until softened. Stir in the garlic and ginger, cooking for another minute until fragrant. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir to coat the onions and cook for about 2 minutes. One pot Paneer Curry Pie 🥧 I saw this recipe on the good food website and thought it looked interesting and that I would give it a go. It was sooooo delicious! @kapaofeeds, Edinburgh 📍 This was hands down my favourite spot I tried in Edinburgh. The bill at the end said it all, really. I may have spent a few pennies here. It was actually the first place I ended up trying. I won't lie, this wasn't originally on my "radar" as somewhere to go, but my friend and I were nearby and decided to pop in. It was the best decision I made. From start to finish, the service and food were just phenomenal. We were greeted with a warm welcome and they explained that they could easily cater to my dietary needs. I was taken through the menu, of which about 90% could be made gluten free, and all dishes dairy free. There were plenty of vegetarian and vegan options, too. The menu is designed to be shared, with around 4-6 dishes between two people. I was quite hungry, so I ordered 3 dishes to myself, whilst my friend had 2. Oh my, I wish I knew how big these were before ordering. I was quite full after one dish. No complaining, though, as it was scrumptious. Just be warned that the portion sizes are not for the faint-hearted. I opted for the salt and pepper oyster mushrooms and fried chicken "sharing plates" with a yellow curry with hake for "main". Quite honestly, this is some of the best food I've had. It was moreish, and the flavours popped in your mouth. Not only was quantity there, but quality was too. For me, a "must buy" is the fried chicken. The fish caramel sauce combined with the crispy batter was unreal, something I've never had similar of. I'm so glad my friend and I both ordered this, as I didn't want to share. It was THAT good. If you don't eat meat, then the mushroom dish is fab, too. It had a gentle spice to it, with an umami flavour. The curry was on the medium side, for me, with some red chillis mixed in. Remember, my spice tolerance is almost non-existent, though. It had a subtle warming sensation, and the flakes of the perfectly-cooked fish just melted in the mouth. I ended up washing this all down with not just one but two coconut margaritas. They were soothing and palette cleansing. Overall, I had a 10/10 experience and would highly recommend it if you're in Edinburgh ✨️🏴󠁧󠁢󠁳󠁣󠁴󠁿

My first attempt at making a Chicken Tikka Masala, only problem was I found a recipe for 10 servings and did great remembering it was for 2 people, until I dumped 800ml of liquid into it, so had to dump a few more spices in it... despite it being very runny and a tad watery the flavour was quite nice... Delicious Rajma or Kidney beans curry and Chapatis, this was our dinner yesterday. I didn’t make Rajma for long time , this was my girl’s request to make this combination. This was so delicious and everyone was happy , enjoyed it . To make this Rajma first need to soak the beans overnight, then next day cook them with some salt and chilli powder. Now make onion paste, tomato purée and ginger garlic paste. Now heat a pan and add ghee then add cinnamon sticks, cloves and cardamom just fry them for one minute. Now add the onion paste and fry until golden brown, then add ginger garlic paste and sauté for two minutes then add tomato purée and sauté until the tomatoes are cooked and everything like a nice paste . Now add Kashmiri chilli powder for colour and flavour, little coriander powder, garam masala powder turmeric powder , sugar one teaspoon to balance all the taste and salt .Now mix everything very well and sauté for another two minutes and add the cooked Rajma again mix well and cover cook until all cooked together and flavours went in to the beans. Now add some cream ( optional )and very little kasuri methi and mix well , bring it to a boil . Now switch off the gas and enjoy your delicious Rajma curry . #Gift | #SundaySpicebag (and other bits) Hope everyone's been enjoying the sun 🌞 Probably not the most ideal given the lovely weather we've had but I mostly stayed in this weekend and did a decent amount of cooking , mostly of a Chinese Fakeaway style but ended up having some lovely meals Yesterday featured a small bit of cleaning the garden , followed by beers and a craving for a spicebag , so I threw some @glenhavenfoods Shredded Chicken on, into the airfryer with some @greenisle frozen chips and a load of @mcdonnellscurrysauce curried Spicebag Seasoning , finished with some @mayflowertastesgood curry sauce. Tossed in Dark Soy Sauce and Sesame Oil, It was lovely. Friday saw the humble chicken curry, with rice chips and some prawn crackers from @lidlireland , I diced the chicken and covered it in corn starch and cooked it in the airfryer , giving out lovely tender but crispy bits of chicken . Would definitely do it this way again Also for lunch one of the days I opted for more of @glenhavenfoods shredded chicken and did an Asian style wrap , with Soy sauce, sesame seeds, Korean Hot sauce and Siracha Caramel from @chimacdublin Finally finished it off this morning with a spicy breakfast burrito 🌯, which very much hit the spot . Beef Vindaloo Ingredients: For the Beef: 2 pounds beef chuck (see Notes) 1 teaspoon salt 1/2 teaspoon freshly cracked black pepper 3 tablespoons neutral oil For the Sauce: 1 medium onion, chopped 3 cloves garlic, minced 2 teaspoons garam masala 2 teaspoons cumin 1 teaspoon paprika 1 teaspoon turmeric 1/2 teaspoon ground mustard 1/2 teaspoon cayenne pepper (omit for more mild flavor) 1/2 teaspoon ground ginger 1/2 teaspoon cinnamon 2 tablespoons tomato paste 1/4 cup apple cider vinegar 1 cup low-sodium beef stock (plus more as needed) To Serve (All Optional): Cooked basmati rice Warmed naan Plain Greek yogurt Directions: Use a sharp kitchen knife to cut beef chuck into 2-inch thick cubes, then transfer to a large mixing bowl. Add salt and black pepper, toss to coat thoroughly. Set aside. Heat a large skillet over medium-high, add oil and swirl to coat. Heat until shimmery. Add beef, sauté until browned on all sides, about 6 minutes. Transfer beef to a plate and set aside. Reduce heat to medium. Add onion, cook 15 minutes until caramelized. Add garlic, cook 2 more minutes. Add all spices, stir for 1 minute until fragrant. Stir in tomato paste. Deglaze with apple cider vinegar, then add beef stock. Return beef to skillet. Bring to a boil, then reduce heat to medium-low. Cover and simmer 60 minutes, stirring occasionally. Adjust seasoning, remove from heat. Serve over rice with naan and yogurt if desired. Sometimes I do curry totally from scratch or like here I made an easy one ! 🤗 Onions, garlic, tomato paste, red belly peppers, zucchini, coconut milk, Madras curry, Garam masala, turmeric, and fresh cilantro. Cooked for 30 minutes, then I cook the black tiger shrimps in the sauce. Served with Basmati rice! So tasty! 😋 Paired with C'D'C Rosato 2022, Christo Di Campobello, Agrigente, Sicily (Nero D'Avola). Singapore Noodle Curry Shrimp 🍤🍜 Ingredients: • 1 pound shrimp, peeled and deveined • 8 ounces rice vermicelli noodles • 2 tablespoons curry powder • 1 tablespoon vegetable oil • 1 onion, thinly sliced • 2 cloves garlic, minced • 1 red bell pepper, thinly sliced • 1 carrot, julienned • 1 cup snow peas • 1 cup bean sprouts • 1 can (13.5 ounces) coconut milk • 2 tablespoons soy sauce • 1 tablespoon fish sauce • 1 tablespoon brown sugar • Salt and pepper to taste • Fresh cilantro leaves, for garnish • Lime wedges, for serving Directions: 1. Cook the rice vermicelli noodles according to the package instructions. Drain and set aside. 2. In a small bowl, mix the curry powder with a little water to form a paste. Set aside. 3. Heat the vegetable oil in a large skillet or wok over medium heat. Add the sliced onion and cook until softened, about 3 minutes. 4. Add the minced garlic to the skillet and cook for another 30 seconds, until fragrant. 5. Stir in the curry paste and cook for 1 minute, stirring constantly. 6. Add the shrimp to the skillet and cook for 2-3 minutes, until they start to turn pink. 7. Add the sliced bell pepper, julienned carrot, snow peas, and bean sprouts to the skillet. Cook for 2-3 minutes, until the vegetables are tender-crisp. 8. Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir well to combine and bring to a simmer. 9.
