Tender beef, fragrant Thai curry paste, warming spices, creamy coconut sauce..are you sold yet? This is a kind of beef rendang and massamam curry hybrid, but trust me, you will love this. It's a slow cook so not to make in a hurry, but it's worth the wait. Let's do this Serves 4 Ingredients Oil Red thai curry paste 400ml coconut milk 400g diced stewing steak 1 tbsp dark soy sauce 4 large potatoes, cut into bite sized pieces 1 tsp cumin 1tsp ground coriander 1 tbsp tamarind juice (Worcestershire sauce is a good substitute) 200ml warm water. Heat 3 tbsp oil in a large lidded casserole dish. Add 2 tbsp red Thai curry paste and fry gently for 5 mins, stirring to prevent it burning. Add 2 tsbp of the coconut milk and continue to cool for 5 mins. Add a dash of water if necessary to prevent it sticking. Add the beef and cook until the beef is no longer red, about 5 mins, making sure you stir. Add the ground spices, soy sauce, stir and add the warm water and season with a pinch of salt. Bring to a boil, lower the heat, cover and simmer away for 45 mins. Stir every now and then to stop it sticking. Add the potatoes, the rest of the coconut milk, the tamarind juice (or Worcestershire sauce) bring to a simmer, cover and cook for 45 mins. The meat should be tender, the potatoes melt in the mouth. If the sauce looks like it needs thicken up, remove the lid and simmer to reduce. Let’s make… THAI GREEN CURRY Ingredients needed: Garlic 🧄 Mushrooms 🍄‍🟫 Veggies (baby corn, broccoli, carrots) 🥦 Thai green curry paste Coconut milk 🥥 Protein of choice (prawns/chicken) Rice (optional to serve) Serves 2 Method: 1. Start by washing and cutting your mushrooms and vegetables. 2. Heat some extra virgin olive oil in a pan and add your garlic and mushrooms. Fry until they are soft and starting to turn brown. 3. Add your chosen vegetables. For this dish we used carrots, tenderstem broccoli and baby corn. However you can use alternatives if you prefer. Stir fry until they have started to soften. 4. Add your chosen protein. We used prawns, however you can also use chicken if you like! 5. Add your seasoning. We used paprika, sea salt and black pepper. 6. Add a pot of green Thai curry paste. Mix it in until dissolved. If you feel that it’s a little too thick you can add a splash of hot water. But you won’t need too much as you will be adding coconut milk too which will water down the sauce. 7. Add a can of coconut milk. 🍃🍵 PALAK PANEER - North Indian Cuisine 🇮🇳🪷 Adapted from Swasthi’s Recipes and Dassana’s Veg Recipes. An iconic curry from North India that incorporates blanched spinach leaves, paneer, and a nice blend of the best spices within garam masala. Palak is puréed spinach and paneer is a soft yet thick cheese that I had mistaken for tofu when I first tried this dish at a restaurant. (You can sub paneer for tofu too) Upon eating palak paneer at that restaurant, I realized I’d been missing out on this dish for years— so delicious with it’s slight spice kick of green Thai chillies 🌶️ that I couldn’t just have it once. The placed that served this meal, however, is a 45 minute drive, so I figured to attempt cooking it at home. Palak Paneer will definitely be in my general meal rotation 😋. This can be served with naan, paratha, or roti, with a side of rice. You get a load of iron from the spinach and cashews, and a good amount of protein from the cheese and bit of milk added at the end. EASY slow cooker family meal 🥥 This curry is on weekly rotation at our house, it’s absolutely delicious cooked in the slow cooker and the chicken is beautifully tender. Just turn on the slow cooker in the morning and chuck in the ingredients, you can even prep the night before so it’s super quick to put together in the morning, then come home to a delicious healthy family meal everyone will love. You can use any curry paste you like in this curry, I like the brand pataksuk they have loads of options - it just depends how spicy your family like their curries, if your serving this to very small children start with a gentle spice and build up their tolerance. Squash, Coconut milk and coriander Dhal Curry With Autumn here and Halloween around the corner, I’m making the most of the season’s best ingredients 🎃 The soft sweet Squash in this recipe is so flavourful, cooked with mild spices and thickened to make a yummy sauce with coconut milk. This is the perfect 1st veggie curry for baby to try from 6 months and likewise the whole family. I just make a big portion of it in advance or prepped in about 20 mins in my Nutribaby food prep maker and will do for multiple meals for up to 3 days. SAVE and try this recipe this week♡ Ingredients 300g chopped butternut squash 60g dried red lentils (rinsed) 1 large tomato chapped 1 small white onion diced 1 heaped tsp Garam masala 1/2 tsp turmeric 150ml coconut milk 1 tsp garlic purée 1/2 tsp ginger purée Small handful of coriander Method Add the lentils and 60ml water to the cooking vessel of the Nutribaby then place the steaming jug on top with the butternut squash, then stack the steaming basket on top with the onion and chopped tomato Steam everything for around 15 minutes, carefully remove the steaming jug lid and allow to cool slightly Add the tomatoes, onion and half of the butternut squash to the attached blending jug, then add the Garam masala, turmeric, ginger, garlic, coconut milk and coriander. Pulse blend until a smooth sauce in created Add the rest of the butternut squash and the lentils to the sauce and use a spoon to mix Serve the butternut squash dal by itself or with cooked basmati rice. SAVE and try this recipe this week♡ Ingredients 300g chopped butternut squash 60g dried red lentils (rinsed) 1 large tomato chapped 1 small white onion diced 1 heaped tsp Garam masala 1/2 tsp turmeric 150ml coconut milk 1 tsp garlic purée 1/2 tsp ginger purée Small handful of coriander Method Add the lentils and 60ml water to the cooking vessel of the Nutribaby then place the steaming jug on top with the butternut squash, then stack the steaming basket on top with the onion and chopped tomato Steam everything for around 15 minutes, carefully remove the steaming jug lid and allow to cool slightly Add the tomatoes, onion and half of the butternut squash to the attached blending jug, then add the Garam masala, turmeric, ginger, garlic, coconut milk and coriander. Pulse blend until a smooth sauce in created Add the rest of the butternut squash and the lentils to the sauce and use a spoon to mix Serve the butternut squash dal by itself or with cooked basmati rice. Just whipped up this Tropical Pineapple Chicken Delight for dinner! It's bursting with flavor and so easy to make! Ingredients: 1 tablespoon vegetable oil 1 onion, sliced 2 tablespoons red curry paste 1 (14 ounce) can coconut milk 1 cup chicken broth 2 tablespoons fish sauce 2 tablespoons brown sugar 3 boneless, skinless chicken breasts, cut into bite-sized pieces 1 red bell pepper, sliced 1 cup fresh pineapple chunks 1/2 cup fresh basil leaves Salt, to taste Cooked rice, for serving Directions: Heat vegetable oil in a large skillet over medium heat. Add sliced onion and cook until softened, about 5 minutes. Stir in red curry paste and cook for 1 minute until fragrant. Pour in coconut milk, chicken broth, fish sauce, and brown sugar. Veganes Curry mit Blumenkohl, Kichererbsen und Karotten 🌱 Topping: viel Koriander und Frühlingszwiebeln Rezept: 1 Blumenkohl waschen, vom Strunk befreien und in Röschen schneiden. Mit Salz, Pfeffer und Kreuzkümmel würzen und mit 2 EL Olivenöl in einer Schüssel vermengen. Den Blumenkohl auf einem Backblech verteilen und ca 10 Minuten bei 200 Grad im Backofen rösten. In der Zwischenzeit 2 Karotten und ggf. Zwiebeln klein schneiden, 1 Dose Kichererbsen in einem Sieb abwaschen. Reis waschen und kochen. 1 Stück Ingwer und 1 Knoblauchzehe klein hacken und und bei mittlerer Hitze zusammen mit 1 EL gelber Currypaste 2 min. anbraten. Kichererbsen und Karotten für 5 Minuten mit anbraten. In der Zwischenzeit das Topping vorbereiten: Frühlingszwiebeln schräg in Ringe schneiden, den Koriander waschen und klein hacken. 1 Dose Kokosmilch dazu geben und das Gemüse kurz aufkochen lassen.
