Garlic and Herb Butter Here’s how to: 🧄 Step 1 - take half a pack of salted butter (this will serve two people, twice, at least!). Place in a microwaveable bowl and melt completely. Stir in a teaspoon of garlic salt, half a teaspoon of onion salt, and whatever herbs you like. We used oregano and thyme. 🧄 Step 2 - take around 8 average size cloves of garlic, and crush into the melted butter. ( 💡 Top tip - we buy a kilo of ready peeled garlic cloves at a time from our local Chinese cash and carry - the last time we bought it was £1.63! It’s unbelievable value, they’re easy to freeze and just use when you need. We defrost what we need as we need in a little lukewarm water for around a minute/minute and a half) 🧄 Step 3 - mix together well, and if you’re not using immediately store in the fridge in an airtight container or freeze like we do! 🧄 Step 4 - use a pastry brush to rub all over your fresh bread while still soft. We sliced through our bastini partially and took the time to get in all the slices so every bit of bread was buttery and fabulous. Make sure the bread is smothered!! This also helps it run through the bread and help crisp up the bottoms!! 🧄 Step 5 - enjoy!! And as per the first picture, if you have any left for another time, simply roll in cling film, and SPIN spin spin!! That way you’ll have a nice tight little log, that you can freeze and use whenever you like.
