VEGAN CARBONARA . I know what you're thinking, carbonara is the furthest dish you can get from being vegan BUT hear me out, this was actually really good. Even my meat eating partner enjoyed it. Try not to think of it as creating an exact replica of carbonara but vegan style, think of it as creating an interesting pasta dish with a delicious flavour. . Ingredients (serves 4): You will need olive oil and salt and pepper throughout For the vegan carbonara sauce: 75g cashew nuts (I soaked mine in water for 4hours to soften them up but you don't have to do this) 300g silken tofu 1 tbsp nutritional yeast 1/2tsp tumeric 1tsp Dijon mustard 1/2tsp garlic powder 1/2tsp onion powder 200g oat milk For the pasta element: 200g spaghetti 75g Plant Based Streaky Bacon chopped into cubes Extra Virgin Olive Oil 1tbsp vegan butter 1 small white onion, diced 4-5 garlic cloves, finally chopped (depending on how garlicky you like your meals...) . Method: Start by putting all the carbonara sauce ingredients into a blender. Pulse until creamy and set to one side. Put the spaghetti into boiling water (don't forget to add salt and olive oil to the water!) and cook it according to the package instructions. In a large frying pan, put in the chopped plant based bacon with a bit of olive oil and fry until nice and crispy. Put to one side. In the same frying pan, add in a bit more olive oil, the vegan butter and the chopped onion. Cook the onion until soft and transparent (this can take up to 15-20mins, be patient, the longer the cooking time, the better). Then add in the garlic to the onions and fry for another 5mins. Once cooked through, add in the fried plant based bacon. Strain the spaghetti and add into the onion, garlic and bacon mix. Then stir in the creamy vegan carbonara sauce. Add salt and pepper to taste. Adho Mukha Svanasana 🐕 “Adho,” means down, and “mukha,” meaning face. "Svana" means the dog, and “asana” means the position. Been practising Dwf for the last 3 years straight now. The longest I've been was 2 weeks. Despite all the wonderful benefits on all levels physically, physiologically, flexibility, and strengthening the lower body, arms, and shoulders, I find the best is : to able to have this upside-down view to your material surroundings, metaphorically speaking: for a moment you disconnect from your physical conditioning as a human being. It helped me see things from different perspectives to gain a holistic view with my struggles. To process challenges by flipping a coin in my imagination while I'm in Downward facing dog 😁 et voila! TOMATO AND AUBERGINE GNOCCHI . Whilst I was away, I wanted something simple after a loooong drive. This dish has so much flavour but soooo easy! . Ingredients (serves 2): You will need olive oil, salt and pepper throughout 1 bag of fresh gnocchi (I got mine from the supermarket but you can make your own) 1 pack of cherry vine tomatoes 1 aubergine (chopped into small cubes) 3 garlic cloves A handful of roughly chopped basil . Method: Turn the oven on to 180°c (fan). Bring water in a pan to the boil and cook the gnocchi in accordance with the packet. Then strain and put to one side. In the meantime, put the tomatoes, chopped aubergine, garlic, a nice glug of olive oil and salt and pepper into a roasting dish. Put into the oven for 30mins or until the tomatoes are soft and a bit sticky. Take out the oven, add the gnocchi to the roasting dish and mix through the sauce. Add the chopped basil to the roasting dish then serve. I added a small bit of homemade vegan wild garlic pesto, courtesy of @loulabeldevon and a small bit of red chilli on top and a salad garnish on the side with a balsamic dressing. Enjoy!! . A Swedish start-up has secured €1 million in funding to develop plant-based proteins that help the body to easily absorb iron. Ironic Biotech produces plant-based iron supplements using precision fermentation. It will use the pre-seed funding to expand its patent portfolio and optimize its production process. It says that the supplement can be used by plant-based food companies that want to increase the level and bioavailability of iron in their products. “Our active compounds that come from our chosen plants are very stable and cause less oxidative damage compared to those found in animals and certain group of plants,” Nélida Leiva Eriksson, CEO and founder of Ironic Biotech, told Plant Based News. “At the same time, our product can be consumed by people who are committed to have a plant-based diet.” “New ingredients like [Ironic’s] enable the food industry to tackle a global health problem with new products,” Louise Heiberg, Investment Director at Nordic Foodtech VC, which provided the funding, said in a statement. It’s possible to get enough iron in your diet from plant-based wholefoods. Nuts, legumes, tofu, and leafy dark green vegetables are great sources of iron. But many people, including those who eat meat, are still deficient in iron. The key is to provide heme iron from plant sources. Ironic has made iron compounds that it says are “highly bioavailable,” with an absorption rate comparable to that of heme iron in meat. Ironic says its plant proteins also provide a better alternative to iron supplements currently on the market, which can cause side effects including digestive problems and nausea. ROASTED HARISSA CAULIFLOWER AND CRISPY PAPRIKA CHICKPEAS . This meal has been created through an array of inspiration so I can't credit anyone specially. It's also super versatile so change it up how you wish!! . Ingredients (makes plenty for 3, could stretch to 4): You will need olive oil, salt and pepper throughout X1 tin chickpeas X1tbsp smoked and sweet paprika A handful of cherry tomatoes, chopped in half, X5 garlic cloves (or go for more if you fancy) X2 chopped shallots X1 cauliflower (including the leaves - no need for waste) X4tbsp chilli Harissa Bulgar wheat (enough for 3 people) X1 vegetable stock cube X1tsp nutritional yeast A handful of edamame beans (or any veg you want to add into the bulgar wheat - this is what I had in the freezer) A hand of chopped fresh baby spinach . Method: Set your oven to 190°c (fan oven) Start by draining (keep the chickpeas liquid for other things (no waste!) and peeling the skin off the chickpeas (if you don't have the time or patience, then don't bother but chickpeas crisp up better without the skin) Put the chickpeas onto a baking dish and drizzle olive oil, smoked and sweet paprika, salt and pepper. Roast in the oven for 30mins (or until nice and crisp), these are your topping for the dish Put the cherry tomatoes, garlic and shallots onto a separate baking dish and roast for 20mins. Once cooked through, add the tomatoes, garlic shallots and Harissa chilli paste into a blender and blender until smooth Cut the cauliflower up into florets. I also use the leaves as well! Put into a bowl and mix with the harissa and tomato paste with a bit of olive oil, salt and pepper Put the cauliflower onto a roasting dish and roast for 25mins or until the cauliflower is tender In the meantime, put the bulgar wheat in boiling water with the vegetable stock and nutritional yeast and boil until cooked through Drain then add in the edamame beans and spinach Add bulgar wheat to a bowel with the cauliflower on top and scatter the roasted chickpeas on top Season as you wish, then serve . Just a little vegan shopping haul from the Japanese market and @traderjoes 💕 restocked items this week include the Asian stir fry, the crunch chili onion, cauliflower fried rice, and orange “chicken” along with basic veggies like shredded carrots, sliced mushrooms, and spinach. I thought removing dairy out would help with my breakouts and acne as I was convinced I had some sort of dairy sensitivity. But since starting this vegan journey (1.5wks) I realized I’m getting breakouts still. So I looked into it, and it looks like vegan diets could potentially lead to a lack of b12 and zinc which I’ve added in as supplements. Ironically I’m eating more processed food (oops) than before as I try to transition to a more sustainable diet which could also lead to breakouts. But honestly I’m pretty proud of the 1.5 weeks I’ve done already and the idea of looking for vegan options at restaurants. Oh and also today I found out the lavish bread at TJ is vegan! This is a major game changer. Well that’s all for now as you follow my digital food diary haha 💕🫰😂oh and two more things 1. The teriyaki tofu and garlicky cabbage is soo good! I put it over rice and added some crunch chili onion (best hack to any deliciousness) the picture does not do it justice and 2. Muffin di quinoa, barbabietola e ceci 🧁🧆🧆🍅🥗 Questi muffin salati sono perfetti per qualsiasi occasione, per un aperitivo, una gita fuori porta, oppure per un pasto veloce, ma completo, sano, equilibrato e soprattutto buonissimo. Per realizzare circa 10 muffin ho utilizzato: * 300 gr barbabietola già cotta * 240 gr ceci già cotti * 200 gr quinoa cotta ( io ho usato quella tricolore) di @negozioleggero * 70 gr pangrattato * 1 uovo * Qualche foglia di basilico 🌿 * Sale a piacere * Olio evo Ho fruttato la barbabietola con i ceci e 1/2 bicchiere d’acqua fino a rendere il composto una crema. Ho poi unito gli altri ingredienti mescolando. Ho riposto il composto negli stampi da muffin ( io ho usato quelli di silicone che non necessitano di grassi/olio) e li ho cotti in forno a 180 gradi per circa mezz’ora irrorandoli con un filo d’olio evo in superficie. Li puoi servire anche con una salsina di yogurt, ricotta e basilico per dare un tocco di freschezza al piatto. AVO, CASHEW AND TOFU SPREAD . This was incredibly quick to make and was super delicious! . Ingredients: X1 avocado Half a pack of silken and smooth tofu A handful of cashew nuts X1 tsp onion powder X1 tsp tumeric X1 tbsp miso sauce Half line juice (or lemon A handful of coriander X1 tbsp of my homemade chilli paste X1tbsp olive oil . Method: Wizz all these ingredients in a blender until smooth (or the consistency that you want), then spread onto toasted bread (I used sourdough). . For the topping you can add on whatever you like but I had some vegan chorizo in the fridge and a Turkish green pepper so I chopped these up, fried then in a little bit of olive oil and placed on top of the spread!. . Nowadays, milk can be made out of most plant-based ingredients (that’s not an exaggeration, even potato milk is a thing). And, while cow’s milk used to be most people’s go-to for cereal, coffee, and smoothies, consumers are embracing the vegan milk revolution. In fact, by 2028, the plant-based dairy market is set to exceed $31 billion in value. Is almond milk bad for the environment? Over the last few years, almond milk has hit the headlines quite a few times, and not all of the coverage has been positive. Many have questioned whether the plant-based alternative is really that good for the environment, and that’s largely because almonds are a very, very thirsty crop. Just one small almond, grown in California, has a water footprint of around 3.2 gallons, according to one 2017 study. It sounds like a lot (because it is), but it’s not unusual for nuts to need a lot of water to grow. But one of the biggest issues with almonds specifically is that they are extremely high in demand, and their production is concentrated in one area: California’s Central Valley. In fact, more than 450,000 acres of the San Joaquin Valley and the Sacramento Valley are dedicated to almond cultivation. Another issue with almond cultivation is its impact on the bees. Almond trees rely on cross-pollination, which requires pollinators, namely bees. But the fertilizer used on the crops is extremely toxic to the insects. “The bees in the almond groves are being exploited and disrespected,” one organic beekeeper, called Patrick Pynes, told The Guardian in 2020. “They are in severe decline because our human relationship to them has become so destructive.” London plant-based milk brand Rude Health—which makes almond milk with nuts sourced from Sicily, not California—is a certified B Corp. Philly Cheese Steak(ish). Made with homemade seitan and probably the easiest and most versatile seitan recipe for the vegan homecook. The seitan strips were made from my “everyday seitan” on my blog. 2 large portobello mushrooms 1 large shallot (or yellow onion) 1 Tbl avocado oil 1 Tbl dried parsley 1 tsp garlic powder 1 Tbl dark soy sauce 1 Tbl vegan Worcester sauce 1 pound sliced seitan strips 1 yellow bell pepper, sliced 6 slices @fieldroast Chao cheese Cut portobello into thick strips. Slice shallot into thin strips. Saute over high heat until portobello starts to brown. About 10 minutes. Add oil, dried parsley, garlic powder, soy sauce, and Worcester. Cook for 5 minutes. Add seitan and bell pepper. Cook over high heat for 5 minutes while occasionally flipping. Top with cheese and place pan under the broiler for 2 minutes to melt the cheese. Flip and mix until cheese is incorporated. The key to this is time and patience. You’ll be tempted to flip and stir a lot but you want the portobello to char a little. Starting this account with a bowl of pasta I have made this weekend :-) I think zucchini goes the best with cream cheese ✨ just a spoon of it, so it doesn’t overpower the fantastic flavour of the vegetable. Sometimes you need to keep it simple too :-) This one was very delicious 😋 YOU NEED 👩🏻‍🍳 • Pasta of your choice (Tortiglioni is without a doubt my favourite pasta shape) • Vegan Cream Cheese (I used the pepper flavoured one from Lidl) • Hot Oil • Garlic and other spices of your choice 1) Bring water to boil and cook the pasta 2) In the mean time you stir fry the chopped zucchini in hot oil and add the cream cheese 3) Add the pasta to the sauce ET VOILA ✨ the perfect Sunday lunch ✨ So simple and so delicious! I recently started a vegan journey. Tomorrow marks my first completed week. To be honest I don’t know how long this will last or if it will last. But with all the options out there now it’s been surprisingly kind of easy! I’m hoping to share some of the entrees and dishes I’ve had or made and wanted to start with these pics. These are everything I ate today from @urbanplates @jambajuice @lazydogrestaurants and @yogurtlandinc 🫰 I’m so proud of the vegan community and efforts in providing new and sustainable options. I also find it funny that the two place I went to had similar dishes - chili glazed grilled tofu and sweet and spicy tofu. With that said, I had plenty of protein and tofu. If you’re curious, my drink from Jamba Juice was the matcha green tea blast and my dessert from yogurtland was a vegan Plant-Based Cinnamon Oatmeal Cookie topped with coconut and almonds. Excited to share more vegan dishes and menu options as I continue to support local businesses. 🌿Porchetta veg🌿 Hello Hello!!! Oggi ho riprodotto in chiave vegetale un piatto che rievoca la tradizione. Il sapore richiama l'originale? No Il piatto è buono? Decisamente!!! 😋 La ricetta è dell'inimitabile @fabiolavegmamy IMPASTO - 170ml acqua tiepida - 60 ml di olio di cocco deodorato - 240gr ceci - 200gr funghi pleurotus - 320gr farina di glutine - 70gr barbabietola - 20gr miso - 1 cucchiaio di: timo, aglio secco, finocchio, salvia, paprika affumicata e cipolla essiccata GRASSO - 250ml acqua - 40ml olio di cocco deodorato - 45gr amido - 1/2 cucchiaino sale - pepe q.b. + fogli di carta di riso per la pelle SALSA DA SPENNELLARE 80ml vino rosso 200ml acqua calda 30ml olio evo 15gr miso 1 cucchiaino di: timo, allora, salvia, basilico, cipolla essiccata, aglio in polvere, pepe, paprika affumicata. [Filtra, aggiungi un cucchiaio di farina 0 e fai addensare sul fuoco prima di spennellarla.] PROCEDIMENTO: Frulla tutti gli ingredienti (eccetto il glutine). Quando otterrai una crema liscia sposta in una ciotola ed aggiungi il glutine. Mescola, crea un panetto e poi dividilo a metà. Stendi ciascuna metà a forma rettangolare. Prepara sul ripiano la prima sfoglia, spennella con olio di cocco e abbonda con le spezie. Sovrapponi la seconda sfoglia e ripeti. Unisci i bordi delle sfoglie così che siano ben 'sigillate' Arrotola. Compatta il rotolo premendo sulle estremità. Prendi lo spago e lega il panetto a mo'di arrosto. Cuoci nel brodo vegetale x 60min. Fai stiepidire. Prepara il grasso unendo tutti gli ingredienti e facendoli addensare sul fuoco, mescolando. Riprendi il panetto, taglia lo spago e spennella il grasso. Passa i fogli di riso sotto l'acqua e usali per ricoprire la porchetta . Spennella la salsa rappresa e cuoci in friggitrice ad aria a 180° per 40minuti.
