HEALTHY YOGHURT BARK... let's make it! This high protein in snack is sure to satisfy with a delicious vanilla flavour accented with fresh berries and crunchy granola 👌🏼 INGREDIENTS • 2 cup plain Greek yoghurt • 1 cup mixed berries, fresh or frozen • 2 scoops Vanilla protein powder • 2 tsp maple syrup or stevia granules • 1/2 tsp vanilla extract • 1/2 tsp cinnamon, ground METHOD in a bowl mixed together the yoghurt, spices, protein powder, and sweetener. Then spread the mixture on a lined baking tray. The mix should be a few centimetres thick, so don't spread it too thinly. Once the mixture is spread evenly, top with the fresh berries and sprinkle of granola. Freeze for three hours or overnight. To serve, simply break off small chunks for a snack or dessert. 🍐Chai-Poached Pears with White Chocolate Hemp Sauce🍐 My love for hemp never ends, and neither do the possibilities for creativity!💫 This new recipe for Chai-Poached Pears with White Chocolate Hemp Sauce is a beautiful whole-food winter dessert (or breakfast!) that highlights the plant powers of hemp. Serves 4 with whole pears, 8 with half pears For the Pears:
4 cups / 1 litre filtered water ¼ cup loose chai, or 3-4 chai teabags 
3 Tbsp. maple syrup or honey
4 firm, ripe pears (I used Bosc) 1 cup / 100g fresh cranberries Manitoba Harvest Honey and Oats granola, for garnish if desired For the White Chocolate Hemp Sauce:
Makes about 1 cup / 250ml 3 ½ Tbsp. / 50g cacao butter
¾ cup / 120g Manitoba Harvest Regenerative hemp seeds 
2 ½  Tbsp. maple syrup or honey
seeds of ½ half vanilla bean
1 Tbsp. arrowroot powder 
½ cup water, as needed
teeny pinch of salt Directions: 1. Boil water in a large stockpot, place tea in to steep covered, for at least 15 minutes (the longer the better). Remove tea bags or strain out the leaves. Sweeten tea with honey or maple syrup. 
2. Peel the pears, slice in half lengthwise and remove the hard core (I used a teaspoon measuring spoon). Slide the pears into the sweetened tea, add the cranberries and simmer until tender, about 15-20 minutes, depending on the ripeness and size of the pears. Lemon desserts are my favorite! I try to avoid refined sugar and have experimented with various lemon desserts using dates, my favorite sweetener! Inspired by a recipe I saw by @fitgreenmind I made these little lemon cups by blending cashews, almond milk, dates, vanilla, lemon juice and zest and tapioca starch, cooking it until pudding-like, filling the lemon halves (I used the innards for the juice) and then chilling. Raspberry chia jam chocolate rice cake slice 🍫🌱 Quite the mouthful! Chia seeds are mainly soluble fibre which help to lower cholesterol and slow down the digestion process which prevents blood sugars spiking after eating and makes you feel fuller for longer! They are rich in omega-3, minerals, fibre and antioxidants! Chia seeds also help with reducing inflammation 👏🏻💫 This is such a simple recipe consisting of 3 parts: Base: - 7 lightly salted thin rice cakes - 80g of melted dark chocolate - 60g of peanut butter Combine these ingredients and press into a baking tray. Pop this into the freezer whilst you do the next step! Raspberry filling: - 125g of raspberries (frozen or fresh) - 2 Tbsp of chia seeds - 1 Tbsp of agave syrup - 1 Tbsp of water Mash these together until you get a runny jam like consistency and layer on top of your rice cake base. Then back into the freezer! Toppings: - 60g of melted dark chocolate - pinch of salt Top the raspberry jam with the melted chocolate, sprinkle some sea salt & let it set in the fridge. SALTED CARAMEL CRUNCH SLICE Save this one for Christmas treats! It’s one of my favs 🎄 BASE 1 & 2/3 cups almond meal 2/3 cup desiccated coconut 2 heaped tbsp coconut oil 2 tbsp pure maple syrup CARAMEL 250g cashew butter 1 cup pure maple syrup 1 tsp vanilla Salt flakes, to taste TOPPING 1 cup roasted skinned hazelnuts OR mixed nuts250g 70-80% organic dark chocolate OR homemade Naked chocolate, melted METHOD 1. Process all base ingredients until well combined and sticks together. Line a squarecontainer with baking paper. Press base in firmly, set aside in the freezer. 2. Blend allcaramel ingredients together until smooth. Spread over base. Scatter nuts over the sliceand press into the caramel gently. 3. Pour over melted chocolate. Set in the freezer. Slice and enjoy!

It's sure to be a show stopper at your next dinner event.⁠ ⁠ 🍋🍋🍋🍋🍋🍋🍋🍋🍋🍋🍋⁠ ⁠ LEMON TART⁠ BASE:⁠ ✖️ 1 cup (100g) almond meal⁠ ✖️ 1 cup (100g) desiccated coconut⁠ ✖️ 125g (roughly 8) medjool dates, pitted and softened⁠ ✖️ 1 tsp vanilla extract⁠ ✖️ pinch of sea salt⁠ ⁠ FILLING:⁠ ✖️ 6 egg yolks⁠ ✖️ ¼ cup (75g) rice malt syrup⁠ ✖️ zest + juice of 2 lemons (½ cup)⁠ ✖️ ¼ cup (50g) coconut oil, melted⁠ ⁠ 01 Combine all base ingredients in a food processor and process until a sticky crumb forms. Press into a small, 18cm round springform pan.⁠ ⁠ 02 Whisk yolks, syrup, lemon juice and zest in a saucepan over low heat for 1-2 minutes, then add the coconut oil. Of course I’ve made some healthy dishes to add to our festive meal tonight with family. Here’s the apple crisp made with almonds, pecans, walnuts,dates, raisins, cinnamon, lime off of the tree on the balcony, real vanilla and the Granny Smith apples. A little chia seed was added to the filling after it was sautéed. To keep in tune with being healthy, white flour was exchanged for almond flour. RECIPE BY HIGH DEMAND. These are seriously so good! They taste much better after being refrigerated. - NON shady peanut butter means just peanuts and salt. None of the additive crap. CRAZY GOOD CHOCOLATE BARK INGREDIENTS: 1/4 cup hazelnuts 1/4 cup raw almonds 1/3 cup large flake dried coconut 1/2 cup cacao powder 1/4 cup pre maple syrup 1 tablespoon smooth almond butter (optional) Pinch fine sea salt METHOD: Preheat oven to 180 degrees - line a 9" square pan or a small baking sheet with 2 pieces of parchment paper - one going each way - set aside. Add hazelnuts and almonds on a baking sheet and roast in an oven for 10 mins. Remove baking sheet and add the coconut flakes and spread out - continue to roast nuts and coconut flakes for another 3/4 min or until coconut is lightly golden - watch closely to avoid burning. Place hazelnuts on several sheets of damp paper towel - wrap the hazelnuts and rub them vigorously with the paper towel until the skins fall off - its ok if not all skins come off. Discard skins and chop the hazelnuts and almonds. In a medium saucepan, melt the coconut oil over a low heat - remove from heat and whisk in the cacao powder, maple syrup and almond butter (if using) till smooth. Add a pinch of salt and stir in 1/2 the almonds and hazelnuts. With a spatula spoon the chocolate mixture onto the prepared parchment lined pan or sheet and smooth out until it's about 1/4-1/2 inch thick. Sprinkle the remaining nuts and all the coconut flakes. Place in freezer on a flat surface for about 15 mins until frozen solid. Once frozen break apart into bark. Store in the freezer till ready to eat. Will melt fast! Hit save and enjoy!! 🫶

Craving a chewy, ooey gooey, chocolatey, fudgy brownie but afraid you can't indulge because it'll veer you way off track from your hitting your weight loss goals? Not with this recipe! Let's just say there was a lot of baking in my house yesterday with Father's Day and these brownies were a hit despite having an ingredient in them that would make you think otherwise ;) As a mom and health coach, I loved that these are packed with good for you whole ingredients and lots of weight loss friendly fiber! Thank you #chocolatecoveredkatie for another keeper!! My kids ate the whole tray before the day was over lol so I'll be making double the recipe tonight for a thicker brownie lol. Ingredients: - 1 15 oz can of black beans (drained and rinsed very well) - 2 Tbsp cocoa powder - 1/2 cup quick oats - 1/4 tsp salt - 1/2 cup pure maple syrup or honey (I used low glycemic date syrup) - 1/4 cup coconut or vegetable oil (I subbed in unsweetened applesauce instead) - 2 tsp pure vanilla extract - 1/2 tsp baking powder - 1/2 cup to 2/3 cup chocolate chips (Not optional. Omit at your own risk) - optional: more chips, for presentation Directions: 1. Preheat oven to 350 F 2. Combine all ingredients except chocolate chips in a good food processor, and blend until completely smooth. Really blend well. (A blender can work if you absolutely must, but the texture—and even the taste—will be much better in a food processor) 3. Stir in the chocolate chips, then pour into a greased 8×8 pan. 4. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up!

Dessert at 9p last night:🍊 Found some peaches hiding in the bottom of my freezer that we harvested from our own trees 🍊 Defrosted, made a peach crisp with oats and whole wheat flour and maple syrup... added a splash of almond extract to the peaches and 2 tbl Arrowroot to thicken it up. Holy smokes! So yummy! Simple, Easy, and Refreshing Fruit Gelee Cups 🍓🍋🍇🥝🥭🍈🍑🍊 This fruit cup can be a great snack or light after dinner treat. Using whatever fresh fruit you have laying around and adding to it flavored gelatin, gives you a balanced sweet treat with whole food vitamin C and protein. You can sweeten it with honey or sugar, add aromatics like fresh mint, lemon or orange zest, or even rose water. You could also omit the sweetener and use half juice. Whatever you're in the mood for! INGREDIENTS 500ml water, divided 5 teaspoons gelatin (I used @vitalproteins beef gelatin but you can also use 2 Knox envelopes) 2 tablespoons sweetener of your choice Aromatics of your choice (lemon zest, mint, rose water, etc) Chopped fresh fruit Glass jars for storing DIRECTIONS Pour 250ml of plain water in a bowl and sprinkle with the gelatin powder. Transfer the remaining 250ml of water (or juice if you prefer), to a saucepan and bring to a boil. If you want to use lemon zest or orange zest add that to the saucepan, along with the sweetener if desired. Stir until the sweetener is dissolved. Add 2 spoonfuls of the hot liquid to the cold liquid with the gelatin powder, and stir. Then transfer the cold mixture back to the hot mixture and whisk until fully dissolved. Then transfer the warm mixture to a glass or metal bowl and set in the fridge to cool. If you would like to add rose water or fresh mint, you can do so when the gelee mixture has cooled. Meanwhile slice or dice whatever fruit you would like to use and divide it into glass jars, whatever size you would like your serving to be. Once the gelee mixture has cooled, but not gelled, stir in the rose water or chopped fresh mint if using, and then pour evenly into the fruit jars. Place the fruit jars into the refrigerator until the gelee has set and serve. SWEET POTATO CARROT CAKE with a SWEET POTATO PECAN PEANUT BUTTER FROSTING!! 🔥🔥😋🤤 I adapted the @forksoverknives carrot cake recipe & @dreenaburton sweet potato frosting recipe into an AH-mazing 😱😱dessert combo There are no words for how wonderful this cake is!!! 🌅 My recipe👇 Cake ingredients: 1 1/2 cup oat milk 8 dates pitted 1/2 cup mashed sweet potato (roasted & cooled) 1 tsp vanilla 1 1/4 cup oat flour 2 tsp baking powder 1 tsp baking soda 2 tsp cinnamon 1 tsp nutmeg 2 cups shredded carrots 1/2 cup chopped walnuts Frosting: 1/2 sweet potato (roasted & cooled) 1/4 cup (powdered) coconut sugar (use coffee grinder to turn into a powder) 1/4 cup pecan peanut butter (homemade using-2 cups peanuts & 1 cup roasted pecans blended in #myvitamix ) Dash of sea salt Dash of vanilla 2 Tbls oat milk 👉Preheat oven to 350. Line an 8x8 pan with parchment 👉Add oat milk, dates, sweet potato, & vanilla in medium bowl and let sit for 15min.
