St. Patrick’s Day is fast approaching. ☘️ A few years ago my older son wanted a box of Lucky Charms to make a Leupracaun Trap. I decided to make my own blood sugar friendly swap! Magic Spoon Fruity Cereal Cut up pieces of LaNouba marshmallows How easy is that?! Sorry Lucky Charms! I also used natural food coloring and made London’s usual breakfast pancakes green. Then added whipped cream and low carb sprinkles. It doesn’t need to be harder or complicated or involve tricky bolusing for special days. It took a little bit of imagination and planning but it was worth it! I plan on making the same thing this year for St. Patrick’s Day! Winter Bliss Cookies Recipe Ingredients: 1 cup almond flour 1/2 cup unsalted butter, softened 1/4 cup powdered erythritol 1 teaspoon vanilla extract 1 cup chopped pecans 1/2 cup unsweetened shredded coconut Powdered erythritol for dusting Directions: Preheat the oven to 350°F (175°C). In a bowl, combine almond flour, softened butter, powdered erythritol, and vanilla extract. Mix until a dough forms. Fold in chopped pecans and unsweetened shredded coconut. Shape the dough into small balls and place them on a parchment-lined baking sheet. Bake for 12-15 minutes or until the edges are golden brown. What is your meal/food plan for Christmas? I love to hear how others celebrate and how our community adjusts our traditional meals, food restrictions, and our self-expectations, or all 3. I'll go first: Christmas Eve well have charcuterie and I will make meat burek, it's a thin buttery pastry filled with seasoned meat. For Christmas Day we'll have a prime rib roast and horseradish, Yorkshire pudding, rosemary potatoes, a fresh veggie tray, deviled eggs, and my mom is bringing a pecan pie. I'll have no more than 3 bites of pie. We will incorporate extra movement after meals, like squats 💪🏼 💪🏼 and 3 fast up & down the stairs races 😁. The Keto Lady Snowball Cookies Recipe - 2.5 Cups of (sifted) almond flour 3/4 Cups powdered sweetener 1 Stick of butter - softened 1 Tsp Vanilla 1 Tsp Almond Extract Pinch of salt The Keto Lady Cranberry Sauce (Optional) Instructions- Preheat oven to 350 Combine the almond flour, 1/2 the sweetener, salt in a bowl. Then add in extracts and softened butter until you get a dough. Using a measuring tablespoon, measure a tablespoon of dough and roll into a ball. Place onto your ( parchment or silicone) covered baking sheet. Once done rolling all 16–18 “snowballs” bake for 10 mins. Remove from oven and cool down before cooling in a baking rack. Using leftover sweetener dust the cookies till they look like snowballs! If using the cranberry sauce onto add a tiny dollop!! Any flavor rocks when it comes to pound cake but Cinnamon Streusel may be my fave. Makes the whole house smell like Christmas and tastes amazing. I’ll drop my recipe below so tag me if you make it so I can applaud your success. ✌🏻❤️🎯🎄 • Mary’s Cinnamon Streusel Pound Cake • In a mixing bowl whip together: 3/4 C (6oz) softened butter 1 16.33oz can of Coconut Cream (I used the Thai Kitchen brand) 2 Tbsp vanilla 4 oz softened cream cheese 10 eggs 1/2 C water • In another bowl sift together: 2 cups Coconut Flour 1 cup sweetener (I used Lakanto Monkfruit Sweetener with Erythritol-Golden Version) 1 tsp salt 2 tsp baking powder • On low speed, slowly add the sifted mixture to the wet mixture and mix until incorporated. • Pour all but one cup of the batter into a lightly greased loaf pan. Take the remaining one cup and add 3 Tbsp sweetener (I used the one above) 1 heaping Tbsp Cinnamon 1 tbsp milk (I used sf Macadamia Milk) Mix it all together and plop on top of the batter in the loaf pan. Criss cross back and forth across the mixture a few times with a knife. • Bake in a preheated 325 degree oven for one and a half hours. Once the top browns (30-45 min) cover in foil and continue baking. Do the knife test for doneness...should come out relatively clean. • Remove from oven and let cool at least a couple of hours (it’s actually even better the next day). • Drizzle (Optional): Mix together a few Tbsp Swerve Confectioners and Milk (I used sf Macadamia Milk). Looking for a holiday dessert that will be loved by everyone, keto or otherwise? These tarts are one of my favorite festive treats. My MIL even raves. **** Crust: -1.5 cups almond flour -1/2 cup hazelnut meal/flour (or more almond flour) -1/3 cup butter, softener -1 egg ** Filling: -4oz cream cheese (or brie), cubed into 12 -2 cups frozen raspberries and blackberries -2 tbsp water -12 pecans, chopped **** -Preheat oven to 375F. -Set berries and water in a saucepan on the stove over low heat, so they simmer but not violently so. Stir ocassionally -Mix crust incredients until a dough forms -Mush dough into 12 greased muffin tins -Bake for 5 minutes, until firm -Take out of the oven, top with cheese, then reduced berry mixture, then pecans -Bake an additional 5 minutes, until cheese is melty and crust is brown *** These tarts are a little finicky to get out of the muffin tins. I have the best luck with the silicon kind that I can “pop” out. I also have come to love making them in mini tins for more cuteness. *** I ALMOST added some allulose to my berries and crust, but I'm so glad I didn't. This was a delightful tart (haha, get it?) treat.
