It has been such a long time since I posted my favourite recipes here. This is true I am super busy these days with my Nutrition studies, work and family but this is also true that something wonderful has to be shared with you guys:) If you love all things LEMON like I do or simply want to brighten up your weekend with fragrant and scrumptious loaf this simple recipe is for you ☺️ LEMON LOAF LIKE NO OTHERS 150 gr soft butter 150 gr caster sugar 4 eggs 150 gr almond flour 50 gr white flour (you can use gluten free- 60 gr then) 4 tbsp lemon juice Lemon zest from 2 lemons 1 tsp baking powder SYRUP Juice of 2 lemons 1-2 tbsp of sugar 1. With electric mixer whip soft butter with sugar for a min or two until fluffy and pale. 2. Add 1 egg at time mixing well until well blended before adding another egg. 3. Mix all dry ingredients in a separate bowl. 4. Combine batter with dry ingredients with SPATULA (this is important, we don’t want to overdo it with the mixer!); add lemon zest and lemon juice. Mix once again until just blended. 5. Transfer to a baking tin lined with baking paper and bake at 180 C for 40-45 min (depending on your oven, always check with wooden stick). Meanwhile gently heat the juice of 2 lemons with sugar. Remove the loaf from the oven and while hot prick it multiple times with a wooden stick or a tooth pick, then slowly pour over the syrup spreading evenly. Let it rest for 5-10 minutes in the tin then remove and transfer to a cooling rack to cool down. Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal. In a large bowl, whisk together the wet ingredients: eggs, coconut sugar, peanut butter, coconut oil, and vanilla extract until smooth and well combined. In a separate bowl, combine the dry ingredients: almond flour, rolled oats, baking soda, and salt. Mix thoroughly. Gradually fold the dry ingredients into the wet mixture until just combined. Stir in most of the chocolate chunks, reserving some to sprinkle on top. Spread the batter evenly in the prepared pan. MUST TRY! These almond parmesan chicken fingers are absolutely delicious. I cooked them in the airfyer on some baking paper and they came out perfectly crispy and tender. Ingredients: 450g chicken breast 1/2 cup flour of choice 1 egg, beaten 1 cup freshly ground almonds or almond flour 1/4 cup finely grated parmesan cheese 2 cloves crushed garlic 1.5 tsp salt 1.5 tsp paprika Black pepper to taste Optional: chilli powder Method: 1. Pound the chicken to tenderize 2. Slice each breast into 3 pieces 3. Mix the almond flour with the garlic, salt, paprika and pepper 4. Dip each piece of chicken in flour to coat, then into egg, then coat with almond mixture 5. Place on baking paper in preheated airfryer and cook for about 8-10 mins on each side. This recipe meets all my requirements of being grain, egg, and dairy free, using simple ingredients, and tasting like really good traditional brownies! Ingredients * 2 cups almond flour * 2/3 cup coconut sugar * 2/3 cup cacao powder * 6 tablespoons avocado oil * 2 tablespoons ground chia seeds * 6 tablespoons water * 1/2 teaspoon salt * 2 teaspoons vanilla extract * 1 teaspoon baking soda * 1 cup chocolate chips Instructions 1. Preheat your oven to 350 degrees. 2. Grease a 9"x11" glass pan. 3. Place the ground chia seeds in a cup with the water and whisk with a fork to combine. Let sit for at least 5 minutes. 4. Gluten free everything bagels bits. I love trying and exploring new recipes from the web. I came across this one via @eatinghealthytoday. What motivated me to make them is they only have three ingredients, are gluten free and they don’t take too much time to make, which is perfect for me 😁. The result was amazing and I am definitely going to make them again. You will need 2 cups of almond flour, 1/2 of Greek yoghurt and 1/2 tsp of baking powder. *almost* 5-star gluten-free scones   Just got this comment along with a 1-star rating on one of my favorite recipes on TBG, which has over 50 5-star reviews:   “I’m confused where all the great reviews came from, because I followed this recipe to the letter and ended up with scones that looked great, but crumbled into dust when picked up. I realized there is no Xanthan gum in the recipe - the one ingredient that would hold them together! Very, very disappointed!”   These kinds of reviews feel very “cancel culture-y” because there’s an easy fix for crumbly GF scones (detailed below). In fact, there are easy fixes for most recipes. Flat cookies? Add more flour next time. Watery fruit crisp? Use more starch.   Why throw out the entire recipe just because it didn’t turn out 100% perfectly on the first go?   As a content creator, I work very hard to make my recipes as foolproof as possible. But there are factors beyond my control, like if a different brand of flour is ground more finely or more coarsely, it will absorb moisture differently, and the recipe may need to be adjusted. Humidity, temperature, elevation, baking materials, oven accuracy – these can all make a big difference for baked goods.   If you have issues with crumbly GF scones, here’s how to fix them: add more liquid and work the dough more. While doing this with wheat flour scones will make them tough, my gluten-free scone dough likes extra moisture and kneading.   Because there’s no xanthan gum, the liquid joins with the protein in the egg, almond flour, oat flour, and sticky tapioca and sweet rice flours to help them hold together. Working the dough helps activate the sticky ingredients and helps the scones hold together better too. If you ever have problems with one of my recipes, leave a comment on the recipe and I’ll be so happy to help troubleshoot. I got a bit creative with a favorite @jesseszewczyk ‘s #matchaamaretticookies today. I love this recipe from the #cookiesthenewclassics cookbook that @clarksonpotter sent me a review copy of back in 2021 in the midst of covid lockdown when I made endless cookies with whatever ingredients were available. Remember when flour, butter and toilet paper were hard or impossible to buy? This #matchacookierecipe is brilliant and I while I have several recipes that use almond flour, sugar, egg whites, almond & vanilla extract, this recipe has some unique steps. One of them is the rolling in granulated sugar and then powdered sugar to create a beautiful crackle. I have made these many times before and they turn out beautifully but this time I wanted to try making them with xylitol. I made powdered sugar with xylitol too with my VitaMix which turned out beautifully by the way. Now the science behind why these didn’t turn out the same, yet very delicious, will have to be explained by a food scientist. Regardless they are scrumptious and I not only made #matchacookies but I also tried make some with #goldenmilkpowder and those are so satisfying too. ALMOND FLOUR WAFFLE, a yum HEALTHY SNACK for kids with much needed fats and protein. This recipe makes easily 2 mini waffles. Increase the flour:milk ratio accordingly. (I had to make an immediate another batch as the demand was more) An instant treat in a mini waffle maker, this waffle has no sugar, so you can turn it sweet or savory with the toppings. 1. Preheat waffle maker as per the machine instructions. 2.Meanwhile, Add all these in a bowl and give a smooth whisk. 🧇Almond flour-1/2 cup 🧈Melted butter - 3 tblspn 🥛Coconut milk(or any milk/buttermilk)-1/4 cup( add extra if it's thick) 🥚Egg-1 ( you can omit it and add extra milk / buttermilk), replace with flax egg(1 tblspn flax powder with 3 tblspn of water sitting for 5 min) 🥄Baking powder-1/2 tsp (increase to 3/4-1 tsp if not using egg) 🍚Salt-a pinch 🥫Vanilla essence-1 tsp The batter will be similar to a crepe/dosa more towards thinner end. 3.
