Add the dried spices and paste and saute until aromatic. Add tomatoes, lentils, stock cubes and water. Bring to the boil then lower heat and simmer for 15 minutes or until carrots are softened. Add black beans and 1 tbsp of coriander, heat through season with salt and pepper (I like to blend a really small amount, about 200mls then add it back to the soup to give a thicker consistency), then serve topped with remaining coriander and sliced chillies. Served with sourdough and hummus 😋

My sleep deprived face is definitely not a suitable advert for this particularly funky looking piece of ginger but I promise you it’s brilliant! It has numerous benefits that Google will soon tell you including being brilliant for your digestion. I think it’s great raw grated into fruit and yogurt or porridge or honey and hot lemon but loads of people don’t - my sister thinks it’s ‘rank’ and double checks anything I make her doesn’t have it in 👀 But what I really wanted to say is that grating it into cooking is brilliant as the flavour is much easier to disguise if you’re not a fan - grate it into curries or chilli or anything similar 👍🏼⭐️ Another massive benefit of eating ginger like this is that it’s incredibly cheap!!! Todays budget friendly meal prep was this yummy crock pot full of what I call lentil taco soup! (Just made up the name today🤣) this meal cost approximately $1.18 per serving and made a whopping 8 servings!! My go at "Peanutty Pork" from a cheap healthy meals video from Joshua Weissman. Couldn't believe I did this but I forgot the peanuts and had to add them after the fact. This dish has a lot of kick to it which I really liked. Wasn't sure if it was due to the less saucy consistency (didn't have cornflower) or something else but I felt like it lacked a little depth of flavour. I might add some of the aromatics earlier next time so they mellow out a bit and aren't too kicky. The best parts of this dinner? I stepped away from work at 6:10 and we were eating at 6:48 (including letting it sit and cool to toddler satisfaction), plus it cost next to nothing! 🎃 ✨Happy Halloween✨ 🎃 Thankfully we managed to get the October obligatory pumpkin picking visit done before the field flooded. I’m really not an autumn & winter gal but I made a promise to myself to embrace these seasons this time instead of tolerating it like usual. I’m always amazed at how much stuff you can make from the inside of pumpkins. They are loaded with vitamin A, C, and fibre and it’s easy to make soup with the flesh 🍲🧡 I never let the pumpkin seeds go to waste (even though it takes a bit of effort to pick them out and dry them), as they're a powerhouse of magnesium, iron, and protein. A quick roast with some paprika turned them into a nice snack. 🌰💪 Finally I made healthy pumpkin muffins using a BBC good food recipe with the insides of the pumpkin, makes them so moist! Guys! You literally have no idea how easy this cauli-lentil salad is to make, let alone how cheap it is too! Recipe and method below 😋 2 cups of mixed lentils: rinse and soak overnight before cooking (this makes them a lot easier to digest) 1 small to medium cauliflower: Chop into chunks, place into a large tupperware, drizzle with sesame oil and tikka style curry powder, close up the tupperware and shake that bad boi. *Leave to rest in the fridge overnight (or for a few hours if you forgot to do that thing after prepping the lentils) Roast the cauliflower at about 160 for 20-30mins, make sure not to burn ❤️‍🔥 Boil the lentils with some sea salt or a veg stock cube (about 15 mins) In a large frying pan, drizzle a little oil of your choice. Crunchy or soft, Saute the kale until your desired consistency has been reached. Once the kale is cooked, stir in the lentils - place in a large mixing bowl, and cover with a thin fresh tea towel - stir occasionally and re-cover until cooled - - this will absorb any extra moisture, because no one likes a soggy salad! I got very very local picked, dug that day produce from the Owenby family. Four huge cabbage. Forty pounds potatoes, two boxes deer apples for juice. $41. The one cabbage fed seven people and nine goats. Fresh food can be affordable. I put local over organic. They practice IPM and I wash the food. Life isn't perfect but this is great. 2 ingredient brownies! These are a treat and do have sugar. But if you are on a budget they are an easy and “healthier “ option without the extra oils and such. Not my invention, I found out about replacing oil and eggs with pumpkin a few years ago and it really works! I used: •1 box @whitelily dark chocolate brownie mix •1/2 cup pumpkin •1/4 cup water There are already chocolate chips in here so no need to add any but you can mix in whatever you want like walnuts, etc. Follow baking directions on box. Mine was about 40 minutes to bake. They came out SO FUDGY AND DELICIOUS. Healthy lunch prep in under 15 minutes 👏 When looking at recipes, make sure there is a source of low GI carbohydrates like wholemeal pasta, a source of protein like the beans and feta, a source of healthy fats like the olive oil and a high amount of veggies, ideally 30-50% of the meal. Homemade hummus with organic garbanzo and great northern beans. Spices: turmeric, cumin, black pepper and ginger. Lemon and @onceagainnutbutter lemon tahini. @carapelliusa extra virgin Olive oil and organic apple cider vinegar. We do love Hope hummus but it’s becoming very expensive so finally got to @wegmans and they are the only one in my area who carry organic dry garbanzo beans. I cooked it it instant pot for 2 hours since I didn’t soak them prior and I put all ingredients except tahini, lemon and olive oil in the pot. I did added vinegar at the beginning of cooking. Easy weeknight meal! It’s cheap, quick, healthy and tasty and you probably already have all the ingredients at home! Slow Cooker Mexican Chicken 20 oz Rotel Tomatoes or Salsa 1.5 lbs Chicken Breasts Packet of Taco Seasoning 1 can black beans, drained 1 can corn, drained (or frozen corn) ½ cup chicken broth Spray crockpot, add in ½ the Rotel or Salsa, chicken, half taco seasoning, beans, corn, ½ the Rotel, qnd top with remaining taco seasoning. Cook 6-8 hours on low or 4 hours on high. Shred the chicken, stir back into mixture and serve! We added brown rice and served in tortilla shells. You could add to salads too. Enjoy.

Recipe 2 Mini pizzas Made with small pita bread, tomato puree, frozen spinach, grated cheese, mozzarella, frikadellen (cheap sausage), onion & mushrooms. Start by cutting the mushrooms, onion and meatballs into small pieces and fry them briefly. By adding shoarma herbs to the frikadel, it gets a shoarma taste. Briefly fry all these ingredients and turn the oven on to heat up. Then put tomato puree on the pita bread and top it with the different toppings. It is best to put a little cheese first and then the rest. I put my pizzas in it for 15-20 minutes, depending on your oven and the setting you use. I myself used 2 onions, 3 chamgigons and 2 frikadellen, but this was too much for 1 person. (Even for 2 meals haha) I recommend sticking to about 1 of each per person and about 2 cubes of spinach per person. cheese and mozzarella to taste. I've heard it all ... eating healthy is expensive ... going vegan is expensive ... following a mealplan is expensive (not to mention inconvenient) 🤔 As with most things nutrition, I just think we tend to overthink and over complicate everything. Eating healthy doesn't need to be expensive! In fact, in my personal experience, my food budget is much more manageable than it used to be. The same goes for preparing meals. If you find that eating healthy is unaffordable and inconvenient, try these tips below. Life can be much easier than it is now! - plan your grocery trips - always have a shopping list! - plan your meals ahead of time - shop online - check the deals, buy housebrands, and give the temptations a miss! - eat most of your meals at home - buy seasonal fruits and veggies - buy frozen fruits and veggies - they were flash frozen at their freshest and won't spoil in the fridge! - eat more plant based protein - hello meat free Mondays ... - stay away from processed foods - if it's in a box or ready made, it's likely to be processed - buy in bulk - it's cheaper and you'll spend less time at the grocery store ... and again, miss those temptations ... - don't shop with an empty stomach and especially stay away from the snack department ... - store food according to instructions and prevent unnecessary spoilage - eat leftovers - they can be perfect for snacking the next day, or used as part of a meal - use the scraps - make croutons from leftover bread, freeze leftover herbs that don't fit into containers, make vegetable stock for soups from vegetable peels - and if you have green fingers ... start your own herb or vegetable garden Still stuck? Mung bean curry with sweet potato and spinach. I wanted to see if I can still make nutritious meals for around £1.50. I’m going to try to batch cook like this once a week to save money. I’m in a really fortunate position to not have to worry too much, but I’m trying to save for the next phase of my life. This has become much harder. I think lentil curries are the cheapest healthy meal you can make. Canned beans are now too expensive. Dried bigger beans cost too much in energy to cook (possibly cheap if you have a pressure cooker). Dried lentils and small beans like mung- if you soak them overnight they take 10-15 minutes to cook. Adding brightly coloured vegetables means that you end up with a dish that’s high in protein, complex carbs, fibre, iron, folate and antioxidants. With a serving of brown rice, yes it was still possible to achieve the £1.50 meal. That said, you do need a store cupboard full of the basic spices. I picked up a kilo of mung beans for £2.50 and it will last weeks. Sweet potatoes are a super cheap orange vegetable, and big bags of spinach are still affordable, especially if you buy the ones that you need to wash yourself. To make this even cheaper you can use frozen spinach. Tesco do a nice frozen leaf spinach that is not chopped. I stand by what I have always said- veganism can be a healthy and cheap lifestyle and one that meets your cultural needs if you want it to be. I really enjoyed this version but I think I prefer mung beans in sweet dishes! Probably the cheapest nutrients on this planet if you sprout them yourself! Things you can sprout: lentils, mung beans, broad beans, fenugreek seeds, peas, alfalfa seeds, broccoli seeds, mustard seeds, raddish seeds, chickpeas, grains, kale, sunflower, buckwheat... 💚Carrots! It’s too expensive and time consuming to eat plant-based! Not! Found this super convenient, large portion (even I couldn’t finish it all 😂), well balanced, ORGANIC, delicious, whole food, plant-based meal for just $2.99 (yes, $2.99!) at our local Grocery Outlet (Santa Clarita). Tossed it in a pan on medium heat. Added some plant milk and veggie broth, and about 10 min later, after it was tender, I served it with some hot sauce and fresh diced green onion. So easy, so good, and so cheap (with leftovers to boot ✅)! Besides super convenient and inexpensive complete meals like this, many plant-based staples are also convenient and inexpensive — e.g. oats and other whole grains, beans, potatoes and sweet potatoes, frozen fruits and frozen veggies to name a few.
