Spinach & Artichoke Spaghetti Squash This meal is delish, healthy and super filling šŸ‘ŒšŸ¼ It is the perfect healthy dinner option and also reheats really nicely for lunch the next day! Ingredients: Squash ā€¢1 Spaghetti Squashā€¢Avocado Oil Sprayā€¢Salt & Pepper Spinach & Artichoke Mixture ā€¢1 Small Onion, Dicedā€¢3 Cloves of Garlic, Mincedā€¢1C Artichokes from a Can/Jar, Drained and Choppedā€¢1/3C Cream Cheeseā€¢1/4C Freshly Grated Parmesan Cheeseā€¢4C Fresh Spinachā€¢2C Cooked Chicken, Shredded or Cut into Cubesā€¢1/2C Shredded Mozzarella Cheese (Optional)ā€¢Salt & Pepper to Taste Method: ā€¢To prepare the spaghetti squash, preheat the oven to 400ā€¢F and line a large baking tray with parchment paper or a silicone mat ā€¢Slice the spaghetti squash in half from top to bottom ā€¢Scoop out the seeds and discard them ā€¢Drizzle the inside of the squash halves with avocado oil and sprinkle with salt and pepper ā€¢Place the halves face down on the prepared baking tray and pierce a few times with a fork ā€¢Bake for 40-60 mins depending on the size of the squash. The squash is ready when the interiors can be easily pierces with a fork ā€¢Scrape the inside of the squash halves with a fork to release the squash and form ā€˜spaghetti strandsā€™ ā€¢While the squash bakes prepare the filling Spinach & Artichoke Mixture ā€¢Heat 1tsp of oil in a large pan over medium heat. Once hot, addĀ the onions and garlic and cook until they begin to soften, about 5 minutes ā€¢Add in the artichokes and cook for about 5 minutes. Season with Ā½ teaspoon salt and pepper ā€¢Add the cream cheese and Parmesan cheese and cook for an additional 2 minutes ā€¢Add the spinach leaves to the mixture and cook until just wilted and then remove from the heat ā€¢Put the oven on broil and to an ovenproof dish add the spaghetti squash topped with the chicken and spinach and artichoke mixture. Sprinkle the mozzarella cheese on top and place in the oven until the cheese is melted and bubbly. If you are not using the mozzarella cheese then omit this step and just plate the squash, chicken and spinach and artichoke mixture instead. ENJOY!

Black bean & corn salsa šŸŒ½ā˜€ļø This recipe is from my sister Patty, who I call my master gardener. She grows one of the most impressive gardens I have ever seen and happens to be an amazing cook as well! Ingredients: 1 can black beans drained and rinsed 2 cups fresh sweet corn (or thawed from frozen) Ā½ cup fresh cilantro chopped Ā½ cup chopped onion Ā½ cup chopped tomato 1/3 cup fresh squeezed lime juice from 2 limes 3 tablespoons extra virgin olive oil 1 tablespoon cumin Instructions: Rinse and drain black beans and dump into a medium to large mixing bowl. Add sweet corn. Chop the cilantro, onion and tomatoes and add to the mixture. Cut limes in half and squeeze enough juice for the 1/3 cup portion and add to mixture. Add olive oil and cumin. Stir gently to blend ingredients. Put into smaller glass bowl. Cover and let sit in refrigerator for about 30 minutes to allow flavors to blend. Sharing with you one of my favorite EASY dinner recipes today! šŸ™ŒšŸ¼ Honey turmeric skillet chicken recipe So, this is a recipe I recently created from revising 2 other recipes + adding turmeric. I thought it was pretty tasty and hopefully you will like it too! Makes about 6 servings and takes about 30 minutes to prepare. Ingredients 1 Ā½ -2 lbs. chicken breast, boneless and skinless, cut up if necessary Olive oil or butter, about 2 Tablespoons Sea salt and pepper to taste 2-4 garlic cloves minced 1/3 cup honey 1 Ā½ Tablespoons apple cider vinegar 1 Tablespoon soy sauce 1 teaspoon ground turmeric Instructions Cut chicken breasts into smaller pieces of desired. Heat skillet on medium and add olive oil or butter. Add chicken pieces and let cook for 5-10 minutes, turn and cook other side for same time. Salt and pepper lightly while cooking, if desired. While chicken is cooking mix the honey, vinegar, and soy sauce and turmeric. When chicken is cooked through, add minced garlic and the sauce mixture to the chicken. Stir to combine chicken and sauce. Cover skillet and simmer on low temperature for 5 minutes. Serve with a side of veggies or salad for a low carb meal!Ā Ā The only carbohydrate in this recipe is the honey and for 6 servings should be about 13 grams per serving. Recipe notes I get my chicken breasts from my local meat market, and they are quite large, so I cut them up into smaller pieces to allow them to cook faster. You could also use chicken thighs for this recipe. I use sea salt for all my cooking, but you can also skip the salt if you are trying to avoid extra sodium. I use local raw honey, but any honey will work. One of the changes Iā€™ve noticed with following the healthy gut thing I am doing is that my cravings and ā€œNEEDā€ for sugar, ice cream, cheese, Popcorn, late night snacks and unhealthy crap has just faded away. I almost didnā€™t realize it was gone until I stumbled upon this pop-up event with food trucks full of things that normally I would love but right now it just turns me off. & I realized I canā€™t tell you the last time I had a snack after dinner which is normally a nightly event. Looking for a low carb pancake recipe? šŸ„ž I tried this recipe last weekend and was surprised at how tasty they actually were. I love šŸ’“ when I hear from current clients and they are seeing real progress. Karen started with me as a new client in January. She had been eating Whole Foods for a while but was not seeing as much progress and wanted to work with me so she would have accountability. This girl is totally rocking the program. She already had the mindset of avoiding the scale so she didnā€™t have a starting weight but she has definitely seen progress in how she looks in the mirror and how her clothes are fitting. This is her most recent updateā€¦ ā€œJust an update on my way progressā€¦ I did not weigh at the start of this, and I really don't regret it I thought it would set me back and I wanted to just focus on being healthier instead of getting discouraged with weight loss. Fool-proof lowcarb + keto pancakes. šŸ„žšŸ„žšŸ„ž Trust me, youā€™re going to want to make these for you and your crew! . I havenā€™t posted one of my all time favorites in a while. You guys have told me you love this recipe and i agree! Itā€™s hands down the best way Iā€™ve experimented with pancakes over the past couple of years. . Two key things to the pancakes: almond flour can be grainy, so I like to blend the batter. Not absolutely required, but I recommend it. And second: let the batter sit for a few minutes if you can and be patient while you cook them on slow! Low and slow is super key here. . For the pancakes: . 1.Blend two large eggs, 1/3 cup almond milk (unsweetened), vanilla extract, and 1 tablespoon melted coconut oil. . 2.Then add 1 1/4 cup extra fine almond flour, sea salt, 1 tsp baking powder, and tablespoon or two of sweetener. I like to use @lakanto confectioners monk fruit. . 3.Blend again. Itā€™ll be a little liquidy at this point but let it sit and itā€™ll thicken up a bit. Feel free to add nuts, chocolate chips, or fruit. . 4.Once youā€™re ready to make them, on low-medium heat add your batter to an oiled or buttery pan and cook. Flip when bubbly. Remove and enjoy while warm with sugar free syrup, jam, or a combination. . Of course... use your imagination and load it however you want. . Add this to your dinner rotation... My favorite Bourbon Chicken! šŸ˜Š Ingredients ā€‹2 lbs boneless chicken breasts, cut into bite-size pieces ā€‹1 -2 tablespoon olive oil ā€‹1 garlic clove, crushed ā€‹1/4 teaspoon ginger ā€‹3/4 teaspoon crushed red pepper flakes ā€‹1/4 cup apple juice ā€‹1/3 cup light brown sugar ā€‹2 tablespoons ketchup ā€‹1 tablespoon cider vinegar ā€‹1/2 cup water ā€‹1/3 cup soy sauce ā€‹ Directions -ā€‹Heat oil in a large skillet. -ā€‹Add chicken pieces and cook until lightly browned. -ā€‹Remove chicken. -ā€‹Add remaining ingredients, heating over medium Heat until well mixed and dissolved. -ā€‹Add chicken and bring to a hard boil. -ā€‹Reduce heat and simmer for 20 minutes. You can serve it with rice or for a lower carb dinner serve with a salad instead! I do make a few adjustments: I leave out the red pepper flakes only because we prefer the taste without. I also use lite soy sauce to reduce sodium, and try to use fresh garlic and ginger instead of powder. Most of the ingredients are healthy. You might not be aware that ginger is an anti-inflammatory food that can help reduce the pain and swelling of arthritis if used regularly.Ā  It also can help prevent cancer and is good in tea when you have cold or flu. My FASTer Way journeyšŸ’˜ I was where many of you are. Spinning my wheels between work, raising kids, and all my volunteer obligations, I could barely take care of everyone else, I definitely didnā€™t prioritize myself. I have struggled with my weight since high school and watched my mother struggle with her weight her whole life. I was determined very young not to follow in my motherā€™s footsteps, yet I did. Insecure about my body and constantly dieting and exercising was how I lived my first 20 years of marriage and having babies. I decided to refuse to let that cycle continue.
