Lamb chops with pumpkin risotto and salad. Just FYI, she was so hungry after child care today she actually ate 3 small chops and all of her risotto and most of her salad. As a special treat, today we gave Rika her first Yakult. I made the risotto the night before using my @kitchenaidausnz multicooker, it’s so easy to use and I hate standing around making sure the risotto doesn’t stick to the pan. So the Kitchen Aid actually has a moving arm to stir the risotto. Also perfect when I’ve done everything and let it sit aside to cook whilst I prep the lamb ready for the next day. Pumpkin lately has definitely been one of her favourite vegetables lately and perfect for a winter night. Food prep is a key part of our dinners, if I don’t we might not have dinner till quite late and for Rika it’ll be her witching hour. I know for some the absolutely hate slaving away in the kitchen but for me seeing her eat so well and enjoy her meals makes it all so worthwhile. Also if you prep right it doesn’t actually take that long to cook a nutritious and healthy meal for the family. In the series of posts, Dr. Cindy Kin, a colorectal surgeon at Stanford University, shares some of her favorite simple, flexible, and nourishing meals that are sure to keep you and your colon happy and healthy. Today, she shares one of her family's favorite dinner recipes, Rainbow Wraps. 1. Mix a couple spoons of black rice (“forbidden rice”) into brown rice, and it comes out a lovely purple hue. 2. Cut up some red peppers, orange carrots, and green zucchini. 3. Make crispy tofu yellow by tearing up chunks of firm tofu and tossing with turmeric, arrowroot starch, nutritional yeast, and garlic powder. Air fry the tofu for 10 minutes at 390F. 4. Blue is the hardest color to make, but for those rainbow purists out there, steep some butterfly pea flower tea and pour a bit of it over firm tofu strips while sautéeing them. 5. Place the rainbow of prepared ingredients onto nori seaweed sheets and let everyone make their own wrap. Serve with dipping sauce such as miso or ponzu sauce, or whatever you have around! One of our fave dinners is fried rice w sliced steak on top! Method: Cook your rice and let it cool (this is for better digestion later on) I added some @gevityrx Teriyaki Bone broth marinade to the water as the rice cooked for extra nutrients Cook off an onion, add a packet of @dorsognasmallgoods nitrate free bacon, cook that for a few mins, then add some carrot, capsicum and broccoli, when that’s had a few mins (you can add a little bit of water to the pan here to help with steaming the veg if you like), then add your cooked and cooled rice to the pan, fish sauce and tamari (measure with your heart), ensure rice is hot all the way through, add 1-2 eggs that you’ve whisked and ensure it’s cooked, just takes couple mins. While your finishing off the fried rice have your steaks cooking - we serve ours medium rare over the rice, add some fresh coriander and some extra soy sauce. And you’re good to go! It’s the bomb and a house-favourite! *you can use any veggies that you like I just always use whatever I have at the time. This is such an easy and nutritious meal and is quick for mid-week when you are lacking time and F’s! It’s also great for leftovers for lunch the next day 🙌🏻 What’s your fave mid-week dinner? ✨Carrot & Potato Soup ✨with chia sourdough bread Local seasonal produce are the best for making comforting nutritious soups 💫 Soup are ideal for this time of the year. Find at your local market quality products to make the most delicious soups this autumn 🍂 Method 👩‍🍳 Cook for a couple of minutes 2cm of fresh root ginger and 1tsp of ground turmeric in 2 tbsp of coconut oil. Poured over 1 tin of coconut milk and 4 cups of filter water with 2 tbsp of Bouillon. Cook for about 10 minutes at low heat. Cut in small cubes carrots and potatoes. Roast them for 20 minutes in the oven with a little olive oil and sea salt. Mixed the roasted carrots and potatoes, the coconut milk mixture, and 2 tbsp of apple cider vinegar in a blender until you have a good texture for your soup. Served the soup with some roasted fennel, alfalfa soups and plenty of freshly ground black pepper. One of our favourite EASY dinners: FISH TACOS⠀ ⠀ I keep tempura or lightly battered fish fillets in the freezer for a quick lunch or dinner. The kids love them (most weeks) as do my husband and I. They’re quick to cook in the oven on some brown baking paper too!⠀ ⠀ This coleslaw is from Harris farm and comes undressed. I add a tablespoon of my favourite mayo (good fat) and some herbs (in this case dill). ⠀ ⠀ All tortillas are not created equal. Look at the ingredients list and aim to go for those with the smallest list of ingredients. Corn tortillas like those in the La Tortilleria’s range are a great option. ⠀ ⠀ I know sometimes little tastebuds won’t dig the corn version so if you wanted to keep it cleaner (and have the time) but go for a flour tortilla making your own is actually quite basic!

Smoky Black Bean Smash Burgers Smoky Black Bean Smash Burgers! ~ $26.25 Ingredients: -1 cup quinoa, uncooked ~ $1.35 -15oz can black beans, drained and rinsed ~ $0.99 -1/2 red bell pepper, diced ~ $1 -1/2 cup yellow onion, diced ~ $0.50 -1 teaspoon chili powder ~ $0.15 -1/4 teaspoon smoked paprika ~ $0.10 -1 teaspoon garlic powder ~ $0.15 -1/2 teaspoon cumin ~ $0.10 -1/2 teaspoon cayenne powder (optional) ~ $0.15 -Salt and pepper ~ $0.05 -1/2 cup Panko bread crumbs ~ $1.20 -6 burger buns ~ $2.00 -6 slices cheddar cheese (optional) ~ $3.60 -Toppings (lettuce, tomato, avocado, etc.) ~ $5 Instructions: 1. Begin by bringing 1 3/4 cups of water to a boil in a medium-sized saucepan. Once boiling, add 1 cup of quinoa and reduce to a simmer for about 15 minutes, or until all of the water is absorbed. Remove from heat and transfer to a large mixing bowl. 2. Preheat oven to 375° F. 3. In the bowl with the cooked quinoa, add black beans, bell pepper, onion, chili powder, smoked paprika, garlic powder, cumin, cayenne, salt and pepper. Mash/mix together until combined. 4. Grab this recipe for quick and easy school night dinners. All you need is 20 minutes and voila, you have a healthy and delicious meal. Spicy Tofu Udon Noodles 1 pack of Udon Noodles ½ medium red onion, finely chopped 4 cloves of garlic, finely chopped 1 tablespoon fresh grated ginger 1 red chili, finely chopped 3 bok choy, sliced 300 grams shitake mushrooms, washed and sliced 2 tablespoons toasted sesame oil 2 tablespoons rice vinegar 1 tsp maple syrup 1 tsp toasted sesame seeds 90 grams good quality soy sauce ½ tsp dry chili flakes 1 pack of tofu, drained and pressed dry with a kitchen towel *to serve Lime wedges Sesame seeds 3 -4 spring onions, washed and finely chopped Method: Cook the noodles according to the package instructions. Wash with cold water and drain. Set aside. In a large enough saucepan to hold the noodles, heat the sesame oil over medium heat. Add garlic and onions for about 3 minutes, then add the mushrooms. Sauté for 5 minutes, then add the bok choy and continue sautéing for another 5 minutes. In a separate bowl, combine the soy sauce, freshly grated ginger, chopped fresh chili, rice vinegar, maple syrup, dry chili flakes, sesame seeds, and mix well. Pour the mixture in a saucepan, and boil for a few minutes, then add the noodles, tofu and slowly toss it to combine the sauce and veggies together. I learned two very important things from this meal: 1. Never stop offering things. Eldy hasn’t eaten tomatoes for what must be months. (He loved them, then he just went off them and wouldn’t touch them). I haven’t stopped popping them on his plate when we eat them though. Tonight, he went straight for the tomatoes and absolutely devoured them! 2. Never serve whole, cooked, tomatoes to a toddler. 😂 Eldy bit into one, it burst all over his face, all over the wall, dropped into his eye and then he lost it completely and it was game over for the meal 🙈🤣 Only saving grace is it wasn’t hot! Dinner was lentils, red onion, parsley, crushed garlic, red wine vinegar, olive oil, with roasted tomatoes in thyme and balsamic vinegar. Temperatures are soaring here in Southern Portugal, and I was looking for something light and refreshing to eat. I have never tried watermelon gazpacho and was pleasantly surprised. I added cucumber, tomatoes, a handful of fresh mint leaves and half a red chili. I also gave it a tropical twist by adding a few strawberries. This watermelon strawberry gazpacho can be made two days in advance, and it is super quick and easy to make. Perfect for a starter or for a light dinner. I topped it with vegan feta cheese (recipe is a few blog posts behind) and served it with freshly baked sourdough bread which everyone loved. Pumpkin Season is upon us which calls for a Protein Pumpkin Pancake recipe. Save this recipe for your next weekend morning breakfast. - 2 cups of Kodiak Cakes Powercake Mix (can add additional collagen protein if desired) - 2.5 tsp of Pumpkin Pie Spice - 1 cup of organic pumpkin puree - 1.5 cups of coconut milk (or milk of choice) - 1/4 cup of organic cane sugar - 1/4 cup of brown sugar - 2 large eggs - 1 tsp of vanilla extract - 4 tablespoons of melted coconut oil or butter Whisk together pumpkin, milk, sugars, eggs and vanilla. Add the melted oil or butter. Lastly whisk in your Kodiak Cakes and pumpkin pie spice. Cook on a hot griddle and flip half way through. Serve with pure maple syrup. Time to celebrate taco Tuesdays with some...FISH TACOS 🌮 I love the variety of tacos out there. So many filling options!!! A quick and easy one to add to your siestas. Also a great way to add fish to your diet. I love all seafood, but fish is actually my least favourite. However, when eaten like this, there are no complaints from me! And yes, I used mt airfryer for this one 🤣 Fish tacos Ingredients: - 2 fillets of white fish (can be cod, basa etc. I used basa this time)  - taco seasoning  - 2 eggs  - 1 cup breadcrumbs  Serve with  - 8- 10 soft taco shells  - avocado  - seafood sauce  - sliced lettuce  - corn  - sliced red cabbage  Steps:  1. Cut the fish down in half and then slice into 7cms lengths. You get around 8- 10 sections for 2 fillets 2. Roll the fish into the taco seasoning. Tap off excess. Dip into the eggwash and then coat in breadcrumbs.  3. Spray airfryer basket and place coated fish inside 4. Cook 8minutes in the air fryer, flip the fish and cook for another 5 minutes until golden  5. Assemble your tacos! Stir Fried Broccoli with Lemon & Cashews Broccoli is one of nature’s superfoods if ever there was one, bursting with vitamin C and packed with liver-supporting sulphur. This recipe perfectly combines the tartness of lemon with the creaminess of the cashews for a tasty side dish. INGREDIENTS ½ head of broccoli 1 chilli, chopped Handful of cashews, chopped ½ lemon, sliced 1sp sesame oil METHOD Lightly steam the broccoli for 2-3 mins. Rinse under cold tap to cool.
