Greys - a great all rounder, Butternut - great for roasting and soups, Kent- sweeter, softer pumpkin. Great in quiches, pizza, salad, soup, steamed, mashed and Barbara is a sweet and drier pumpkin compared to Kent. It has a firmer deep orange texture and is great in curries, steamed, soups. Chicken mince & veggie bake - Browned the chicken mince in olive oil with onion, garlic, celery, red peppers, zucchini, butternut pumpkin. When soft, added crushed canned tomatoes, salt, pepper, thyme, oregano, marjoram, worcestershire sauce, splash of tobasco. When the sauce thickened and reduced, added everything into a baking dish and topped with lot's of grated mozzarella cheese. Baked in the oven at 160°C for 45 mins, then turned on the griller for 5 mins to brown the cheese. A lot of the butternuts are ready. I got my "one for each week and a few for the neighbours" with 53 so far with about another 25 still on the vines. That a great increase from last year's 39. I am hoping for a few more to ripen before the winter crops need to take the space. There are a couple of green ones that fell off in the wind last night, they will still taste OK roasted with plenty of butter and salt on them 😉. The random Butternut Squash that popped up in the garden from some compost we added to our soil and ended up growing this enormous squash underneath that very same compost bin provided dinner tonight. Chilli and butternut squash risotto. Chopped it up (using only 1 half, saving the second to remake this dish another night) and fried it in a pan with 4 garlic cloves, 2 homegrown scotch bonnet chillis, and a homegrown birds eye chilli. Cooked for about 4 minutes before adding 1 and a half cups of risotto rice. I made up 4 and a quarter cups of vegetable stock (I used vegeta as I like the flavour more). And slowly ladeled that in, adding another ladle each time it absorbed. (This lasted about 18 minutes). When I was down to the last ladel, I chopped up some homegrown parsley and cracked in some black pepper. Once all the water was absorbed, I stirred in 1 cup of gran padano cheese (parmesan will do). ❤︎︎ 👩🏽🌾Using homegrown butternut pumpkin 👩🏽🍳𝐏𝐮𝐦𝐩𝐤𝐢𝐧 & 𝐛𝐮𝐭𝐭𝐞𝐫𝐛𝐞𝐚𝐧 𝐩𝐮𝐫𝐞𝐞 Makes 4 medium servings, could even go up to 8 small servings -depending on what your dish is. • 1 large butternut, peeled & diced • 1 can butter beans, drained • 2 tsp smoked paprika • pinch of salt 1. Place pumpkin and butter beans in a pot, filling with water to sit just above the pumpkin, no more. Boil until pumpkin is tender (10-15 minutes) 2. Drain. Sprinkle with paprika, salt and pepper. Sunday dinner hosting for @jyotiauluck_81 @ravinderminhasbeer family: served fried artichokes and Burrata salad, and roasted Butternut Squash risotto with fried sage and crispy pancetta for the non vegetarians. Super easy and delicious to make these fried artichokes, I drained a jar of marinated artichokes, dusted them in flour and shallow fried them. They were so flavourful and crispy. A little salt after they come out and put them in my warming oven until ready to serve. I want to talk about risotto. For authenticity, it needs to be a porridge consistency. It’s a major pet peeve for me when it’s served lumpy, and overcooked. At the end, it absorbs the broth quite quickly, I like to finish it about 90% and then add the butter, cheese, and more heated broth just before serving so remains more porridge like. #pumpkinrisotto #friedartichokes #butternutpumpkin #yycfoodie #dinnerathome #dinnerideas
