can we enjoy foods that have been labeled as “weight loss” or “diet” foods?? my answer is YES. look- i love zucchini. whether it’s spiralized to look like pasta or in its traditional nature, there’s nothing inherently wrong with zucchini. just like there’s neighing wrong with cake. i think it’s simple but not easy: if you enjoy it- eat it. there don’t need to be any shame about walking into a place that does zucchini noodles just like there doesn’t need to be any shame about walking into a bakery or a place that does wheat pasta. i can tell you that i LOVED these red pepper pesto zoodles from @impasta.co !! they even had vegan buratta cheese that i added on top and it was deeeeelish.

Lange war es still auf diesem Account weil ich mir nicht so sicher war, ob das hier die richtige Plattform für mich ist. Nachdem ich mich in letzter Zeit vor allem gesundheitsbedingt viel mit veganer Ernährung auseinandergesetzt habe und durch unser neues Einkaufskonzept viele neue vegane Produkte und Gerichte kennenlerne durfte bin ich wieder mal bei einer hauptsächlich rohveganen Ernährung gelandet. To make the cashew cheezy sauce: Blend 1/2 cup of cashews 2 tsp miso paste 1/4 cup Blend For the tomatoes sauce, I added 1 tomato to the blender with a pinch of basil, salt, onion powder and garlic powder. Pulse to mix but to keep the texture. Add some cashew cheese and tomato sauce to the noodles to your liking on how much you use. Stir well. Pasta bolognese… raw vegan version. I like to serve it like this: 🌼in my serving bowl, I lay a bed of rocket salad 🌼 then the angel hair zoodles 🌼then the bolognese sauce (recipe below) 🌼top with brazil nuts vegan parmesan. This was my first raw vegan bolognese and I absolutely loved it; it’s filling but it doesn’t leave you feeling sorry for yourself. The flavours are in par with the meat version, just no death involved in it 🥰 For the bolognese: 🌼2 parsnips 🌼2 carrots 🌼3 garlic cloves 🌼1 onion 🌼1 cup sundried tomatoes 🌼4 roma tomatoes 🌼1 1/2 cups of activated raw walnuts 🌼a good bunch of basil 🌼1 tbsp fresh rosemary 🌼1 tbsp fresh thyme 🌼1 mushroom 🌼1 chilli 🌶️ 🌼salt and pepper to taste Pulse all these ingredients in your food processor until you get a nice bolognese-like consistency (you still want to find some texture in it, so don’t over-process).
