I had the sudden urge to try my hand at my paleo pumpkin bread last week, 11pm on a Tuesday. I went off my chicken scratch iPhone notes recipe from 2021 and with some minor tweaks, I think it’s the best one I’ve made yet 🍞 no dairy, grains, or refined sugar (maple syrup sweetened)! Life looks a lot different for me as of late. Time is valuable and minimal, but this time of year always brings the baker back out of me. Apple is next on my list ✅

The only thing I like better than a spicy, gluten free pumpkin bread is one that also comes together in one bowl! This pumpkin bread is easy to make with almond flour, coconut flour and arrowroot flour. It actually rises and has an addicting crumbly topping. Let’s make a loaf!⁣ ⁣ INGREDIENTS⁣ 1.5 cups blanched almond flour⁣ 1/2 cup arrowroot flour, (or tapioca flour)⁣ 1 tbsp coconut flour⁣ 1/4 cup coconut sugar⁣ 1 tbsp pumpkin pie spice⁣ 1 tsp baking soda⁣ 1 tsp ground cinnamon⁣ 1/4 tsp sea salt⁣ 3 eggs, (or flax eggs – mix 3 tbsp ground flax meal with 6 tbsp warm water)⁣ 3/4 cup pumpkin puree⁣ 1/4 cup coconut milk, (other nut milks will work too)⁣ 1/4 cup pure maple syrup⁣ 1 tsp vanilla extract⁣ ⁣ For the crumble topping:⁣ 1/2 cup blanched almond flour⁣ 1/4 cup coconut sugar⁣ 1 tbsp pure maple syrup⁣ 2 tsp ground cinnamon⁣ 1/4 tsp sea salt⁣ 1/4 cup coconut oil, melted, (ghee or grassfed butter also work)⁣ ⁣ Optional topping:⁣ melted coconut butter⁣ ⁣ INSTRUCTIONS⁣ 1. Preheat oven to 350° Fahrenheit and line a metal loaf pan with parchment paper.⁣ 2. Add all of the dry ingredients to a large mixing bowl and whisk.⁣ 3. Make a hole in the center and add the wet ingredients. Whisk the eggs into the rest of the wet ingredients. Then, use a spoon to combine all of the ingredients until a batter forms.⁣ 4. Pour the batter into the lined loaf pan and smooth out with the back of the spoon.⁣ 5. Use the same bowl (no need to rinse) to make the crumble topping. Combine all of the crumble ingredients with a fork. Crumble over the top of the loaf.⁣ 6. I love baking this time of the year. It’s chilly out, baked goods make the house smell cozy and inviting and pumpkin bread is always a MUST. Recipe below to this cakey pumpkin bread. INGREDIENTS 2 cups almond flour 1/2 cup tapioca flour 2 tbsp. Pumpkin spice 1 tsp. Baking soda 1/2 tsp. Sea salt 2 eggs, room temp 1 cup canned pumpkin purée (not pumpkin pie filling) 1/4 cup coconut oil, melted 1/4-1/3 cup maple syrup - depending on desired sweetness 1 tsp. Vanilla extract 1/2 cup Chocolate chips - optional DIRECTIONS Preheat oven to 350F. Blend/mix all ingredients in a bowl with a handheld mixer or with a spoon. Happy first day of fall!🍁🎃🍃 • • • Paleo Pumpkin Bread: Ingredients: * 3 eggs * 1 cup pumpkin purée * 1/3 cup full fat coconut milk (just use the fat part & discard the watery part) * 1/3 cup maple syrup or coconut sugar * 1 tsp vanilla extract * 1 3/4 cup almond flour * 1/4 cup tapioca flour * 1 Tbsp coconut flour * 1 tsp baking soda * 1 tbsp pumpkin pie spice * 1/2 tsp cinnamon * 1/4 tsp salt Directions: * Preheat oven to 350 * Whisk together eggs, purée, maple syrup vanilla extract & coconut milk * Add together the dry ingredients and slowly add wet ingredients in & whisk all together * Bake for 1 hour or until the toothpick inserted in the middle of the loaf comes out clean * Enjoy:):) #paleo #paleopumpkinbread #fallrecipes #healthyrecipes

It’s September! 🍂 which means the return of pumpkin everything 🎃 and I’m here for it! My favorite has got to be this paleo pumpkin bread, which is so addicting and better than regular pumpkin bread. Ingredients: 1 c canned pumpkin purée 3 eggs 1/2 c coconut sugar 1/4 c unrefined coconut oil 2 tbs honey or maple syrup 1 tsp vanilla 1 tsp baking powder 1 tsp baking soda 2 tsp pumpkin pie spice 1 tsp cinnamon 1/2 tsp ground ginger 1/2 tsp sea salt 1/2 c chocolate chips (and extra to sprinkle on top) Directions: 1. Preheat oven to 350 F 2. Mix together the wet ingredients until smooth 3. Add the dry ingredients and mix for 1 minute. 4. Fold in 1/2 c of chocolate chips 5. Grease or line a 9x5 inch loaf pan 6. Transfer the batter into the loaf pan. Sprinkle with as many additional chocolate chips! 7. Bake for 45 minutes 8. Hey mama that is up still baking or cooking… Let’s sit and eat a thanksgiving cookie together and chat. Today started off on the wrong foot cause I couldn’t find my gratitude journal. I have been writing in it daily and it really has been so good for me to see the positive in so much I could find negative. But really no excuse I could have taken the time to write a few things down anyways somewhere else but I didn’t. The day was busy, hectic but overall fun. I had my 2 littles, my 2 nieces and 2 other friends that their parents were working. The problem started when I felt tired and I started to think about the baking I still had to do tonight before bed and cooking tomorrow. I started to complain to Elliot that it must be nice to just show up to a holiday like he does since I don’t ever feel I can. I always have things to cook to contribute since that is how we do family dinners. As I was mixing all the ingredients for the pumpkin bread I realized that I was complaining which a couple of weeks ago it had occurred to me that it was the opposite of gratitude. So on this Thanksgiving Eve I’m grateful I get to make pumpkin bread and loaded cauliflower casserole tomorrow. I’m so grateful that our friend Brandon is smoking our turkey. God has truly blessed our family so I will choose gratitude when it so very easy to complain. Gratitude is the best attitude and a choice. You may have a long list of baking and cooking todos that must get done for tomorrow and maybe you feel like I did. This paleo pumpkin chocolate chip bread is one of my all time favorite recipes 🤗 I created it last year and have made it so many times since!! It would be perfect for thanksgiving morning or even dessert! I’ll be having a slice with my chai this morning 🌞 #recipe 2 cups almond flour 1 cup pumpkin purée 3 eggs 1/4 cup maple syrup 1 tsp vanilla extract 1 tsp baking soda 1 tsp pumpkin pie spice 1/2 cup Chocolate chips In a large bowl, mix together the wet ingredients. Add in the dry ingredients and combine. Fold in the chocolate chips. Pour the batter into a loaf pan lined with parchment paper and sprinkle with a few more chocolate chips. Bake for 40 mins at 350 or until a toothpick comes out clean!

I've had "make pumpkin bread" on my to-do list since late September. But other things kept taking priority, and I just never got in the mood to bake until now. I made up my own recipe and then happily dug into my very own loaf of pumpkin bread, straight from the oven. Worth the wait! Paleo pumpkin bread 🎃 (single serve) - 1/3 cup pumpkin puree - 2 tbsp maple syrup - 1 egg - 1/2 tsp vanilla - 1/4 cup almond flour - 1.5 tbsp coconut flour - 1/2 tsp cinnamon - dash of nutmeg - dash of ground cloves - 1/4 tsp baking soda Combine all wet ingredients and all dry ingredients separately. Calling all @lilys_sweets fans! Have you seen these yet?! Limited edition pumpkin 🎃 spice chips!🎃 . Now I’m not someone who goes crazy over pumpkin spice season; I like it an appropriate amount all year round actually. But these chips got me pretty excited!🥰🥰🥰 . So I grabbed a box of @simplemills #paleo pumpkin bread mix, swapped out the oil for canned pumpkin, and added these chips plus a few @lilys white chocolate chips! It’s BOMB!🙌🏼 . And then I discovered a combination of flavors that I never thought would go well together; the 4 P’s: pumpkin🎃, peaches🍑, pina colada🥥🍍 and peanut butter🥜. . I had every intention of making a paleo peach cobbler for my husband and I on Sunday night but it got too late so I made a lazy version.🤷🏼‍♀️ . Paleo Chocolate Chip Pumpkin Bread 1 cup canned pumpkin puree 1/2 cup maple syrup 3 eggs 1 Tbsp vanilla extract 2 1/3 cups almond flour 1 Tbsp pumpkin pie spice 1 tsp baking soda 1 tsp baking powder 1/2 tsp sea salt 2/3 cup Mini chocolate chips (we love @enjoylifefoods ) - mix pumpkin, maple syrup, eggs, and vanilla in bowl. Add in the rest of the ingredients except for chocolate chips. Mix to combine and the fold in chocolate chips! Pour into parchment lined loaf pan.
