Stuffed peppers - this recipe is one that our mom used to make growing up. The filling is made with approx 1 pound (450 gr) of ground meat (we used 1/3 each of ground veal, beef, and pork). To that you add 1 whole egg, grated pecorino cheese to your liking, approximately 1 1/2 cups of moistened dry bread that has the water squeezed out, 1 chopped garlic cloves, S & P and chopped fresh parsley about 2 to 3 tbsp. Mix all together with your hands until well amalgamated. Take your favorite peppers cut in half, wash, and dry them. Add some salt on the inside, then fill each half with meat filling. Place in baking pan and ensure you add your favorite plain tomato sauce on the base of pan and then on top of each stuffed pepper, sprinkle some grated pecorino cheese and bake in preheated oven 350 degrees for approximately 1 hr.
