Sweet Potato Quiche Florentine: The Shrinky Dink Edition! 🤦‍♀️🤯 by @shicocooks Remember my Potato Pie that stole the show? You demanded a sweet potato upgrade, so I took one for the culinary team. Heads up: Sweet potato crust has shrinkage issues! Tower it up in the pan. It might not be crispy, but the taste? Pure deliciousness. Confession: I’m team regular potato, but this sweet experiment? Tasted like a victory! 🥔🚀 Ingredients: • 2 sweet potatoes (500g) • 2 tbsp olive oil (divided) • Salt to taste • Pepper to taste • 1 tbsp butter • 1 shallot (sliced in half-moon) • 1 clove garlic (minced) • 180g spinach • 3 eggs • 100g heavy cream • 100g milk • 1/3 tsp nutmeg • Zest of 1 lemon • 80g Gruyere cheese Method: 1. Boil the sweet potatoes, then transfer to a greased 20cm baking tin and crush. Press firmly to create the sides (build them high as they will shrink!). Drizzle with olive oil, sprinkle with salt and pepper, and bake in a preheated oven at 200°C (fan) for 40-45 minutes. 2. In a frying pan, melt butter, add shallot and garlic, cook until softened, then add spinach. Cook until wilted and set aside (if the mixture is too watery, drain the spinach). 3. Whisk eggs, cream, milk, salt, pepper, nutmeg, and lemon zest. Add Gruyere cheese and whisk well. Pour this mixture over the sweet potato base after adding the spinach. 4. Well, the forecast called for rain and, apparently “rain” here consists of frozen white flakes… and it just kept coming… and I was committed to an event that had me outside well into the afternoon. My meal forecast called for “easy dinner” but one not to forsake that Saturday night standard. It was a perfect opportunity to go to the freezer for a pre-prepared Lamb Shank in a Balsamic-Fig Jus. It was gifted in a promo a while back and needed only a reheat, which I did via sous vide. I reduced the cooking Jus into a sauce, made some Creamy Cauliflower Mash, and Sautéed Kale with Cherry Tomatoes. Not a bad go to, and there are leftovers, so stay tuned for wherever that goes. How hard is it to get abs? For most people, getting six-pack lean is just plain hard, which is something I know from first-hand experience. The last few days would have been Popeye’s dream… So much SPINACH! 💪🏻 Not complaining at all either. I’ve never been a huge fan of spinach. It wasn’t that I didn’t like it exactly. It just wasn’t something I was “excited” about. I think I have changed that. The last couple salads I’ve made this week have been so amazing! @shaneo416 and I even ate the first two days in a row. (I’ll share that one later) Today I made myself something new. Homemade Strawberry Vinaigrette and then a salad to go along with it. Holy crap guys —- it was so good! Peanut chicken spring roll bowls✨ by @maxiskitchen For the Dressing:▪️1/4 Cup Creamy Natural Peanut Butter▪️1 Lime, juice▪️2 tsp Maple Syrup▪️1 Tbsp White Vinegar▪️1 Tbsp Soy Sauce▪️1 tsp Sriracha or Chili Sauce (optional)▪️3 Tbsp Water▪️ For the Bowls:▪️4 oz. Dried Vermicelli Noodles (also called “Maifun”)▪️1 tsp Olive Oil▪️4 Cups Romaine, sliced in thin strips▪️1/2 a Red Bell Pepper, sliced in thin strips▪️1/2 Cup Red Cabbage, sliced in thin strips▪️1/2 a Carrot, sliced in thin strips▪️1/2 Cup Cucumber, sliced in thin strips▪️2 Tbsp Fresh Basil Leaves, sliced▪️2 Tbsp Peanuts, chopped▪️ For the Chicken:▪️1 Chicken Breast▪️2 tsp Olive Oil▪️Kosher Salt & Pepper▪️ 🌱Vegan Modification: Sub in edamame and/or avocado for chicken 1️⃣ Mix together the ingredients for the dressing and set aside (if dressing looks thick you can add a little more water) 2️⃣ Boil vermicelli noodles according to package directions then rinse in cool water and toss with olive oil to prevent them from sticking 3️⃣ Split the noodles into two bowls and add the romaine, red bell pepper, cabbage, carrot, and cucumber 4️⃣ Pound chicken ~1/2” thick and season both sides with salt and pepper; pan sear in olive oil over medium heat for 5-6 mins per side until internal temp reaches 165F, then let rest for 5 mins and slice into bite size pieces 5️⃣ Serve the chicken on the spring roll bowls and top with dressing, peanuts, and basil - enjoy! ⏲20 minute prep time + 15 minute cook time Recipe makes two spring roll bowls
