In a pinch to get dinner on the table? I know in our house the question of the day is always “What’s for dinner?” Sometimes I forget to plan or prep dinner early in the day and I have to come up with something quick. This is what a “convenient” last minute dinner looks like in our home. This dinner requires minimal effort and planning and takes less than 25 minutes from start to finish. We use frozen wild Alaskan sockeye salmon from Costco, frozen organic vegetable foursome from Trader Joe’s, and gold potatoes.if you always have a bag of salmon or fish in your freezer it helps! The key to making it quick is the order you make it in! All I do is toss the potatoes in the instant pot on top of the rack with a cup of water underneath. I set the time to 20-25 minutes depending on the size of potatoes. Then I place the vacuum sealed individually packed fish in a bowl in the sink running under warm water as the oven preheats to 400°F and while that is preheating a drizzle some olive oil in a medium pot over the stovetop and pour the mixed veggies in and cover with a lid. I turn the heat to medium then place the fish in a glass pan lined with parchment paper, top with olive oil or butter, sea salt, honey and lemon juice/sliced lemons. The fish bakes for about 15 minutes or until it reaches 140°F. We top our sides with grass fed butter, Redmond sea salt, pepper, and organic sour cream for the potatoes. There you have it! A nutritious but simple to make dinner ready from start to finish in 25 minutes. Buffalo chicken sweet potato boats by @caileeeeats What you’ll need: 1 lb ground chicken 
1 large sweet potato 
1 cup buffalo sauce + more to drizzle on top 
2 tbsp ranch seasoning 
1 cup finely shredded mozzarella cheese 
Avocado oil spray 
Sprinkle of salt, pepper, & garlic powder 
Freshly chopped green onions 
Drizzle of ranch (for garnish) 
 Instructions: 1. Start by preheating your oven to 400 degrees. 
 2. Poke holes with a fork into the sweet potato. Place in the microwave for 2 minutes. This will allow the cutting process to be much easier. 
 3. Once out of the microwave slice the sweet potato into 1-inch thick slices lengthwise. I can usually get about 4-5 slices out of one sweet potato. Add to a baking sheet, spray with some avocado oil, and season with salt, pepper, and garlic powder. Place in the oven for 20-25 minutes until they can easily be pierced with a fork.
 4. While the sweet potatoes are cooking prep the buffalo chicken. Add the ground chicken to a pan on medium heat and cook about 5-7 minutes until brown. 
 5. Add the buffalo sauce and ranch seasoning and mix well. Remove from heat and set aside. 
 6. Once the sweet potatoes are out place a few spoonfuls of the buffalo chicken onto the sweet potato slices. Top each piece with mozzarella cheese and place back in the oven for about 5 minutes until the cheese has melted and started to brown. 
 7. Top with a drizzle of buffalo sauce, ranch, and freshly chopped green onion & enjoy!

Dudes....my kids demolished these last night. The spices are warm and so cozy for a rainy day. You can prepare them as a wrap or a salad, plus you can make it vegetarian by swapping the chicken for chickpeas. Shawarma Chicken Wraps Ingredients: 8 Mini Soft Tortilla Wraps (4 inches) 2-3 Boneless skinless chicken breasts 1-2 tbsp avocado oil or extra virgin olive oil 1 tsp each cumin and garlic powder ½ tsp each salt, black pepper, and paprika ¼ tsp each ground coriander and ground cinnamon ¼ cup hummus 1 tbsp lemon juice 1 tsp dried dill ½ tsp garlic Water, as needed (to thin out sauce) Toppings: Red onion, finely diced Avocado, diced Lettuce, shredded Roma tomato, diced Cucumber Preheat oven to 350 F. Cut chicken into bite-sized pieces. In a medium bowl, combine the oil, cumin, 1 tsp garlic powder, salt, pepper, paprika, coriander, and cinnamon. Mix well. Add chicken to spices and toss to evenly coat. Transfer chicken to a baking sheet and bake until chicken is cooked through (about 10-15 minutes). In a small bowl, combine hummus, lemon juice, dill, and ½ tsp of garlic. Add water as needed until your desired consistency is reached. To assemble, add chicken and desired toppings to a wrap. They're super easy to make, and you can really get creative with the fillings. 🙌 Here's how to make them 👇 📌 𝙎𝙖𝙫𝙚 𝙖𝙣𝙙 𝙎𝙝𝙖𝙧𝙚 𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔: - 1 pound grass-fed Angus beef chuck roast boneless thinly sliced - 1 tablespoon olive oil - 2 cloves garlic minced - 1 tablespoon soy sauce - White pepper - Rice paper - Butter lettuce - Bell peppers thinly sliced - Cucumber cut into matchstick - Mint leaves - Lime cut into wedges - Store-bought Thai dipping sauce 𝑰𝒏𝒔𝒕𝒓𝒖𝒄𝒕𝒊𝒐𝒏𝒔: 1. Add the oil on a skillet over medium-high heat. Add the garlic and cook for 2 minutes. Add the beef and cook for 3-5 minutes. Add in the soy sauce and cook until there is no more rare/pink meat. Loaded with veggies and full of flavor this healthy, easy, and delicious weeknight meal will have your tastebuds thanking you and your kids asking for seconds! One pan chicken sausage broccoli bake 1 1/3 cup carrots, diced 1 cup onions, diced 2 cups broccoli, diced 2/3 cup peas 1.5 cups chicken sausage, diced 3.5 cups low sodium chicken broth 1 cup white rice, uncooked Seasonings: 1 teaspoon Garlic powder, 1/2 teaspoon pepper, 3 tablespoons low sodium bouillon 2 tablespoon butter (non dairy if preferred) 2 cups 2% shredded cheddar cheese Preheat your oven to 385 degrees. Begin by dicing your onions and broccoli, and slicing your sausages and carrots. Arrange the prepped ingredients in a 13x9 baking dish, layering with rice on top. Pour in your broth, and add butter, bouillon, and seasonings. Mix the ingredients thoroughly, then bake for 40 minutes at 385 degrees. After 40 minutes, remove from the oven and sprinkle 1 cup of cheese into the mixture, stirring to incorporate, and sprinkle another cup of cheese on top. Return to the oven and bake until the cheese is melted and bubbly, approximately 4-5 minutes. Healthy dinner seeing as I’ve eaten a lot of rubbish this weekend 😳 Using up leftover sauce! 🍅🥦🫛 I had some of my @heinz_uk lentil ragu leftover from my pasta meal the other day so decided to do a little throw together. I air fried some chicken with seasoning, grilled some halloumi, boiled some veg and microwaved some @veetee_official sticky rice. Super easy and so delicious! cozy kale salad w/ maple-dijon vinaigrette🥗 veggie packed + delicious dinner! this is a great meal to make loads of because the kale + brussels hold up so well in the fridge for leftovers the next day! INGREDIENTS: -brussel sprouts (shredded/chopped) -sweet potato, diced -paprika, garlic powder, s&p -bunch of kale, finely chopped -1/3 lb bacon, chopped -1/4 cup walnuts -2 tbsp maple syrup -1/2 cup parm regiano -1/4 cup dried cranberries Maple-Dijon Vinaigrette: -1/4 cup evoo -2 tbsp ACV -1 tsp Dijon -juice from lemon + lemon zest -oregano, thyme, garlic powder, s&p RECIPE: Preheat oven to 400. Dice sweet potato and Brussels. Place sweet potato on baking sheet. Coat with evoo, s&p, garlic powder + paprika. Bake for 10-15 min. Finely chop kale, massage with salt and evoo in large bowl. Coat walnuts with 2 tbsp maple syrup. Add Brussels and walnuts to baking sheet and bake for additional 10-15 min. While baking, prepare vinaigrette with all ingredients listed adjusting to taste. Add bacon on stove over medium-high heat. Once veggies and walnuts are done, add to kale bowl with shredded parm, bacon and dried cranberries. Toss with vinaigrette + serve :-)

Try these Greek-Style Loaded Sweet Potatoes for a flavor explosion in every bite! 🍠🍅 Ingredients: 🍠 4 medium sweet potatoes 🍅 1 cup cherry tomatoes, halved 🥒 1 cucumber, diced 🫒 1/2 cup Kalamata olives, sliced 🧅 1/4 cup red onion, finely chopped 🧀 1/4 cup feta cheese, crumbled 🌿 1/4 cup fresh parsley, chopped 🥄 1/4 cup tzatziki sauce 🧂 Salt and pepper to taste Directions: 1. 🌡️ Preheat the oven to 400°F (200°C). 2. 🛁 Wash and scrub the sweet potatoes, then pierce them with a fork. 3. 🍽️ Place the sweet potatoes on a baking sheet and bake for 45-60 minutes or until tender. 4. 🥗 While the sweet potatoes are baking, prepare the filling. This recipe needs to get added to next weeks menu, but first I wanted to share a few benefits and maybe it will help you desire it even more lol: - It’s rich in Fiber -Great source of Vitamin K (which plays a key role in bone health) -Good source of Vitamin C which protects your cells, supports your immune system, and reduces fatigue.. HELLO! Ill take it all! It doesnt have to be just roasted..Enjoy this delicious low carb Cauliflower Baked Ziti 🤤 Ingredients: 1 tbsp. extra-virgin olive oil 2 tbsp chopped onion 2 cloves garlic, minced ( 1 lb. 95% lean ground turkey~Yields 12 cooked 1/4 tsp black pepper 1 tbsp. tomato paste 2 tbsp grated Parmesan 1 tsp. dried oregano 1 (28-oz.) can crushed tomatoes 2 tbsp. thinly sliced basil 2 3/4 cups (12 oz) cauliflower, cut into florets, roasted 1 cup low fat ricotta cheese 1 cup reduced fat shredded mozzarella Directions: * Preheat oven to 375°. In a large saucepan over medium heat, heat oil. Add onion and cook, stirring often, until onion is soft, about 5 minutes. Stir in garlic and cook for one minute. Add meat and season with salt and pepper. Cook until no longer pink, 6 minutes. Drain fat. * Return saucepan over medium heat and add tomato paste and oregano. Cook for 2 minutes more, until slightly darkened. Add crushed tomatoes and bring sauce to a simmer, reduce heat and cook, stirring occasionally, until slightly reduced and flavors have melded, 10 to 15 minutes. Remove from heat and stir in basil. * In a large bowl, pour sauce over cauliflower and stir to combine. In a large baking dish, place half the cauliflower in an even layer. Dollop all over with half the ricotta, and sprinkle with half the mozzarella and Parmesan. Add remaining cauliflower in an even layer on top, and top with remaining cheeses. * Bake until cheese is melty and golden, 28 minutes. * Garnish with basil before serving. Makes 4 servings

✨DF | GF | V BAKED ZUCCHINI FRIES✨ ~Makes about 12 fries and serves up to 3-5 people These baked zucchini fries are just what you need if you want a healthier alternative to fries and can be served with any meal! Or they can even be eaten as a snack! These are gluten free, dairy free, and vegan! I would definitely recommend trying them out! If you want to add some more flavor (and if you can eat dairy), you can add a 2 tbsp of Parmesan into the seasoning mix! ✨INGREDIENTS✨ •3 zucchini’s •1 tbsp olive oil •1 tbsp parsley leaves •1/2 tsp garlic powder •1/2 tsp onion powder •1/4 tsp salt •1/4 tsp black pepper ✨INSTRUCTIONS✨ 1. Preheat oven to 375 degrees and line a baking sheet with parchment paper and place a cooling rack over top 2. Cut zucchini’s into 4 equal parts and place on cooling rack 3. Mix parsley leaves, garlic powder, onion powder, salt and paper into a small bowl 4. Let's eat better this year and save some coin while doing it. 👍🏽 Meal prepping is not the easiest thing, but you don't have to make it the thing you dread. Make sure to go in with a plan, winging what you're eating for the week is what will make you want to give up on meal prepping before you've even made your grocery list. A simple plan of teriyaki chicken + rice and baked chicken with sides is an easy plan for two days. Then after that, you can eat leftovers and plan what you want to prep next. Once you got your grocery list of what you’re making for the next week or next two weeks, its time to pick a day to do the cooking. Sunday is a prep for the week day in my house which is generally when I do the most meal prepping. However, Sunday may not work for you. It is best to pick a day where you won't feel rushed or a day you’re taking to relax. And always plan the amount you're prepping. Are you prepping on Saturday for Sunday-Wednesday?
