Took myself on a solo date for self care Sunday. Since Nate is in Oregon right now, I felt I needed a break before The Ultimate Raw Vegan Bundle starts (on Wednesday May 1st!!) so I walked myself to the Springs Preserve - a nature preserve here in Las Vegas! 15min SUNDRIED TOMATO PASTA 🍝 by @fitgreenmind Too lazy to cook? Then make this pasta! I also like serving it with veggies and tempeh to make it a complete meal.😋 RECIPE (1 serving, 15min prep time): -1 serving of pasta Cook al dente and save some pasta water. -65g sun dried tomatoes -1 Tbsp tahini -juice of 1/2 lemon -salt, garlic and dried Italian herbs to taste -1/2 Tbsp tomato paste -pasta water to blend Blend until creamy. Season to taste if needed. Add it to the pasta and finish cooking it by tossing in the sauce for a couple of minutes.

Vegan gravy 😊🌱 so this here can be used as a really delicious vegan gravy for roasts, or as a standard base mix for different types of flavoured dishes….. just make this as a base and add in extra things at the end…. Such as curry powder or kimchi etc (you can get creative!) I have already made a few different types of dishes so check out my feed 💛 So the ingredients list I have provided. Simply Add everything to a large non-stick skillet (except coconut yogurt) and simmer on high heat for approx 15-20 mins or until all the liquid has reduced right down and thickened. Once it’s thickened, then add in coconut yogurt + a very small amount of lemon juice (optional) & a drizzle of balsamic glaze (tip- add the balsamic glaze first & if it tastes just right then do not add anything else 😉) 💥🌱… and you have a super tasty vegan gravy. Mango spring rolls stuffed with tempeh By @terianncarty INGREDIENTS Rice Paper for rolling 1 Ataulfo mango thinly sliced 1 red pepper thinly sliced 1/4 of a long cucumber thinly sliced 1 cup baby spinach 1/2 cup pickled red cabbage 1 block steamed then marinated tempeh (tamari, sesame oil, rice vinegar, sriracha & garlic) Handful fresh basil and mint Sprouts (optional) METHOD Steam tempeh from frozen for 8 minutes. Cut into strips and marinate for 2 hours. Heat oil in a nonstick pan and sear tempeh strips until browned and crispy. Set up your station for rolling the wraps. Place all your ingredients into separate bowls to keep things neat and tidy. Wet 2 kitchen towels and place them on a large cutting board. Pour hot water (not boiling) into a large bowl. Take 2 rice paper sheets and dunk them into the hot water (2 sheets works better than 1. They roll way easier and stay together much better!). Wait for them to soften and then place them onto a separate cutting board or clean working surface. Layer your ingredients in the centre of the circle being careful not to over stuff. Fold edges in towards the middle and then roll into a tight burrito style shape. Place the rolls in between the damp kitchen towels. Repeat until all the ingredients are gone. Dip into spicy peanut sauce and enjoy! PEANUT SAUCE 3 tbsp peanut butter 2 tbsp tamari 1 clove garlic minced 1 tbsp sesame oil 1 tbsp sriracha Pinch chili flakes Pinch salt 3-5 tbsp warm water Add everything but water into a bowl. Stir to combine. Add in water slowly until you reach your desired consistency. The thicker the peanut butter the more water you will need. Vegan BANG BANG CAULIFLOWER By @daria_cooks_vegan Ingredients •1 cauliflower, cut into florets •1 cup / 240 ml plant-based milk (I used full-fat oat milk) •2 tablespoons lemon juice •3/4 cup / 105 g all-purpose flour •1/2 cup / 80 g rice flour (sub in cornstarch) •1 teaspoon paprika powder •1 teaspoon salt •dash of black pepper •1 tablespoon hot sauce •1 cup / 100 g panko crumbs (or more as needed) •vegetable oil for frying 🌱For the sauce: •1/3 cup / 80 g vegan mayonnaise •2 tablespoons chili sauce •2 teaspoon hot sauce Instructions 1️⃣In a bowl whisk together vegan mayonnaise, chili sauce and hot sauce. Put into fridge. 2️⃣In a bowl combine flour, rice flour, oat milk, lemon juice, hot sauce, paprika, salt and pepper. Mix until smooth. Dip cauliflower florets into the batter, then cover them with panko crumbs. 3️⃣In a pot heat vegetable oil until thermometer shows 350 °F / 180 °C. Transfer the battered cauliflowers to the pan and fry them until golden brown. Cook in batches. 4️⃣Drain fried cauliflowers on kitchen towels. Serve immediately with mayonnaise sauce. Creamy Mushroom Broccoli Pasta 🌿 by @janetsmunchmeals Serves: 2 1 tbsp plant-based butter 6 oz. cremini or white mushrooms, sliced ½ tsp kosher salt 1/8 tsp black pepper 1 cup broccoli florets, cut small ¼ tsp onion powder ¼ to ½ tsp garlic powder, to taste 1 tsp flour, optional for thicker sauce 1 cup oat milk 2 tbsp dairy-free heavy cream, optional 1/3 cup dairy-free parmesan 2 tbsp dairy-free cream cheese 1 package Palmini Angel Hair, drained and rinsed Fresh basil, thinly sliced Preheat a large pan on medium heat. Add plant-based butter, mushrooms, kosher salt, and pepper. Stir, cook 3 to 4 min. Add broccoli florets, stir, cook 3 to 4 min. Add onion powder, garlic powder, and flour if using. Stir, add oat milk and cream. Let gently simmer for 2 to 3 min. Add parmesan and cream cheese, stir to combine. Pat the angel hair dry with kitchen towel. EASY POWER BOWL By @betterfoodguru RECIPE serves 2-3 Ready in 15 minutes Ingredients: 1/2 head cauliflower 10 Brussels sprouts halved 1 tbsp olive oil 2 cups shredded kale 1 cup cooked frozen quinoa 1 15 oz can chickpeas drained 1/4 tsp salt 1/4 tsp pepper 1/2 tsp garlic powder 1 avocado Chile lime seasoning or Tajin Vegan yogurt to drizzle Hot sauce Instructions: 1. The OG Eggplant curry is ridiculously Savory! Take Chopped blanched eggplant (lemon salt and water) drain and next marinade it in 1/2 cup of The OG. Chop 2 carrots, 1 chopped onion, 3 chopped potatoes, 1 chopped jalapeño, 14 cherry tomatoes, 1/2 cup peas, 2 tbs curry, 2 tbs turmeric, 1 tsp sugar, 3 tbs oil, 1 can of coconut milk, thicken with vegan Cream cheese herb @sperofoods. In a pressure cooker at sautee setting, add oil with spices, then onions and the rest of the veggies. Add coconut milk and mix, turn off. Set Pressure cook manual 21min. When done, add 1/2 container of herb @sperofoods. I’ve had it twice already and polished the full plate myself!! Full of flavour, easy and addictive 🫶🏽 Ingredients: -1 large sweet potato, peeled and cubed -2 tbsp olive oil + 2 tbsp for drizzle @odysea_ltd -1/2 lemon -1/2 garlic bulb (4/5 cloves) -1 spring onion sliced -Seasoning 1 tsp of : salt @blackthornsalt pepper, smoked paprika @lachinatasmokedpaprika za’atar, oregano, cumin powder. Method: -Wash, peel slice the sweet potato, chop into cubes. -Add to a baking tray and drizzle with olive oil, and seasoning. Mix well. -My potato was large so I batched half for a mid week meal, ready and prepared. -Add the lemon and garlic and airfry for 20-25 minutes on roast option on 180c I used my @ninjakitchenuk megazone. -Half way through, shake the potatoes and remove the lemon and garlic. -Remove lemon skin and add to a bowl, squeeze the garlic or mash with the back of a knife. -Add the sliced spring onion and 2 tbsp of olive oil -Optional, I add 1/2 tsp Za’atar, salt and pepper for extra flavour. -Mix well. Add to roast sweet potato coat well.

Palak tofu By @the_clumsy_vegan Ingredients: Tofu: 1 block of firm tofu pressed Arrowroot powder: 2 T Spinach: 5 C Shallots: 2 Tomato: 1/2 Garlic: 2 cloves Ginger: 1 cm Green chilli: 1 Oat cream: 2 T Water: 1/2 C Salt to taste Oil ☘️ Whole spices: Cumin seeds: 1 t Bay leaves: 2 Cloves: 2 Black Cardamom : 1 Powdered spices: Garam masala: 1 t Turmeric: 1 t Coriander powder: 2 t Asafoetida: 1/2 t ☘️ Method: -Cut tofu in cubes, season with salt and pepper, dust with arrowroot and pan fry till crispy -Blanch spinach in boiling water and immerse in ice cold water. -Drain spinach and blend with water, ginger, garlic and chilli into a smooth sauce -Heat oil in a pan and add the listed whole spices -Cook for a minute and add onions. 10 Minute Chilli Oil Noodles 🌶👏 This has been my favourite lockdown meal to make when I’m feeling lazy but craving something delicious. No measuring needed either but I’ll list every ingredient I use below! By @thrivingonplants Serves: 1 Time: 10 mins Ingredients 1 serving of noodles (I used fresh wheat noodles) Protein & veg of choice The Sauce Base: Light soy sauce Dark soy sauce (optional, see method 3) Sweetener of choice eg. brown sugar Sesame oil Chinese chilli oil Optional add-ins: Fresh minced garlic and/or ginger Sesame paste if you want it to be creamy A splash of black vinegar for an extra kick of flavour + tartness A few toasted sichuan peppercorns, ground up finely 1. Bring a small pot of water to the boil. How did your noodles and cook according to packet instructions. In the last minute I add in the bokchoy. Drain, rinse with cold water and set aside. 2. In the meantime, fry up your tofu or protein of choice. You can also just add thinly sliced pieces of firm tofu to the boiling noodles instead (even quicker!). 3. In a large bowl, add in about 1 tbsp light soy sauce, a tiny splash of dark soy sauce (for colour), sweetener to taste (around 1-2 tsp), sesame oil (1/2-1 tsp) and a as much chilli oil as you’d like. Here you can also use any of the recommended add-ins as mentioned in the ingredients list above. Whisk well until combined. 4. Add in the noodles, greens and tofu and mix until well coated. Garnish with sesame seeds, green onions, and cucumber. Drizzle on more chilli oil and serve immediately! 👏 As much as I love cooking, a lot of the time I just want to make some quick and easy but still feel satisfied. So these kind of meals are perfect for just that! TURKISH PIDE BREAD By @daria_cooks_vegan Ingredients For the dough: •2 cups / 250 g all-purpose flour •1/2 cup + 1 tablespoon / 120 ml + 1 tablespoon water •1 teaspoon salt •1 teaspoon sugar •1 teaspoon olive oil •1 teaspoon active-dry yeast For the toppings: •6 red bell peppers •1/2 can of chickpeas, drained •8 ounces / 230 g vegan cheddar shreds •olives and chopped parsley to garnish Instructions 1️⃣In a bowl combine flour, water, salt, sugar, oil and yeast. Knead until smooth and let rise for about 1.5 hours. 2️⃣Preheat oven to 450 °F / 230 °C. 3️⃣Place bell peppers on a baking tray and bake for about 25 minutes until skin gets black. Allow to cool and then peel off skin. 4️⃣On a flat working surface divide dough into two equal pieces and roll out each into a flat oval piece. Top with vegan cheese, bell peppers, chickpeas and some salt, leaving a border. Fold the sides up and brush with olive oil. 5️⃣Bake for about 20-30 minutes, until golden brown. Which  #recipe would you try?👇 By @Wholesomehedonista 1️⃣ Vegan Wrap Hack ✨ Make a cut halfway down a large tortilla (I used an almond flour tortilla) Fill each quarter with toppings of choice, I used: - Mediterranean Grilled Portobellos (brushed with olive oil, balsamic, rosemary, salt and thyme) - Pesto (you can make your own but I just used Trader Joe’s vegan kale cashew pesto) - Hummus of choice - Mashed avocado - Caramelized onions (no oil in ones I made- just sliced up a red onion and put it in pan with about 1/2 cup veg broth, cooked on medium until thick and caramelized, keep adding more broth as needed as liquid dries out + add some coconut aminos if you want for flavor!) Fold, starting with cut end first. Grill in pan on stove top or panini press until golden on both sides. Enjoy!!
