BAKED PAPRIKA COD w/ CHORIZO + PEA DRESSING INGREDIENTS (for 1) 1 Cod Loin ½ tsp Smoked Paprika 1 Clove Garlic 75 g Frozen Peas ½ Shallot 31¼ g Chorizo ½ tbsp Sherry Vinegar Teaspoon of Chives 1½ tbsp Yoghurt 125 g (half packet)Mixed Cooked Grains/Lentils 1/2 Lemon Olive Oil METHOD Step 1. Preheat the oven to 220°C. Step 2. Pat the cod fillets dry with a bit of kitchen paper and pop them onto a tray lined with parchment. Sprinkle them with salt and the smoked paprika. Grate over half of the garlic cloves and add a good splash of olive oil. Roll the fish around in the spices and garlic. Set aside. Step 3. Pour boiling water from the kettle over the pea. Finely dice the remaining garlic cloves and the shallots. Cut the chorizo into 1cm cubes. Now slide the cod into the oven for 10-11 mins. Step 4. While the cod is cooking, finish the garnish. Preheat a small frying pan over a medium heat. Tip in the chorizo and cook for 5-6 mins until rendered and crispy. Add the diced shallots and half the garlic and cook for 2 mins. Add the sherry vinegar and defrosted peas. Finely cut the chives and add half to the dressing. Step 5. Mix the yoghurt with the remaining garlic, the zest from the lemon and some salt. Cut the lemon into wedges for later. Step 6. Heat the grains according to the package instructions. Pull the cooked fish out of the oven. Step 7. Divide the grains between warm bowls. Top with a piece of cod, some garlic yoghurt and dress with lashings of the spicy chorizo and pea dressing. Za'atar koftas w/quinoa salad & lots of veggies 🥦🥦🥦🥦🙏 中東風 #ミートボール here I use minced chicken breast meat. mixed with ground carrot and chopped onion. season with za'atar spice, dried oregano(not in my bottle of spice mix), salt, pepper, minced garlic, brown sugar, sea salt, olive oil and a dash of water. knead till sticky. shape into long meat balls. in a large pan, pansear the koftas with selected veggies. once finish, empty the pan. turn to the lowest heat. olive oil, za'atar spice and oregano in. stir and cook for 30 seconds. apple cider vinegar, brown sugar, black pepper, salt(if needed) all in. cook for another 30 seconds, dressing is done. Pancakes 🥞 Super easy, 3-ingredient pancakes! Blitz 40g oats with 2 large eggs and 30ml milk. I used a stick blender for this. Blitz until the oats are really fine. Then top with whatever you fancy! Roasted cajun chicken 🍗 and rice. This is a recipe I stole from a friend and it’s one of our favourites! 🤎 Because this one is slow cooked, the chicken thighs go so tender and the rice so creamy. To make: 1. Fry onions, peppers, chilli and garlic until soft. Then add 500g passata and 70ml chicken stock, seasoning of choice (we used cajun and oregano but paprika and sage also work well) and simmer until the sauce thickens. 2. Pour a thin layer of rice into a roasting dish, just enough to cover the bottom. Add a thin layer of the sauce so it has enough moisture to cook. Then coat the chicken thighs with the sauce and place on top of the rice. Pour over any remaining sauce. 3. Bake on 160º for 1 hour, 30 minutes. Optional: add prawns for the last 30 mins of cooking time. Mixed Vegetable Pasta with Plant-based Meatballs Absolutely comforting for the cold season, this lean pasta is made with very little oil, 1/2 Tsp. Butter and rest is just vegetables sautéed with Al Dante pasta water and lemon juice for flavors. The lentil pasta is protein rich cookied as per packet instructions leaving 1 cup pasta water aside for later cooking. The plant-based meatballs are cooked on stovetop separately as per packet instructions and added at the end to the pasta. Generous amount of veggies I used are onions, peppers, tomatoes, olives, capers, ginger, garlic, green chilies ( 3 of them ), cilantro, capers and lemon juice. Quorn samosas! The perfect party food. 🎉 Ingredients • 1 small potato • 1 onion • 1 carrot • 1 garlic clove • Handful of sweetcorn • Handful of peas • 175g Quorn mince • 1 vegetable stock cube • Parsley • 2 filo sheets 1. Peel and grate the potato, onion, garlic and carrot into a bowl. Microwave on full power for 2 minutes to soften. Mix in the mince, sweetcorn and peas and season well. Add the herbs and stock powder and mix well. 2. Preheat the oven to 200°C/180°C Fan/Gas 6 and line a baking tray with baking paper. Divide a sheet of filo pastry into 3 strips and then cut in half to make 6. Lay out a strip and put 1 rounded tbsp filling in the middle of one end. Pick up the corner next to the filling and fold it diagonally over the filling to make a triangle, flattening the filling slightly. Continue folding in triangles until you come to the end of the strip. Trim off any excess pastry. 3. Repeat with the remaining pastry until you have 12 triangles. 4. Place the filo triangles on the baking tray, brush with beaten egg or spray with low-calorie cooking spray and bake for 10-15 minutes, or until golden brown and crispy. Tip: If you have any pastry left, pop it in the freezer for next time. Fajita chicken loaded fries 🤤 This week I’ve been craving something that feels dirty and this really hit the spot! Cooking time 40 mins. I make my chips by slicing maris piper potatoes 🥔, then place them on a large baking tray with @frylighthq, season with salt & pepper and bake for 30 mins. My chicken went into the oven for the same amount of time. I used boneless and skinless chicken thighs. Cut the fat off and covered them in @sainsburys fajita seasoning THIS BLEND IS FREE! Once cooked I transferred the chips to a small, deep dish, shredded the chicken and loaded on top. I added chopped red onion, red pepper and a mix of cheddar and Red Leicester cheese 🧀 To make the dressing: I mixed some natural fat free yoghurt with the juice of 1 lime, some garlic granules, ground coriander and chopped spring onion. Meatball Lasagna 🇮🇹 Ingredients: 2.5 oz Ground turkey (85%-94%) (1/2 Lean) 8.68 oz part skim ricotta cheese (1/4 Lean) 1 oz 2% reduced fat Mozzarella Cheese (1/4 Lean) 4 oz (cooked weight) yellow squash or zucchini, sliced lengthwise (2 Greens) 3.17 diced tomatoes (1 Green) 1/4 tsp garlic salt (1 Condiment) 1/4 tsp dried basil (1/4 Condiment) 2 tsp grated parmesan cheese (2/3 Condiment) Directions: Preheat oven to 350 degrees. Layer zucchini or squash slices along the bottom of a medium sized casserole dish. Spread ricotta cheese over the squash. Sprinkle garlic salt and basil over the ricotta cheese and squash slices. Combine diced tomatoes with meatball pieces in a small bowl. Pour over ricotta cheese. Sprinkle mozzarella over meatballs and then top with grated parmesan cheese. Bake for 25 minutes or until cheese is melted. There will be some water or liquid from the squash or ricotta. This is normal. I simply have to share with y'all my new delicious remake of... pecan pie! Pecan pie is sooo damn delicious due to a VERY high fat and sugar content, making it extremely calorie dense as a result. But if you are like me, and don't want to eat this kind of stuff just occasionally, but every day, you'll love this mini pecan pie version, that is made to be a little bit easier to incorporate into your body's daily calorie requirements. LIGHTENED UP PECAN PIE BITE 🍂🍁 (makes 1 200 kcal serving): Base: ~8 g fat reduced coconut flour ~1 g cocoa powder (for colour) ~1 tsp of erythritol ~20 g liquid egg whites (so it doesn't fall apart) ~tiny bit of salt Filling: ~10 g chopped pecans ~10 g maple syrup (the real one, not sugarfree!) ~10 g egg whites ~8 g almond butter ~cinnamon + tiny bit of salt You'll also need one silicone muffin mold. Preparation: Preheat your oven to 180°C (356F). In a mixing bowl, mix together ingredients for the base. Let them sit for couple of minutes, so it the flour soaks the moisture and it becomes really thick and pie-dough like. In the mean time, mix all the ingredients for the filling in a glas. Add chopped pecans at the end. Press the pie dough in your muffin mold and fill it with the nut mixture. Bake for around 10-15 min, until the dough is lightly brown at the sides and the middle set. Let it cool completely before taking out of the mold. Day 4 of British Game Week is Wild Venison Bolognese This super simple recipe is a pleaser among picky eaters and foodies alike! 450g wild venison mince 1 red onion 1 garlic clove 1 tin of chopped tomatoes 1 tube of tomato paste 1 cup of milk oregano salt pepper 1. Heat up a dash of oil in the pan with the crushed and chopped garlic. Add the mince in and stir continuously to cook through. 2. Add in roughly chopped onion when the mince is still half cooked. 3, Once the mince is browned off add in the chopped tomato, tomato paste, oregano and milk. Season well and leave to simmer. 4. Slow cooker gammon 🤤 So easy and delicious! I cooked the gammon joint all day on low with 2 carrots, 1 red onion, 2 parsnips, rosemary, apple cider vinegar and 150ml chicken stock. Slow cooked chicken & rice 🍚 with roasties and green beans. This is such a tasty recipe and the rice goes so creamy! You can use any type of rice for this but paella works best. To make it: 1. Fry onion 🧅, pepper 🫑, garlic 🧄 and chilli 🌶️ until soft 2. Add 1 carton passata, 70ml chicken stock, and seasonings (we used cumin, paprika and oregano) then simmer on a low heat 3. Add some rice to a lasagne dish (just enough to cover the bottom) 4. Ladle some of the sauce over the rice so that it has enough moisture to cook 5. Get some skinless and boneless chicken thighs and coat in the sauce before adding to the dish. Then pour over the rest of the sauce. 6. Cook on 160° for 1 hour 30 minutes. Summer Harvest Bowl Summer is hopping with fresh vegetables and squashes that are in season. Following vegetables and fruits and knowing when they are freshly picked with minimal shipping and handling is the ideal way to maximize the nutrition you are getting from your food. This incredible dish can be made vegetarian by substituting ground turkey for butter beans or garbanzo beans. Summer Harvest Bowl Yields 8 servings First make the Turkey Breakfast Sausage: Mix: • 2 lbs 93% lean ground turkey • 2 tsp dried sage • 2 tsp fresh or dried rosemary (I used fresh) • 1 tsp sea salt • 1⁄2 tsp black pepper • 1 tsp fennel seeds • 1⁄2 tsp red pepper flakes (optional for spice) Spray skillet with non-stick spray. Over medium heat, brown and crumble turkey sausage mixture. Chop up: 1 crown Cauliflower (I used Purple because it's fun) 1 crown Broccoli 1 medium Butternut Squash 1 lb Brussels Sprouts 1 sweet Onion 1 clove Garlic Preheat oven to 350. Layout vegetables on sheet pan and top with Breakfast Turkey sausage or beans. Bake 15 minutes, stir, bake 15 more minutes or until squash is soft. Divide by 8. Top each serving with crumbled 1 oz goat cheese and 1 tbsp pumpkin seeds. Serve hot! This is perfect for meal prep, as it reheats perfectly without losing flavor! Crazy busy morning! Heck…crazy week!! I’ve been up super early and at it with this yard sale stuff. 😫 No time for coffee or breakfast!! Sopa de tomate🍅 Ingredientes🛒 10 tomates San Marzano (son pequeños) o cualquiera de tu preferencia Aceite de oliva Orégano Sal Pimienta Azúcar morena 1 taza de leche de tu preferencia Preparación👩🏻‍🍳 1. Precalentar el horno a 180° 2. Cortar los tomates a la mitad y colocar en una bandeja de metal 3. Rociar con el aceite de oliva, orégano, sal, pimienta y azúcar. 4. Llevar al horno unos 20 minutos. Lo ideal es que queden un poco rostizados, pero no demasiado🔥 5. Sacar la bandeja con los tomates del horno y llevarlos a la licuadora, agregar la leche poco a poco la leche y mezclar cinco minutos. Ideal que la leche esté a temperatura ambiente -no fría- para que no se corte con la acidez del tomate. 6. Llevar esta mezcla líquida a una olla a fuego medio/bajo otros cinco minutos mientras revolvemos suavemente con una cuchara de servir. 7. Servir con los acompañantes de tu gusto! A light and nutritious quick dinner. Makes 2 servings and has 25g protein, 13g good carbs, 6.4g good fats and 212 healthy calories per serving. Pesto Chicken Bruschetta 🍗 Ingredients: 4 (6 oz) boneless, skinless chicken breasts 4 (1 oz) slices part-skim mozzarella cheese 3 cups (15.78 oz) cherry tomatoes 6 cup (6.36 oz) fresh baby spinach 1 tbsp extra virgin olive oil Pesto Ingredients: 2 cups packed basil leaves 40 pine nut kernels 1/4 cup of Parmesan Cheese 2 cloves garlic 4 tbsp water Directions: Pre-heat the oven to 375. Add all of the pesto ingredients into a blender. Drizzle some water to loosen it up as needed. Season with salt & pepper. Pre-heat the nonstick pan with a drizzle of olive oil. Sear the chicken for about 4-5 minutes per side and set aside. Add one slice of cheese on top of each chicken breast. Bakes the chicken in the oven for 5-7 minutes, or until cooked through. Set aside to rest. In a bowl, combine the spinach, cherry tomatoes, and pesto. Season with salt & pepper. Toss well. Add Spinach mixture to the top of each chicken breast and serve. Summer dessert! I made a “cheesecake” which is not. a. cheesecake. This bad boy is only 196 cals with 17g of course protein. The recipe needs some developing but hey, it ain’t bad. • 75g fat free cottage cheese • 150g low fat yogurt • 1 egg yolk/or egg • 8g corn starch • 15g granular sweetener • dash of vanilla • 1/2 tsp bicarbonate of soda Combine and bake on 160 for 25 minutes. Leave to cool. I always wanted to be a motivational speaker but in the end I couldn’t be bothered..............Turkey Bolognese Tagliatelle - Fried diced onion, mushrooms & carrot in garlic & fresh thyme, then add in turkey mince, stir in some oregano, basil, tomato pureé & a chicken stock pot & cook it down. Add in a tin of chopped tomatoes, some paprika & 2 bay leafs then simmer for 20 minutes. Stir in your cooked tagliatelle with some of the pasta water & cook it for a further couple of minutes. Keep meals simple & stick to it. ⠀ It doesn’t have to be complicated. ⠀ I recommend making 2-3 breakfast, lunch & dinner options, hitting your daily calories & protein targets & you’re guaranteed to see results. ⁣ To win at your fat loss goals. ⠀ 1. As winter approaches, we tend to think of more hearty foods, especially when we return from a cold, wet run. Beef Chilli is one of the tastiest meals to enjoy when trying to warm up and recover.
