Not my favorite meal. I find myself falling back on this almost every Sunday bc we are busy and trying to rush out the door. It is filling and does the job though. I even added a cup of coffee today. There was half and half that needed to be used. Coffee is the perfect vehicle for that. The taco meat (yesterday) seems to be bothering me since being strict with carnivore. Probably something something seasoning, like the paprika or coriander. I really love tacos, too. I will survive. Anyway, back to meat today. Stay tuned for the butt tender. Last night's meal prep or how to stay carnivore when you don't have access to your kitchen during the week. ⬅️ Swipe for more pics if you like to see other people's process. My husband eats all his meals during the week away from our home. He has been carnivore since Mother's Day last year. How to solve making meals for him that are carnivore but can be easily stored, reheated, and transported to wherever he is going. That's 12 lbs of ground beef purchased with my whole steer from a local farmer. We buy a whole steer 3 times per year. Some weeks I make 15lbs if the work week is going to be longer. To each 9x13, I add 3lbs beef, 1 egg, some Worcestershire sauce, salt, and pepper. Mix, flatten out again, bake at 350°F to desired doneness (which in my husband's case is 30 minutes for not very much pink). Break each pan into 3 parts. Add the fat back to the meat after it is in containers. I freeze these so they last longer before he eats them. They have to make it a whole week or sometimes more, and there are no preservatives in this. Optional but not pictured today is 3 lbs of cooked bacon spread out on top of the 12lbs of meat and a few tablespoons of bacon grease on top. You can @ me about the plastic containers. It isn't about the cost of glass. I use glass at home for our leftovers. While I have often spoken of the hormonal dangers of eating too fewer calories. I haven’t touched on the gut health implications. When we focus on high fats or protein, but low carbs we often aren’t getting the fibre that our gut bugs need to survive. Now if our guts are proliferated with bad gut bugs we may temporarily want to starve them. However if we starve our good gut bugs, they are gone for good. You can still follow diets that are lower in carbs but make sure that you are getting the fibre you and your gut bugs need when doing it. It's time for dessert! And not just any old dessert, this one is fancy! Keto Crème Brule is a rich, creamy dessert with homemade vanilla custard topped by a caramelized sweetener topping with fresh berries. You can enjoy this low carb decadent dessert worry free, and you get to have fun using a blow torch! Printable recipe at the link in my bio. KETO CREME BRULEE 6 egg yolks 1 1/2 tsp. vanilla extract 2 cups heavy whipping cream 8 tbsp. Lakanto monk fruit sweetener, divided Fresh berries for topping 1. Preheat oven to 325 degrees. Bring a pot of water to boil. 2. Place egg yolks and vanilla in a bowl and whisk well to combine. Egg yolks should be smooth and creamy. 3. Add 4 tbsp. sweetener and heavy whipping cream to a saucepan over medium heat. Whisk constantly until it starts to simmer. 4. Remove saucepan from heat and very slowly drizzle into the yolk mixture, whisking constantly, until well combined. Adding hot cream to the yolks too quickly will cause the eggs to scramble. If this happens, discard and begin again. 5. Divide mixture evenly between 4 ramekins and place them in a glass baking dish. Pour in enough boiling water to come 1 inch up the sides of the ramekins. 6. Place baking dish in preheated oven on middle rack until just slightly jiggly, about 30 minutes. 7. Remove from oven and let cool in the water bath for 20 minutes. Remove from water bath to a cooling rack and let cool for 20 minutes more. Cover with plastic wrap and chill in the fridge for at least 4 hours and up to 4 days. 8. When ready to serve, sprinkle 1 tablespoon sweetener over each crème brûlée. Use a culinary torch to heat sweetener until caramelized. 9. Top with fresh berries, if desired, and serve immediately. Notes It's easy to overbake these. This Creamy Garlic Parmesan Chicken is made with juicy pan seared chicken and a rich, savory, creamy garlic Parmesan sauce! CREAMY GARLIC PARMESAN CHICKEN For the chicken: 4 thin sliced chicken breasts see notes 1 teaspoon garlic powder ½ teaspoon Italian seasoning ½ teaspoon salt ½ teaspoon cracked pepper 1 tablespoon olive oil For the sauce: 2 tablespoons butter ¼ cup onion chopped 1 cup spinach chopped 3 cloves garlic minced 1 ½ cups heavy cream 1 ounce cream cheese ¼ cup shredded Parmesan Salt and pepper to taste To make the chicken: 1. Season chicken on both sides with the garlic powder, Italian seasoning, salt, and pepper. 2. Heat a large skillet over medium heat and add the olive oil. Once hot, add the chicken and cook on both sides for 4-5 minutes or until cooked through. 3. Remove the chicken from the pan and set aside. To make the sauce: 1. Using the same pan you cooked the chicken in, add the butter and melt over medium heat. Stir in the onion and cook for 5 minutes, stirring occasionally, until onions are translucent and soft. 2. Add the spinach to the pan and cook, stirring frequently, for 1-2 minutes, until wilted. 3. Add the garlic and cook for 30 seconds more, until fragrant. 4. Add the heavy cream and cream cheese to the pan and cook over medium low heat, whisking constantly, until the cream cheese has melted and the sauce is hot. Stir in the Parmesan and continue whisking until you have a smooth, creamy sauce. 5. Season the sauce with salt and pepper, to taste. We used about ½ teaspoon of each. 6. Return the chicken to the pan and cook over low heat for 1-2 minutes to rewarm the chicken. Who needs chips for their dip anyway?!⁠ Printable recipe at the link in my bio!⁠ ⁠ Spinach Stuffed Mushrooms⁠ 8 ounces cream cheese, room temperature⁠ 1/4 cup mayonnaise⁠ 1/2 cup shredded Parmesan cheese⁠ 1/2 cup shredded mozzarella cheese⁠ 2 cloves garlic, minced⁠ 1/2 teaspoon salt⁠ 1/2 teaspoon crushed red pepper⁠ 4 ounces canned artichoke hearts, drained and chopped⁠ 1/2 cup frozen chopped spinach, thawed and drained⁠ 16 ounces white mushrooms⁠ 1 tablespoon olive oil⁠ parsley, for garnish⁠ ⁠ 1. Preheat oven to 375 degrees.⁠ 2. In a large mixing bowl, combine the cream cheese, mayonnaise, Parmesan, mozzarella, garlic, salt, and red pepper.⁠ 3. Beat with a mixer on medium speed until well combined. Stir in the artichoke hearts and spinach.⁠ 4. Wash the mushrooms and remove the stems. Discard stems or save for another use.⁠ 5. Brush the outside of the mushrooms with olive oil.⁠ 6. Using a spoon, fill each mushroom cap with the filling.⁠ 7. Arrange the stuffed mushrooms on a baking sheet and bake for 20-25 minutes or until mushrooms are cooked through.⁠ 8.
