Orzo Salad with Roasted Vegetables Mediterranean Orzo Salad with Charred Veggies Recipe Ingredients: 1 cup orzo pasta 1 red bell pepper, diced 1 yellow bell pepper, diced 1 zucchini, sliced 1/2 red onion, sliced 1/4 cup olive oil 1/4 cup feta cheese, crumbled 2 tablespoons balsamic vinegar Salt and pepper to taste Fresh basil leaves, chopped (for garnish) Directions: Preheat oven to 425°F (220°C). Toss the bell peppers, zucchini, and onion with half the olive oil on a baking sheet. Season with salt and pepper. Roast in the preheated oven for 20-25 minutes until vegetables are slightly charred and tender. While the vegetables roast, cook the orzo according to package instructions, then drain and let cool. Hiiii, I am Cierra! I recently turned 30 years old and I am tired of living the way I am living and treating my body like crap. Welcome to my Glow Up Diary. I set a NY resolution to lose 50lbs and I’m tired of yo-yoing. I lost 15lbs in January by staying alcohol free and being super mindful of what I was eating, feeling energetic, walking, taking vitamins and collagen etc. I had drinks for my birthday in February and it was downhill from there and gained back almost all of my weight. Seasonal depression did not help, as well as experiencing my second ectopic pregnancy. My previously crystal clear skin has puffed up and is now covered in hormonal acne and sores and dry patches. I am uncomfortable in my body, I am uncomfortable with my skin and my hair and my mind. I am calling this my Glow Up Diary, because I’m hoping it will track my journey to health, happiness, recovery and weight loss, like an all in one! 💕 I will focus on positive changes, What I Eat in a Day, meal prep and ideas and look forward to finding a likeminded community. Buddha Bowl In einer Bowl versammeln sich ja alle Komponenten an Nährwerten, die wir mit einer Mahlzeit zu uns nehmen sollen. Heute habe ich ein Beispiel einer leckeren, gesunden Bowl für euch, die ihr super schnell zu Hause zubereiten könnt. Sie enthält komplexe Kohlenhydrate, Ballaststoffe, gesunde Fette und Proteine. Die Zutaten könnt ihr natürlich nach Belieben austauschen. 2 EL Couscous 1 Handvoll grüner Salat ¼ Salatgurke ¼ Paprika 3 kleine Tomaten 1 Ei Nüsse 2 EL Skyr 1 TL BBQ Sauce Den Salat waschen, in kleine Stücke zupfen und auf dem Boden der eurer Schüssel verteilen. Couscous mit der 1,5-fachen Menge kochendem Wasser übergießen, etwas Gemüsebrühe dazugeben und einige Minuten quellen lassen. Das Ei in kochende, Wasser ca. 8 Minuten hart kochen. Währenddessen die Gurke, Paprika und Tomaten in kleine Stücke schneiden und auf die Salatblätter in euerer Schüssel geben. Den aufgequollenen Coucous mit 1TL gutem Öl (Olivenöl, Leinöl etc.) auflockern und ebenfalls in die Schüssel geben. Das Ei vierteln und zu den anderen Zutaten in die Schüssel geben. Aus dem Skyr und der BBQ Sauce ein schnelles Dressing rühren und dieses über eure Bowl geben. Mit Erdnüssen toppen und frisch genießen. Tipp! Wenn ihr die Bowl für später vorbereiten wollt, dann das Dressing in eine extra Dose geben und erst kurz vor dem Essen darüber geben. 🔸𝗦𝗮𝗻𝘁𝗮 𝗙𝗲 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗣𝗮𝗰𝗸𝗲𝘁𝘀🔸 𝗙𝗨𝗟𝗟 𝗥𝗘𝗖𝗜𝗣𝗘 👉 Zesty Santa Fe Chicken Foil Packets Ingredients: 4 boneless, skinless chicken breasts 1 cup corn kernels, fresh or frozen 1 cup black beans, drained and rinsed 1 red bell pepper, diced 1 cup diced zucchini 1/2 cup salsa 1 teaspoon cumin 1 teaspoon chili powder Salt and pepper to taste 4 teaspoons olive oil Fresh cilantro, chopped (for garnish) Lime wedges (for serving) Directions: Preheat grill to medium-high heat or oven to 375°F (190°C). Lay out four large pieces of aluminum foil. Center a chicken breast on each piece. In a bowl, mix together corn, black beans, red bell pepper, zucchini, salsa, cumin, and chili powder. Spoon the vegetable mixture evenly over each chicken breast. Drizzle each with olive oil and season with salt and pepper. Fold the foil over the chicken and vegetables, pinching the edges to seal into packets. Grill over medium-high heat for 25-30 minutes or bake in the oven for 35-40 minutes until chicken is cooked through. Carefully open packets, garnish with fresh cilantro, and serve with lime wedges. Buffalo Chicken and Roasted Potato Casserole _____Ingredients:_____ - 3 pounds red potatoes, washed and cubed - 2 tablespoons olive oil - 1 teaspoon garlic powder - 1 teaspoon onion powder - Salt and pepper to taste - 2 pounds boneless, skinless chicken breasts, diced - 1 cup buffalo sauce - 1 cup shredded cheddar cheese - 1/2 cup ranch dressing - 2 green onions, chopped (optional) _____Directions:_____ 1. Preheat oven to 425°F (220°C). Grease a 9x13 inch baking dish. 2. In a large bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated. Spread in an even layer in the prepared baking dish. 3. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through. 4. While the potatoes are baking, in a separate bowl, toss the diced chicken with buffalo sauce until well coated. 5. Once the potatoes are done, remove them from the oven and reduce the oven temperature to 375°F (190°C). 6. Spread the buffalo chicken evenly over the roasted potatoes in the baking dish. 7. Sprinkle the shredded cheddar cheese over the top of the chicken. 8. One word that comes to my mind when I hear “huevos rancheros” is YUM. This recipe delivers on that and more – it’s easy and takes just a few minutes to make. Plus it’s REALLY GOOD FOR YOU. Double win. This recipe makes a great breakfast, lunch, or dinner. Healthy Huevos Rancheros (serves 4) 1 15.5-oz (425 g) can black beans, drained and rinsed ¼ cup (60 ml) warm water 2 Tbsp extra virgin olive oil 4 large eggs 4 small white corn tortillas, warmed ½ cup (55 g) of your favorite salsa ½ cup (120 g) crumbled feta cheese ¼ cup (10 grams) chopped fresh cilantro (optional) Dash of hot sauce (optional) In a skillet over medium-low heat, stir together the black beans and water, and heat through until warm (you also can warm them in a microwave in a covered dish for 90 secs to 2 mins). While the beans are warming, heat the oil in a skillet and fry the eggs sunny-side up, seasoning with salt and pepper. Warm the tortillas for 30 seconds in the microwave. Place each tortilla on a separate plate. Equally divide the beans, then top with a fried egg, some salsa and cheese. Sprinkle with cilantro and optional hot sauce, and serve with any remaining salsa.
