Spinach & Artichoke Casserole from @frommybowl. It was pretty good. I followed the recipe with these minor changes: cashew milk over coconut milk, onion over shallot, garlic powder over fresh, cannellini beans, 3Tbsp lemon juice and white jasmine rice. I would make it gain. I wanted to do something different with the cauliflower that had been sitting in the fridge. Roasting it whole to get some nice thick steaks was a great base for a chickpea and sausage tomato sauce. 👩🏻‍🍳 Thai-Inspired Chicken Quinoa Salad in a Jar from @ambitiouskitchen Sooo… I had every intention of setting up a beautiful scene and doing a little photo shoot with this recipe. Turns out I only bought 1/3 of the lighting equipment I actually need so I’m in limbo with a pretty (tasty) salad. I decided to just go ahead and share this one so you can make it soon to enjoy in the week ahead. Highly recommend reading through this to ensure you have the marinade ingredients. The flavors in the marinade are so good; I wouldn’t want you to miss out on those! I had no idea yellow curry chicken and peanut sauce dressing and all these veggies would be so lovely together. Now I do! A very satisfying way to tackle meal prep! Fun fact: You can use pasta sauce jars or anything similar with a wide mouth to allow for easier assembly. This was a chopped garlic jar! I’ll try again when my setup is complete and I’ve learned more in my food photography class. P.S. I bought a food chopper and that helped a lot since I made this recipe x 4! Costata Romanesco zucchini flowers.🌼 With autumn well and truly underway down under, the last of the zucchini flowers emerge for a final hurrah to summer — a consolation amidst endless challenges all season long with the fruiting zucchini. Disease, too much water, soil and pollination issues were frustrating. We tried everything to get a decent yield, sadly not much luck (keeping fingers crossed for next season). The gorgeous blossoms certainly didn’t disappoint, though. Here is a simple way to get some more veggies in! Take a steam fresh bag of Brussel sprouts and follow the directions to cook them. Once that is done put the Brussel sprouts on a plate and flatten them out. Then put them in the air fryer sprinkle with whatever seasoning you please and top with cheese! Air fry them at 400 degrees for like 10 minutes and they almost become Brussel sprout chips. After 5 years of experimenting and learning through mistakes and triumphs, my garden in our rented house is finally hitting its stride thanks to permaculture practices where I can use them! Strawberries and green beans surround my fruit trees to provide the soil shade and free fertilizer via the beans putting much needed nitrogen in the ground, and boysenberries happily clim along the fence with volunteer nasturtiums. Plums, cherries, grapes, apples, pluerries, blueberries, and greens are all thriving in their permaculture pots, and in ground tomatoes and squash are starting to take off. I'll be planting the bare bed you see with Japanese varieties save for the trellis which will be supporting snowcap beans (my favorite shelling bean so far!). The fact that I'm able to grow my own food and do so where nature supports itself is a huge blessing and I hope with this garden anyone whose been watching my journey can see they can do it too (and learn from my mistakes and successes!) My pro tip for gardening in SoCal? Mulch with strawbales. It's the best thing I've ever done for my garden aside from the Back To Edeb method of fixing my hard packed clay soil. This summer I'll be eating well and won't need the grocery store all that much save for milk, rice flour, sugar, and spices. Creamy Roasted Cauliflower Soup 🥣 Ingredients: ◾1 large head cauliflower (about 2 pounds), cut into bite-size florets ◾3 tablespoons extra-virgin olive oil, divided ◾Fine sea salt ◾1 medium red onion, chopped ◾2 cloves garlic, pressed or minced ◾4 cups (32 ounces) vegetable broth ◾1 medium size potato (peeled and diced) ◾1 tablespoon fresh lemon juice, or more if needed ◾Scant ¼ teaspoon ground nutmeg ◾For garnish: 2 tablespoons finely chopped fresh flat-leaf parsley, chives and/or green onions Instructions: 1. Preheat the oven to 425 degrees Fahrenheit. 2. On the baking sheet, toss the cauliflower with 2 tablespoons of olive oil until lightly and evenly coated in oil. Arrange the cauliflower in a single layer and sprinkle lightly with salt. Bake until the cauliflower is tender and caramelized on the edges, 25 to 35 minutes, tossing halfway. 3. Once the cauliflower is almost done, in a soup pot, warm the remaining 1 tablespoon olive oil over medium heat until shimmering. Add the onion and ¼ teaspoon salt. Cook, stirring occasionally, until the onion is softened and turning translucent, 5 to 7 minutes. 4. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds, then add the broth and diced potato. 5. Reserve 4 of the prettiest roasted cauliflower florets for garnish. Then transfer the remaining cauliflower to the pot. Increase the heat to medium-high and bring the mixture to a simmer, then reduce the heat as necessary to maintain a gentle simmer. Cook, stirring occasionally, for 20 minutes, to give the flavors time to meld. 6. Once the soup is done cooking, remove the pot from the heat and let it cool for a few minutes. Then, carefully transfer the hot soup to a blender. 7. Blend until smooth. Add the lemon juice and nutmeg and blend again. Add additional salt, to taste. This soup tastes amazing once it’s properly salted! You can also add a little more lemon juice, if it needs more zing. Blend again. 8. Top individual bowls of soup with 1 roasted cauliflower floret and a sprinkle of chopped parsley, green onion and/or chives. Enjoy !

We made fresh spring rolls with our high school students and they went down a treat. So healthy and just as importantly, so delicious. Here’s the recipe: ❤️💚 Spring rolls ½ lb. extra firm tofu, sliced in thin, 2” matchsticks 1 cucumber 1 carrot 15-20 mint leaves 1 small head lettuce, such as butter, little gem or green leaf, washed and dried 6 sugar snap peas 6 spring roll rice papers Dipping sauce 1/4 cup unseasoned rice vinegar 2 tablespoons water 2 teaspoons honey 1 tablespoon soy sauce 1 clove garlic, minced OR 1 teaspoon garlic powder 1 inch knob of ginger, grated juice of 1 lime 1 teaspoon chili sauce, or to taste Pat the tofu strips with paper towels if necessary. Method Cut the cucumber in half lengthwise, scoop seeds & cut into 2 inch matchsticks.. Cut the carrot in 2 inch matchsticks. Pull the lettuce leaves apart - make a pile of 2 inch leaves or pieces. Cut the sugar snaps into thin strips lengthwise of about 2 inches. Put all the filling items into small piles, ready to go! Using a large plate, wet a round spring roll paper until completely covered in water. Wait 1-2 minutes, the textured pattern is no longer visible and it’s see through. Put spring roll paper on a clean, dry plate or cutting board. Lay down a small lettuce leaf then stack small amounts of the tofu and veggies in the middle of the round paper, all facing lengthwise in the same direction. The pile of veggie / tofu fillings should make a rectangle shape, with a long side and a short side. Take 2 opposite edges of the spring roll paper closest to the short side of the vegetable tofu filling and fold inwards. Lift the edge of the spring roll paper closest to you and wrap over all filings, rolling it away from you until you meet the opposite end. To serve, cut each spring roll in half and place on a plate with a small puddle of dipping sauce. Dipping Sauce - Mix all ingredients together in a small bowl. Nacho Daddy! Las Vegas @nachodaddylv Last time we came to Vegas we went twice to the location on the strip. When we were planning on checking out Fremont for the first time we were so excited that they have a location here as well! We ordered the Vegan Chick’n Nachos and the Vegan Chick’n Quesadilla. Loved both! Our server was great! Suggested the vegan chocolate cake (what?!?) we were too full but maybe next time!

Crossroads Kitchen @crossroadskitchen Brunch Buffet Josh and I have been to crossroads kitchen in California a few times & are big fans so when we heard they had a brunch buffet in Vegas we had to try! So many amazing options! The only thing I didn’t love was the bacon. Just too crunchy for me but had the right flavor profile. My favorites were the spinach florentine biscuit, the French toast, fried chik’n & the potatoes. For drinks I had the Bloody Mary which was delish& my husband got the espresso martini which had a fun name that I can’t remember. Besides the regular brunch items they also had a “live pasta” station where you could choose between some of their favorite pastas and my husband got the spicy rigatoni vodka pasta which was very good. My second plate got a little weird but had to do a pic. By that time I was getting full but wanted to try everything i didn’t try yet haha so I put 3 different cream cheeses on half a bagel, some pasta salad, the kelp caviar, carrot lox & of course a dessert. From that plate I really loved the veggie cream cheese and that little lemon cake! Oh that cake was good!! I would definitely recommend crossroads for either the brunch or dinner. Very happy to have experienced both!
